  • In a small bowl mix the red onion, pineapple, grapes, peppers and lime juice. Let the salsa sit while preparing the fish.
    ¼ cup diced red onion, ¼ cup pineapple chunks diced, ⅛ cup grapes diced, ¼ cup bell pepper, Juice of one lime
  • Mix the chili powder, paprika and garlic powder, salt and pepper together and coat both sides of the fish.
    1 tablespoon chili powder, ½ teaspoon garlic powder, ½ teaspoon paprika, Salt & Pepper
  • Heat a non-stick skillet over medium high heat. Spray with olive oil non-stick cooking spray. Cook the salmon about 3-4 minutes a side (depending on thickness) allowing the spices to brown.
    2 salmon fillets about 4 oz each
  • Remove the salmon from the heat, top with the fruit salsa. Serve!
