Heat a non-stick skillet over medium-high heat. Spray with non-stick cooking spray and brown the chicken with the onion.
1-2 slices of onion chopped, 1 boneless, Kosher Salt & Pepper
Sprinkle with the spices. If you only have curry, that will work. I just happen to have the others on hand.
1 teaspoon red curry Powder, ¼ teaspoon ground ginger, ¼ teaspoon coriander powder, ⅛ teaspoon ground red pepper
Once the chicken is brown and almost cooked thru, lower the heat to medium-low and add the yogurt. You don't want to boil the yogurt it just bring to a simmer.
½ cup fat free plain yogurt
Cook for about 5 minutes while stirring and coating the chicken. Then add the frozen peas. Cook until the peas are warmed thru.
