Simply Roasted Beets
These roasted beets are a great way to add some color and flavor to your dinner table. With minimal preparation, you can enjoy a nutritious side dish that everyone will love.

Preheat the oven to 375 degrees.
Cut off the greens. They can be eaten as well but I haven't taken that leap yet. Baby steps. Cut off the root and top. Look at the amazing color!
1-2 bunches of beets
Pile the beets on a large sheet of aluminum foil. Drizzle with olive oil and sprinkle with salt.
2 teaspoon olive oil, Kosher Salt
Fold over the foil and make a pocket.
Place the foil packet of beets on a cookie sheet in the oven and roast for an hour. The should be fork tender but not falling apart.
Let the beets cool for a bit and then simple rub off the out skins. They came off super easy.
I cut them in quarters and served with a bit of kosher salt alongside roasted chicken legs and peas.
