Heat the oil and sauté the leeks until softened and just browning.
3 leeks chopped, 1 teaspoon olive oil
Add the remaining ingredients and bring to a boil. Lower to a simmer and cook for at least 20 minutes, allowing all the flavors to merge and deepen.
2 cups of your favorite broth, 8 oz of leftover turkey meat, 1 can of white, 2 teaspoon dried cumin, 1 teaspoon dried oregano, ½ teaspoon red pepper, ¼ teaspoon ground cloves, ½ tablespoon green chili sauce
Top with a bit of grated cheese and some fresh or dried cilantro.
