Ingredients
  

  • 1 teaspoon olive oil
  • 3 leeks chopped
  • 2 cups of your favorite broth I used stock made from the turkey!
  • 8 oz of leftover turkey meat
  • 1 can of white Northern beans drained and rinsed
  • 2 teaspoon dried cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper less or more to taste
  • ¼ teaspoon ground cloves
  • ½ tablespoon green chili sauce

Instructions
 

  • Heat the oil and sauté the leeks until softened and just browning.
    3 leeks chopped, 1 teaspoon olive oil
  • Add the remaining ingredients and bring to a boil. Lower to a simmer and cook for at least 20 minutes, allowing all the flavors to merge and deepen.
    2 cups of your favorite broth, 8 oz of leftover turkey meat, 1 can of white, 2 teaspoon dried cumin, 1 teaspoon dried oregano, ½ teaspoon red pepper, ¼ teaspoon ground cloves, ½ tablespoon green chili sauce
  • Top with a bit of grated cheese and some fresh or dried cilantro.
