One Pot Chicken and Rice with Pearl Onions and Vegetables

  • Heat a large skillet with the olive oil over medium-high heat. Add the onions and cook for a good 5 minutes until they defrost and start to get soft.
    1 16 oz bag of frozen pearl onions, 2 teaspoon olive oil
  • Meanwhile place the frozen chicken on a plate and pop in the microwave for about a minute just to soften enough to cut. Cut into chunks and add to the skillet with the garlic.
    About a pound of chicken breast or chicken breast tenderloins, 3 teaspoon minced garlic
  • Cook until the chicken starts to brown. Then add the basil, oregano, thyme and rosemary. Next is a pantry must for me. I'm rarely without a few cans of diced tomatoes. They are so useful in a pinch!
    1 teaspoon dried basil, 1 teaspoon dried oregano, ½ teaspoon dried thyme, ½ teaspoon dried rosemary, 1 15 oz can diced tomatoes
  • Add the can of diced tomatoes and cook until the liquid boils a bit.
  • Another stock item I always keep on hand. Bags of frozen mixed veggies. Add the frozen bag of mixed veggies to the skillet.
    1 16 oz bag of frozen mixed vegetables preferably Italian blend.
  • Stir them in to merge all the flavors and then cover and cook for 3-5 minutes until the veggies defrost.
  • Another pantry item I try to keep on hand. Cooked brown rice. I stock up when it goes on sale. Add the rice to the skillet.
    About 2 cups cooked brown rice
  • Stir all together letting the rice soak up a bit of the liquid.
  • At this point you need to taste and season accordingly. I added two pinches of kosher salt and 1 teaspoon each of onion and garlic powders.
