Warm Sweet Potato and Quinoa Salad

Love sweet potatoes and quinoa? This warm salad blends together both flavors perfectly. Easy to make and perfect for lunch or dinner.

Ingredients
  

  • ¼ of a large sweet onion chopped about ⅓ cup
  • 1 medium sized sweet potato cut into cubes
  • ½ cup uncooked quinoa 86g
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • 1 ½ cups of water
  • Kosher Salt

Instructions
 

  • Heat a pot over medium-high and spray with non-stick cooing spray. Add the onion and potato, sprinkle liberally with salt and brown.
    ¼ of a large sweet onion chopped, 1 medium sized sweet potato cut into cubes, Kosher Salt
  • Add the water, spices, a pinch of salt and quinoa. (If you want to had ½ tablespoon if honey, I'd do it here.)
    ½ cup uncooked quinoa, 1 teaspoon cinnamon, ½ teaspoon nutmeg, 1 ½ cups of water, ½ teaspoon ground ginger
  • Bring to a boil and continue to boil uncovered for about 5 minute until the potato softens.
  • Cover and lower to a simmer.
  • Continue to simmer, covered, for 10-15 minutes until the remaining liquid is absorbed.
  • Separate into 2 equal sized portions and enjoy!
