Warm Sweet Potato and Quinoa Salad

- ¼ of a large sweet onion chopped about ⅓ cup
- 1 medium sized sweet potato cut into cubes
- ½ cup uncooked quinoa 86g
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ground ginger
- 1 ½ cups of water
- Kosher Salt
Heat a pot over medium-high and spray with non-stick cooing spray. Add the onion and potato, sprinkle liberally with salt and brown.
¼ of a large sweet onion chopped, 1 medium sized sweet potato cut into cubes, Kosher Salt
Add the water, spices, a pinch of salt and quinoa. (If you want to had ½ tablespoon if honey, I'd do it here.)
½ cup uncooked quinoa, 1 teaspoon cinnamon, ½ teaspoon nutmeg, 1 ½ cups of water, ½ teaspoon ground ginger
Bring to a boil and continue to boil uncovered for about 5 minute until the potato softens.
Cover and lower to a simmer.
Continue to simmer, covered, for 10-15 minutes until the remaining liquid is absorbed.
Separate into 2 equal sized portions and enjoy!
