  • Whisk the lime juice, soy sauce, honey, tabasco, and minced garlic together to make the dressing.
    2 tablespoon lime juice, 1 teaspoon soy sauce, 1 tablespoon honey, ½ teaspoon tabasco, ½ teaspoon minced garlic, 1 oz cashews
  • Let it sit.
  • Chop the cucumber into bite size pieces. Just quarter and then slice.
    1 large English/Fancy cucumber
  • Chop the mint. I happen to still have fresh in my small herb garden.
    ¼ cup mint chopped
  • Toss the mint and cucumbers together.
  • Pour on the dressing and toss to coat everything. Pile on a plate and enjoy!
