Ingredients
  

  • 1 large red bell pepper
  • ½ of an avocado
  • 1 Mini Babybel Light
  • Cumin chili powder, dried cilantro

Instructions
 

  • Preheat the broiler.
  • Spray a cookie sheet with non-stick cooking spray.
  • Wash and cut the pepper into 1-2 inch chunks. Arrange on the cookie sheet.

  • Cut the avocado into small cubes and place 1-2 on each piece of pepper.

  • Cut the Mini Babybel Light into small cubes and place 1-2 on each piece of pepper.

  • Sprinkle with cumin, chili powder and dried cilantro.

  • Place under the broiler for 5 minutes and pile on a plate for a fun, light snack!
