1 leftover Simple Cumin-Dusted Bone-In Pork Chop Large handful of baby spinach chopped 15 or so leftover sweet potato fries cut into small pieces About 2 cups of cooked brown rice I used a pack of Uncle Ben's Brown Basmati Rice 1 tablespoon soy sauce
Cut away all the meat from the bone of the leftover pork chop. Cut into cubes.

Heat a non-stick skillet over medium-high heat. Coat pan with cooking spray.
Warm the pork for a minute in the skillet. Add the spinach and sweet potatoes. Once the spinach cooks down a little, add the rice.
Large handful of baby spinach, 15 or so leftover sweet potato fries, About 2 cups of cooked brown rice
Toss everything until well combined and warmed through. Add the soy sauce, mix well, and cook for a minute just to combine the flavors.
1 tablespoon soy sauce
Remove from the heat and enjoy!
I served it alongside tilapia and broccoli. It was a super quick, tasty dinner!
