Ingredients
  

  • 1 medium zucchini
  • 1 oz of your favorite cheese cubed (I used monterey jack)
  • 1 oz cubed ham
  • 1 teaspoon grainy dijon mustard

Instructions
 

  • Heat the broiler or toaster oven.
  • Cut the zucchini in half lengthwise and hollow it out with a tablespoon.

  • Toss the ham and cheese with the mustard. Make sure the cubes aren't too big. They need to fit in the zucchini!
    1 oz of your favorite cheese, 1 oz cubed ham, 1 teaspoon grainy dijon mustard
  • Pile the ham and cheese in the zucchini boats.
  • Place under the broiler for about 2-3 minutes until the cheese melts and starts to brown.
  • Let it cool for a few minutes before biting into the cheesiness, and yes, it's totally pickup-able!
