Ingredients
  

  • 1 whole wheat English muffin
  • ¼ of an avocado
  • Handful of raw spinach
  • 1 slice of cooked bacon cut in half
  • 1 hard boiled egg sliced -- Click here to see how I make mine.
  • Salt and pepper

Instructions
 

  • Toast the English muffin. While it's toasting, cut the avocado. I make two slices and remove a quarter of it, leaving the rest intact, seed and all. Then I store it in a zip-lock bag with the air sucked out.
    1 whole wheat English muffin, ¼ of an avocado
  • Peel off the avocado skin and smear on the bottom of the toasted English muffin.
  • Top with the spinach and bacon.
    Handful of raw spinach, 1 slice of cooked bacon
  • Lay the egg slices on top and sprinkle with salt and pepper.
