Simple Two-Tablespoon, Two-Bean, Turkey Chili With Pumpkin!

Ingredients
  

  • 1 lb ground turkey
  • 1 medium onion chopped
  • 1 15 oz can pureed pumpkin
  • 1 10 oz can of diced tomatoes with green chilies
  • 1 15 oz can low-sodium kidney beans undrained
  • 1 15 oz can low-sodium black beans undrained
  • 1 6 oz can of tomato paste
  • 2 tablespoon garlic powder
  • 2 tablespoon chili powder
  • 2 tablespoon paprika
  • 2 tablespoon ground cumin
  • 2 tablespoon cocoa powder
  • 100 g of chopped baby spinach I had a bag in the freezer like this but fresh would be fine

Instructions
 

  • Brown the ground turkey and onion together in a large pot.
    1 lb ground turkey, 1 medium onion
  • Once there's no more pink, add all the canned items and spices. Stir to combine everything over medium heat. Add the spinach and lower heat to a simmer.
    1 15 oz can pureed pumpkin, 1 10 oz can of diced tomatoes with green chilies, 1 15 oz can low-sodium kidney beans, 1 15 oz can low-sodium black beans, 1 6 oz can of tomato paste, 2 tablespoon garlic powder, 2 tablespoon ground cumin, 100 g of chopped baby spinach, 2 tablespoon cocoa powder
  • Cook for about an hour. I actually ate a bowl right away but it gets better the longer the flavors get to merge.
  • I topped my bowls with dried chives and red pepper flakes to add a little heat.
    2 tablespoon chili powder, 2 tablespoon paprika
