Ingredients

  • 1 lb lean ground turkey
  • 1 sweet onion
  • 2 heaping tablespoon ground cumin
  • 1 heaping tablespoon dried oregano
  • 1 small can diced green chilis 113g
  • ½ cup steel cut oats
  • 2 cups chicken broth or stock I use homemade
  • 1 15 oz can cannellini beans drained and rinsed

Instructions

  • Brown the turkey with the onion in a medium-large pot.
1 lb lean ground turkey, 1 sweet onion
  • Add the rest of the ingredients and raise the heat to bring to a low boil.
2 heaping tablespoon ground cumin, 1 heaping tablespoon dried oregano, 1 small can diced green chilis, ½ cup steel cut oats, 2 cups chicken broth or stock, 1 15 oz can cannellini beans drained and rinsed
  • Lower to a simmer and cook until the chili begins to thicken (at least 20 minutes.)

Notes

  • For a less mild chili add a teaspoon of red pepper flakes.
  • If you don't have steel cut oats any oats would work to help thicken.
  • Up the veggie count by adding diced zucchini, bell peppers or eggplant.
  • Great with fresh cilantro on top!
