Brown the turkey with the onion in a medium-large pot.
1 lb lean ground turkey, 1 sweet onion
Add the rest of the ingredients and raise the heat to bring to a low boil.
2 heaping tablespoon ground cumin, 1 heaping tablespoon dried oregano, 1 small can diced green chilis, ½ cup steel cut oats, 2 cups chicken broth or stock, 1 15 oz can cannellini beans drained and rinsed
Lower to a simmer and cook until the chili begins to thicken (at least 20 minutes.)
Notes
For a less mild chili add a teaspoon of red pepper flakes.
If you don't have steel cut oats any oats would work to help thicken.
Up the veggie count by adding diced zucchini, bell peppers or eggplant.
