Toss the beets and chicken with the fennel, parsley, and a pinch of salt and pepper. Top with the goat cheese. Enjoy!
15 oz can of cut beets drained, 3 oz grilled chicken strips cut into bite-sized pieces, 1 teaspoon fennel seeds, 1 teaspoon dried parsley, ½ oz crumbled goat cheese, salt and pepper to taste
Notes
You can, of course, use fresh roasted beets. I just like to keep cans of beets in the pantry when I crave them like this morning.
If you don't have goat cheese feta would work too!
I used leftover chicken that I grilled but you could use the store-bought strips too.
