  • Preheat the oven to 425°F and line your baking sheet with a silicone baking mat.
  • Slice your sweet potatoes into ¼"-½" wide strips.
    4 medium sweet potatoes
  • In a large bowl, toss your sweet potatoes with salt, pepper, and curry powder.
    ¼ teaspoon salt, ⅛ teaspoon black pepper, ½ teaspoon curry powder
  • Lay the sweet potatoes in a single layer on the prepared baking sheet(s).
  • Spritz the top of the fries with a bit of non-stick cooking spray.

  • Bake for 15 minutes then turn the fries and continue baking an additional 15 minutes or until crisp and slightly browned.
  • Serve with your favorite dipping sauces.
