With only a few ingredients, these crispy curry baked sweet potato fries are a delicious side dish to go with any of your favorite meals!

Preheat the oven to 425°F and line your baking sheet with a silicone baking mat.
Slice your sweet potatoes into ¼"-½" wide strips.
4 medium sweet potatoes
In a large bowl, toss your sweet potatoes with salt, pepper, and curry powder.
¼ teaspoon salt, ⅛ teaspoon black pepper, ½ teaspoon curry powder
Lay the sweet potatoes in a single layer on the prepared baking sheet(s).
Spritz the top of the fries with a bit of non-stick cooking spray.

Bake for 15 minutes then turn the fries and continue baking an additional 15 minutes or until crisp and slightly browned.
Serve with your favorite dipping sauces.
