  • In a medium bowl, combine the oatmeal, milk, and lemon juice.  Let this mixture sit for at leas 2 minutes.
    ½ cup quick oats, 2 teaspoon lemon juice, 1 cup skim milk
  • In a separate bowl, combine the whole wheat flour, cinnamon, nutmeg, baking soda, and baking powder stirring to combine.
    ¾ cup whole wheat flour, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ½ teaspoon baking soda, ½ teaspoon baking powder
  • Into the oatmeal mixture, beat in the egg, vanilla, applesauce, and honey until combined.
    1 egg, 1 teaspoon vanilla, 1 tablespoon honey, 1 tablespoon unsweetened applesauce
  • Add the dry ingredients into the wet and mix until just combined.
  • Heat a non-stick skillet or griddle over medium-heat and then pour  a little more than ⅛ cup of the batter onto the pan cooking for 1-2 minutes per side.  When small bubbles form on top, flip the pancakes. 
  • Serve with butter, fresh berries, and syrup!
