- 2 eggs
- 1 cup baby spinach chopped
- 1 tablespoon 7g real bacon bits
- 1 tablespoon 5g grated parmesan cheese
- Kosher salt & pepper
preheat the oven to 375 degrees.
Whisk the eggs and spinach with a pinch of salt and pepper.

Using a tablespoon dollop the egg spinach mixture unto 8 mini-muffins. Preferably the silicone kind for NON STICKING!
Sprinkle the Parmesan cheese on top and bake for 10-12 minutes.
