  • 2 wedges of The Laughing Cow Light Creamy Cheese Your favorite flavor I used swiss
  • About ⅓ of a large cucumber cut into small cubes
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • pinch of kosher salt and fresh ground black pepper
  • 4 Jarred Whole Roasted Red Piquillo peppers
  • Dried parsley for garnish optional

Instructions
 

  • Combine the 2 wedges of The Laughing Cow Light Creamy Swiss cheese with the cucumber cubes, garlic powder, oregano, salt and pepper. Keep stirring together until you get a nice creamy texture. It will look like this...
    2 wedges of The Laughing Cow Light Creamy Cheese, About ⅓ of a large cucumber cut into small cubes, ¼ teaspoon garlic powder, ¼ teaspoon dried oregano, pinch of kosher salt and fresh ground black pepper, 4 Jarred Whole Roasted Red Piquillo peppers
  • Carefully open a pepper and stuff in the cheese cucumber mixer. Repeat for the 3 additional peppers. Arrange on a plate and garnish with a sprinkle of parsley.
