Instructions
Preheat the broiler.
Put the egg, yogurt, Old Bay, parsley, mustard, salt and pepper in a bowl. Whisk until everything is well combined.
1 large egg, 2 tablespoon nonfat Greek yogurt, 2 heaping teaspoon Old Bay, ½ teaspoon yellow mustard, pinch of salt and pepper, 2 heaping teaspoon parsley
Cut or tear the bread into small pieces. Add the bread and crabmeat to the egg mixture and toss everything together.
2 slices of soft whole wheat bread with the crusts removed, 1 lb crabmeat
Form into 20 balls and place them on a cookie sheet sprayed with non-stick cooking spray.
Broil for 10 minutes or until tops begin to get crusty.
Notes
I normally use claw meat as it's the most affordable and the meat is nice and sweet.
I had to add "heaping" to the recipe as I'm always super generous with the Old Bay and parsley but 2 teaspoons of each make a nice mild ball.
If you don't have yogurt, a dollap of mayo works too.
