PANCAKES PANCAKES PANCAKES PANCAKES is a collection of my pancakes recipes from the last fifteen years.
Since starting to blog in 2004, I have posted about a dozen pancake recipes. All of them riffs on a basic recipe using a mashed banana and some combination of flours. I used to think there was some big secret to homemade pancakes, but once I started making them from scratch, I realized that almost any combination of flours with egg work. I like the addition of banana for sweetness, and my kids grew up with my constant experimenting.
I've had a few folks reach out for these old pancakes recipes, especially since I have a video that references one of them on YouTube. So I thought I'd share the more popular pancake posts in one collection. This way all my old links work. So here goes...
Banana Almond Oat Pancake Recipe
This is the pancake recipe in the video. They require a bit more work as I freshly grind the oats and almonds, but you could easily use flours instead. I posted these in 2012.

Banana Almond Oat Pancakes
Ingredients
- 1 cup Old Fashioned Oats 80g
- ¼ cup Almonds 35g
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 medium banana
- 1 teaspoon vanilla
- 1 egg
- ½ cup almond milk
Instructions
- Grind up the oats and almonds in a processor. I use the Bullet and it works perfectly.1 cup Old Fashioned Oats, ¼ cup Almonds
- Just be sure to give it a few shakes because the almonds will start to stick.
- In a bowl mix the processed oats/almonds, cinnamon, nutmeg, baking soda and baking powder.½ teaspoon cinnamon, ½ teaspoon nutmeg, ½ teaspoon baking soda, ½ teaspoon baking powder
- In another bowl mash the banana. Then whisk with the vanilla, egg, and milk.1 medium banana, 1 teaspoon vanilla, 1 egg, ½ cup almond milk
- Pour the dry ingredients into the wet ingredients to create the batter. It will be on the thicker side.
- Heat a non-stick skillet or griddle over medium heat and spray with non-stick spray.
- Pour batter on the griddle in about quarter cups (I don’t usually measure – this recipe make about 10 cakes)
- Cook for 3-4 minutes. The edges with start to brown slightly and there will be a few bubbles. Flip.
- Cook for about 2 minutes until set.
- Enjoy!

Quick Whole Grain Banana Pancake Recipe
This pancake recipe is a little older. Originally posted in 2009. They are a simple pancake using banana, again. My teen was just a little nugget back then!

Quick Whole Grain Banana Pancakes
Ingredients
- 1 large overripe banana
- 1 egg
- ½ cup 4oz skim milk
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground nutmeg
- ¾ cup 90g whole wheat flour
Instructions
- Mash the banana in a medium bowl. Add the egg and milk. Whisk until frothy.
- In a smaller bowl, add the flour, baking soda, baking powder and nutmeg. Sift into the banana mixture. Mix until just blended.
- Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peaked underneath for a light brown color, then flipped.

100% Whole Grain Pancakes
Ingredients
- ½ cup quick oats 40g
- 1 cup skim milk 8oz
- 2 teaspoon lemon juice
- ¾ whole wheat flour 90g
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 egg
- 1 teaspoon vanilla
- 1 tablespoon unsweetened applesauce
- 1 tablespoon honey
Instructions
- In a medium bowl, combine oatmeal, milk and lemon juice. Let the mixture sit while preparing the dry ingredients (at least 2 minutes).
- In another bowl, combine all the dry ingredients, whole wheat flour, cinnamon, nutmeg, baking powder and baking soda. Set aside.
- Beat or whisk the egg, vanilla, applesauce and honey into the milk/oatmeal mixture. It will be very liquidly.
- Add the dry ingredients to the wet and mix with a spoon until just combined.
- Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peaked underneath for a light brown color, then flipped.

The How Many Healthy Things Can I Get Into a Pancake Pancake Recipe
This is the most recent pancake recipe I shared (I think). It's from 2014. I have another kid and a much better camera.
It's my basic recipe with a whole bunch of healthy stuff thrown in. I'm always trying to get good stuff in my boys. I will admit, though, it was much easier when they were that little. Now, they are way too opinionated.

The How Many Healthy Things Can I Get Into a Pancake Pancake Recipe
Ingredients
- 1 ripe banana mashed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ ground nutmeg
- â…” cup 6 fl. oz milk (Any milk will work; I used 2% and almond with success.)
- â…” cup oat flour 80g
- 2 tablespoon ground flaxseed meal 13g
- ½ cup almond flour 25g
- 1 tablespoon chia seeds 13g
- ½ teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- Whisk the mashed banana with the egg, vanilla, cinnamon, and nutmeg.
- Whisk in the milk and then add all the dry ingredients except the baking powder and soda.
- Once everything is well combined, gently stir in the baking soda and baking powder.
- Heat non-stick griddle over medium heat and spray with non-stick cooking spray.
- Use about â…› cup of batter to make each cake.
- Flip once edges just start to become solid and the bottoms are nice and golden.
- Pile up and serve!
