			<content:encoded><![CDATA[<p>I&#8217;ve never eaten coleslaw in my life. Is that weird? Isn&#8217;t that was a cabbage salad is? </p>
<p>Anyway, I was armed with the cutest little heads of cabbage from the farm and, yup you guessed it, feta. :) So i decided to combine them together and I&#8217;m so glad I did! This was fabulous! I almost ate the whole bowl in one sitting. I had to force myself to save it for dinner. </p>

The husband said it was ok but he&#8217;s not a cabbage man. His reaction was pretty much what I expected. The Little Guy, well, let&#8217;s just say he was brave to try it even though he ended up spitting it out. Hey.. you can&#8217;t win them all. :)</p>
<ul>
<li>2 small heads of cabbage (about 2 cups shredded 140g) I used 1 red and one green. </li>
<li> 1/4 cup crumbled feta (34g)</li>
<li> 1/2 tbsp honey (10g)</li>
<li> 1 tsp olive oil (5g)</li>
<li> 1 tsp oregano </li>
<li> 2 tbsp red wine vinegar</li>
<li>Pinch of fresh ground black pepper or more to taste. </li>
</ul>
<p>I told you. They are so stinkin&#8217; cute I had to post a few picures of the cabbage heads. </p>

It&#8217;s funny but when I read them and actually find out what&#8217;s in the dish I&#8217;m not as inspired to make it. Oh I&#8217;m an odd duck, I know. lol Anyway I saw this recipe or should I say picture of <a href="http://kalynskitchen.blogspot.com/2007/04/carrot-parsley-and-garbanzo-chickpea.html">Kalyn&#8217;s Carrot, Parsley, and Garbanzo (Chickpea) Salad with Feta and Cumin</a> and I immediately got an idea for my own Chickpea and feta idea.</p>

<p>Here&#8217;s what I cam up with. Oh! and I didn&#8217;t have any red onion although I think is would be great in this. I just decided to skip onion all together.  </p>
<ul>
<li>1 tsp olive oil</li>
<li> 2 limes</li>
<li> 1/2 tbsp honey (10g)</li>
<li> Kosher Salt</li>
<li> Ground Black Pepper</li>
<li> 1 can of Chickpeas (Garbanzo beans) drained and rinsed</li>
<li> 1/2 cup grated carrots</li>
<li> 1/2 cup Fresh cilantro</li>
<li> 2 oz Feta Cheese</li>
</ul>
<p>Gather all your ingredients.
</p>
<p> Grate the carrots.</p>
<p>Rinse the chickpeas.</p>
<p>Loosely chop the cilantro.</p>

<p>Start by making the dressing. </p>
<p>Remove some of the peel from the limes with the grater. You don&#8217;t have to get it all just about a tsp or two to bump up the flavor. Add the peel, the olive oil, honey, salt, pepper and juice from both limes to a bowl and whisk. </p>
<p>In a larger bowl add the chickpeas, carrots, feta and cilantro. Pour the dressing over. Toss and eat! </p>

			<content:encoded><![CDATA[<p>I made this dish the other night when I defrosted chicken and didn&#8217;t know what to do with it. I do that a lot, defrost a protein and then wing it with what I have on hand. I find it super fun and creative. This time I used some POM juice, brown rice and spinach. A fabulous combo especially with a little dried tarragon mixed in. </p>
<p>The husband wasn&#8217;t home when I made it. Hence the experimentation ;) but the little guy was. He liked the rice but ate chicken legs instead of the chicken pieces in the dish. Why? <span id="more-2113"></span> Cause he&#8217;s a crazy 4 year old.. that&#8217;s why. <ul>
<li>4 oz POM juice</li>
<li> 1 tbsp balsamic vinegar</li>
<li>1 tbsp honey</li>
<li> 1 tsp <a href="http://www.spicesinc.com/p-119-tarragon-leaf.aspx?affiliateID=10056">dried tarragon</a></li>
<li> 1/2 tsp <a href="http://www.spicesinc.com/p-32-garlic-powder.aspx?affiliateID=10056">garlic powder</a></li>
<li> 1/2 tsp <a href="http://www.spicesinc.com/p-66-onion-powder.aspx?affiliateID=10056">onion powder</a></li>
<li> pinch of kosher salt and ground black pepper</li>
<li> 3 boneless skinless chicken breast (About a pound)</li>
<li> About 2 cups cooked brown rice I used one of the 90 second bags)</li>
<li> 2-3 cups of baby spinach</li>
</ul>
<p>Whisk the POM juice, honey, vinegar, tarragon, garlic powder, onion powder, salt and pepper. </p>
<p>Pierce the chicken a few times with a fork and submerge the chicken. Marinate for at at least a half an hour. </p>

<p>Heat a large skillet over medium high heat and spray with a non-stick cooking spray. </p>

<p class="center">Place the chicken in the hot pan. It will smoke and sizzle. LEAVE it alone! You are going to sear it for 2 minutes. Do not touch it for 2 minutes. </p>

<p class="center">After 2 minutes flip. The honey will burn a little making this GLORIOUS crusty skin. Cook for another minute. </p>

<p class="center">Remove from heat and cut the chicken into pieces. It will still be pink in the middle. That&#8217;s ok, we are still going to cook it. We just wanted to get all that yummy flavor. </p>

<p>Return to the heat and add the marinade to deglaze the pan. Bring it to a boil. If your pan is as hot as mine was it will boil immediately. </p>

<p class="center">Add the cooked rice. </p>

<p class="center">Stir in the rice and have it absorb all the flavor. </p>

<p class="center">Add the baby spinach. </p>

			<content:encoded><![CDATA[<p>Let me start this post by saying, I didn&#8217;t even know what <a href="http://en.wikipedia.org/wiki/Tabbouleh">Tabouli (Tabbouleh)</a> was about a year ago. I had some at a party last year and the cafeteria at my new job has it all the time. I believe it&#8217;s traditionally <a href="http://greenlitebites.com/2008/10/25/food-find-bulgur/">bulgur</a>, parsley, mint, tomato, onion, lemon juice and olive oil. But unfortunately (or fortunately depending on how you look at it) I don&#8217;t have all of that stuff. Heck, I don&#8217;t even have any fresh vegetables in the fridge except some carrots and an aging celery stalk. <span id="more-1793"></span> I did, however, have some bulgur I made last night which I never used because we ended up going out&#8211;<a href="http://ronisweigh.com/2010/01/i-survived-a-japanese-steakhouse.html">which I survived</a>. ;) </p>
<p>So after returning from the gym this morning I looked in the fridge, saw the bulgur. Looked in the freezer, saw the bag of frozen veggies and <em>tadaaaa</em> Asian Inspired Tabouli Salad was born!</p>
<p>It is tasty! A wonderful chilled salad and very filling. You can totally put this out for a party, use it as a side dish or separate the recipe into two servings for lunch! <img src="http://greenlitebites.com/resources/2010/20100116_Tabouli.jpg" alt="Asian Inspired Tabouli Salad" width="300" height="450"  class="right" /></p>
<ul>
<li>1/2 cup dry <a href="http://greenlitebites.com/2008/10/25/food-find-bulgur/">bulgur</a> (80g)</li>
<li> 1 cup of water</li>
<li> 1 16oz (1lb) bag of frozen Asian vegetables (or stir-fry mix)</li>
<li> 1/2 tbsp honey (10g)</li>
<li> 1 tbsp olive oil (14g)</li>
<li> 1 tbsp soy sauce</li>
<li> 1 tbsp lemon juice</li>
<li> 2 tsp dried cilantro</li>
<li> 1 tsp ground ginger</li>
<li> Kosher salt &amp; fresh ground black pepper</li>
</ul>
<p>In a small saucepan bring the bulgur and water to a boil. Cover and let sit for 15 minutes until all the liquid is absorbed. (note: I did this ahead so mine was chilled when preparing although I don&#8217;t think it will make much of a difference) (double note: DO NOT lift the lid. That&#8217;s always my downfall.)</p>
<p>Place the bag of frozen veggies in a microwave safe dish and cook until defrosted but not hot. I did 2 minutes stirred and then 2 more minutes. </p>
<p>In a large bowl add the honey, olive oil, soy sauce, lemon juice, cilantro, ginger, 2 pinched of salt, and some cracked black pepper. </p>

<p>Whisk. </p>

<p>Add the veggies and bulgur. </p>

<p>Stir to coat everything in the dressing. </p>

<p>Chill in the fridge until ready to eat. </p>

<p>I actually made this up yesterday, snapped the most awesome shots of the little guy eating it and then accidently deleted them off the camera. :( </p>
<p>So I decided to make it again this morning. It came out even better when I discovered dipping graham crackers in it was a little taste of heaven. Like dessert chips-n-dip. I&#8217;m seriously thinking of putting it like that for a New Years party we&#8217;re having.<span id="more-1745"></span><img src="http://greenlitebites.com/resources/2009/food/20091224_pumpkinyogurt.jpg" alt="Pumpkin Yogurt" width="300" height="450" class="right" /></p>
<p>The little guy liked it, although I&#8217;m thinking it was more the crackers then the yogurt. Either way, I got some good stuff in him this morning. ;) </p>
<ul>
<li>1/2 cup canned pureed pumpkin (120g)</li>
<li> 1/2 cup non-fat yogurt (I used greek) (115g)</li>
<li> 1 tbsp honey (21g)</li>
<li> 1/2 tsp vanilla </li>
<li> 1 tsp ground cinnamon</li>
<li> 1/4 tsp ground nutmeg</li>
</ul>
<p>Mix all ingredients together. </p>
<p>Viola! :)</p>
<p>I used Trader Joe&#8217;s Old Fashion Graham (our favorite and the only whole grain ones I know of) crackers as my &quot;spoon&quot;.</p>

			<content:encoded><![CDATA[<p>Sometimes I just get craving and last night was one of those times. After recording a <a href="http://ronisweigh.com/2009/12/ask-roni-_v30-workout-music-plateaus-runners-knee-overtraining.html">video for Roni&#8217;s Weigh</a> I took my hand at an idea I&#8217;ve had for some time. Could I use won ton wrappers as crusts for mini apple pies?</p>
<p>Well, I&#8217;m happy to say, the answer is YES! </p>
<p>I can&#8217;t believe it worked! Even the husband liked them! At least he said he did after his one big ole bite. I don&#8217;t get it. I just don&#8217;t get it! I almost ate the whole batch in one sitting. How does he do that?!? <span id="more-1717"></span></p>
<p>Anyway, this is what I did. I&#8217;m working from memory hear so bear with me.<img src="http://greenlitebites.com/resources/2009/food/20091208_applePie.jpg" alt="Mini Apple Pies" width="300" height="450" class="right" /></p>
<ul>
<li>1/4 cup of water</li>
<li> 1/4 tbsp honey (5g)</li>
<li> 1/2 tsp cinnamon</li>
<li> 1/4 tsp vanilla</li>
<li> 1 tbsp whole wheat flour</li>
<li> pinch of salt</li>
<li> 2 small apples diced &#8211; about a cup (I used gala and left the skins on)</li>
<li> 8 won ton wrappers</li>
</ul>
<p>Preheat the oven to 375</p>
<p>In a small pot whisk the water, honey, cinnamon, vanilla, and flour over medium hear. Add the apple. Stir to coat everything. The liquid should just boil and start to thicken. </p>
<p>Drop the heat down to medium low and cover. Cook for 12-15 minutes until the apple just softens. </p>
<p>Meanwhile, spray a mini muffin pan with non-stick cooking spray press the won ton wrappers in to form the crusts. </p>
<p>Once the apples are done. They should look like this&#8230; </p>

<p>Scoop the apple mixture evenly into the wontons. Bake for about 10 minutes until the edges start to brown and get crispy. </p>
<p>I didn&#8217;t have any but boy would these be great with a dab of frozen vanilla yogurt or cool whip! Here&#8217;s a little before and after cooking&#8230; </p>

			<content:encoded><![CDATA[<p>Preparing for the toddler&#8217;s 4th birthday party I decided to make a new marinade and grill up some chicken. The husband pleaded with me to &quot;go safe.&quot; Translation: use tried and true store bought BBQ sauce. </p>
<p>BORING</p>

<p>I said, &quot;Trust me, let me make something new.&quot;  :) And I whipped us an Asian inspired glaze/marinade using what I had on hand. I marinated the chicken overnight and grilled it today. </p>
<p>Verdict? </p>
<p>My mom was the first to try it and said, &quot;It&#8217;s Delicious!&quot; That became the phrase of the day. People would say &quot;Have you tried &#8216;The Delicious Chicken&#8217;?&quot; &quot;Have a piece of &#8216;Delicious Chicken&#8217;, it&#8217;s delicious!&quot; :) Nothing could have made me happier. </p>

<ul>
<li>1/2 cup sugar free Apricot preserves (68g)</li>
<li> 2 tbsp rice wine or apple cider vinegar</li>
<li> 2 tbsp low sodium soy sauce</li>
<li> 1 tbsp honey (21g)</li>
<li> 1 tsp olive oil (4g)</li>
<li> 1 tsp garlic powder</li>
<li> 1 tsp onion powder</li>
<li> 1 tsp ground ginger</li>
<li> 1 tsp dried chives</li>
</ul>
<p>Whisk are all the ingredients together. I doubled for 5lbs of chicken (10 pieces.) </p>
<p>Put a little on the side to glaze with while cooking and pour the remaining in a large plastic bag. Add the chicken. Seal, removing as much air as possible. </p>
<p>Marinade for a few hours or overnight. Grill the chicken until done (vague I know but this post is about the marinate, not how to grill chicken- cooking times will vary greatly depending on what cuts of chicken you decide to use)</p>
<p>No nutritional information. Again it will vary depending on how you use the marinade. </p>

			<content:encoded><![CDATA[<p>I&#8217;ve been wanting to experiment with a blueberry muffin for FOREVER!  I&#8217;m not sure this one is complete quite yet. I may tweak it slightly but I&#8217;m satisfied with the results and so was the toddler. He ate two! Even the husband took a bite and said they were good. Although he&#8217;d never eat a whole muffin. He&#8217;s just not a muffin man. :) </p>

<p>You&#8221;ll notice sprinkles in some of the pictures. Sad the say the only way I can get the toddler excited about baking with me is to promise a sprinkle session. He still has fun and participates through the whole process&#8230;</p>

<ul>
<li>1 and &frac14; cups (150g) of whole wheat white flour (regular whole wheat works too)</li>
<li> 1/2 tsp baking soda</li>
<li> 1/2 tsp baking powder</li>
<li> 1 heaping tsp cinnamon</li>
<li> 1/4 tsp of salt</li>
<li> 2 egg whites</li>
<li> 1 large overripe banana</li>
<li> &frac12; cup plain non-fat yogurt</li>
<li> 2 tbsp honey (42g)</li>
<li> &frac14; cup applesauce</li>
<li> 1/2 tsp almond extract</li>
<li> 1 cup blueberries (148g)</li>
</ul>
<p>Preheat the oven to 375 degrees</p>
<p>Mix the whole wheat flour, baking soda, baking powder, salt and cinnamon. Set aside</p>
<p>In a medium bowl mash the banana with a fork. Add the egg whites, yogurt, honey, applesauce and extract. Whisk until well blended and a bit &ldquo;frothy&rdquo;.</p>
<p>Mix the sifted flour with the banana egg mixture and the blueberries until just moistened. Don&rsquo;t over mix!</p>
<p>Spray a 6 muffin pan with non-stick cooking spray.</p>
<p>Evenly distribute the batter in the muffin tin cups. Sprinkle with ground cinnamon (or sprinkles!) Bake for about 25 minutes.</p>

			<content:encoded><![CDATA[<p>I whipped one of these up the other day with a few ounces of leftover turkey meat and I immediately fell in love. The honey mixed in the burger  cooked on the outdoor grill created this fantastic burnt sweetness. The mustard adds a bit of tang and the oatmeal keeps it super moist. </p>

<p>I made another batch yesterday, this time using more meat and making more then one portion. I cooked the whole batch on the grill and froze the leftovers for my lunches like I do with the <a href="http://greenlitebites.com/2008/02/13/southwestern-turkey-burgers/">Southwestern Turkey Burgers</a>.</p>
<p>The husband and the toddler both refused to even try a bite. Again.. cool with me! I want the lunches! :) <img src="http://greenlitebites.com/resources/2009/food/20090601_honeyburgers.jpg" alt="Grilled Honey Mustard Turkey Oat Burgers" width="300" height="400" class="right" /></p>
<ul>
<li>12oz lean ground turkey </li>
<li> 1 egg white</li>
<li> 1 cup (80g) old Fashioned Oats</li>
<li> 3 tbsp (63g) honey</li>
<li> 3 tbsp country style mustard (the kind with the whole seeds)</li>
<li> 2 tbsp worcestershire sauce </li>
</ul>
<p>Combine all ingredients and form into 5 patties about 4 ounces each. The mixture will be moist. </p>
<p>Cook on a preheated grill on medium-high for about 5 minutes a side. Serve on your fav whole wheat bun with all the fixin&#8217;s. :) I used <a href="http://ronisweigh.com/2008/09/arnold-select-100-whole-wheat-sandwich-thins.html">a sandwich thin</a>, baby spinach, tomatoes, ketchup, black pepper and sweet pickles. </p>

<p>I made a shake after my workout tonight and I have no problem declaring it my favorite immediately. That is how GOOD it was. However, the toddler did not agree. His exact quote was &quot;it&#8217;s yucky.&quot; Wonder where he learned that word from. ;~) </p>

<p>Let me start at the beginning. If you&#8217;ve been following along I took my hand at some <a href="http://greenlitebites.com/2009/04/27/homemade-almond-milk-take-1/">homemade almond milk</a> after trying some store bought and falling in love. Then I tried it again, this time <a href="http://greenlitebites.com/2009/05/03/honey-almond-bites-almond-milk-take-ii/">changing up my straining procedure and making some cookies in the process</a>. Well, today, I made the milk the same exact way just adding a little bit of flavoring. Before blending the almonds I added a 1/2 tsp vanilla extract, 1/2 tsp almond extract and 1/2 tbsp of agave nectar (you could use honey). <img src="http://greenlitebites.com/resources/2009/food/20090520_shake.jpg" alt="My Favorite Shake (Homemade Almond Milk Take III)" width="300" height="400" class="right" />I was pleasantly surprised! The hint of flavor added was awesome! At least I thought so. The toddler didn&#8217;t agree. He prefers his almond milk straight up. That&#8217;s cool with me, next time I&#8217;ll keep it simple. :)</p>
<p>Ok, back to this shake! When I got home from the gym, I decided to make a quick protein shake. Here&#8217;s what I did&#8230;</p>
<ul>
<li>4 oz of vanilla almond milk</li>
<li> 1/2 banana</li>
<li> 1 tbsp agave nectar (21g)</li>
<li> 1 tbsp unsweetened cocoa powder (5g)</li>
<li> 1 scoop unflavored protein powder (I used <a href="http://www.amazon.com/gp/product/B000GIUQOG?ie=UTF8&#038;tag=roswewapas-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000GIUQOG">Any Whey</a><img src="http://www.assoc-amazon.com/e/ir?t=roswewapas-20&#038;l=as2&#038;o=1&#038;a=B000GIUQOG" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />) </li>
<li> 4-5 ice cubes</li>
</ul>
<p>Blend everything until smooth! I used my bullet. Can&#8217;t get much simpler then that! </p>

<p>For me the hint of vanilla, almond, banana and chocolate was an amazing combo! The nutritional information is a little shaky as I&#8217;m not quite sure how to calculate for homemade almond milk. In my rough estimates I&#8217;m getting about 200 calories for the whole recipe, 4 WWPs. </p>

<p>I&#8217;m obsessed. I love the fact that I can make my own &quot;milk&quot; out of super healthy almonds. I love that the toddler likes it. I love that we use it on morning cereal. And now&#8230; I love that it comes with cookies!! :) </p>
<p>Let me explain. </p>

<p>I took my hand at another <a href="http://greenlitebites.com/2009/04/27/homemade-almond-milk-take-1/">batch of almond milk</a>. I made it the same as I did the first time but changed my filtration technique just slightly. I still soaked overnight and blended 1 cup almonds with 3 cups of water. This time, however, the toddler didn&#8217;t help (he was out with the husband) it was the cat who seemed interested. She was doing good until I turned the blender on. :) </p>

<p>Once I blended the milk I set up the same filtration system as before, only this time I added a layer. Draping an old clean baby towel over my strainer. I then poured the milk into the towel (in small batches.) </p>

<p>Once all the milk was out of the blender I gathered the towel squeezed the milk.  To my surprise it worked perfectly!  I opened the towel to reveal all the almond meal. Who needs cheesecloth! ;~)</p>

<p>So after the process I&#8217;m left with meal and milk.  </p>

<p>Last time, I&#8217;ll be honest, I threw away the meal. I just didn&#8217;t have it in me to experiment with it and I wasn&#8217;t sure how long it would last. I guess I could have thrown it in the freezer but that didn&#8217;t occur to me at the time. Today, I didn&#8217;t want to throw it away again, it seems like such a waste. And almonds are expensive! So I took my hand at a fun way to use it. Here&#8217;s what I came up with. <img src="http://greenlitebites.com/resources/2009/food/20090503_honeyAlmondBites.jpg" alt="honey almond bites" width="300" height="400" class="right" /></p>
<ul>
<li>2 oz fat free cream cheese</li>
<li> 1/2 cup honey (168g)</li>
<li> 1 and 1/2 tsp almond extract</li>
<li> 1 and 1/3 cups of whole wheat pastry flour (120g)</li>
<li> 1/4 tsp baking soda</li>
<li> pinch of salt</li>
<li> All of the leftover almond meal after making almond milk</li>
</ul>
<p>Preheat the oven to 350 degrees.</p>
<p>Beat the cream cheese, honey and almond extract until smooth. You will still see some white spots but it will be liquidy. </p>
<p>Sift the flour, baking soda and salt into the honey mixture. Stir until well blended. Add the almond meal and mix in with a spatula until well blended. </p>
<p>Spray a cookie sheet with non-stick cooking spray. Scoop out 1/2 tbsp&#8217;s of the dough and roll into small balls (~54). The dough will be sticky, it may help to put it in the fridge for a few minutes first. </p>

<p>Place the on the cooking sheet. Bake for 15 minutes. Immediate remove from cookie sheet and eat. I&#8217;m only kidding, that&#8217;s just what I did. :) </p>
<p>These have great almond flavor with a nice sweetness from the honey and a great texture from the meal. I just wish I had other taste testers! I was home alone when I made them! </p>
<p>The nutritional information is sketchy as I&#8217;m not sure how the almonds are effected by the milk process. So I used just a cup of almonds to calculate figuring if anything they would actually be a little less. If anyone has any insight I&#8217;m all ears! </p>

			<content:encoded><![CDATA[<p>This started as a quick vegetarian lunch idea and then I had a conversation with a friend who said he thought I needed more protein and suggested tuna. As soon as he did I looked down and said &quot;Perfect! That would be awesome in this!&quot; I added a small can and it was delish. It was without it too, but the tuna added that, ummm, well, tuna texture. :) </p>

<ul>
<li>1 can (15oz) Chickpeas (garbanzo beans) rinsed and drained</li>
<li> 2-3 slices of red onion chopped</li>
<li> 1 tbsp honey (21g) </li>
<li> 1oz (2 tbsp) pomegranate juice</li>
<li> 1/2 tbsp dried parsley</li>
<li> 1 small can of tuna drained (optional) </li>
</ul>
<p>Toss all ingredients together and let chill for at least 10 minutes allowing the flavors to merge. </p>
<p>What to do with it? I topped salad greens and wrapped it. Both ways were great! </p>

<p>I&#8217;m going to give you the estimate on the recipe minus the tuna. You can can always add from what&#8217;s listed on the can. Without tuna I&#8217;m getting 2 servings with, you can sneak in another one I think. It all depends on how you decide to use it. </p>
