			<content:encoded><![CDATA[<p>First I made <a href="http://greenlitebites.com/2008/05/06/mini-egg-muffins/">Mini Egg Muffins</a>. Then <a href="http://greenlitebites.com/2008/06/25/mini-spinach-egg-muffins-video-post/">Mini Spinach Egg Muffins</a>. Now I present Mini Western Omelet Muffins! :) </p>
<p>Western omelets have always been my favorite. The combination of onion, peppers and ham with egg dipped in ketchup is a little taste of breakfast heaven for this breakfast lover. </p>

<p>The little guy had NO interest in them at all. :( I can&#8217;t get him to eat eggs anymore even though <a href="http://greenlitebites.com/2008/08/20/mommy-and-me-omelets-video-post/">they were such a staple for us for so long</a>. I&#8217;m sure it&#8217;s just a phase so I&#8217;m going to keep offering. :)<img src="http://greenlitebites.com/resources/2009/food/20091229_WesternOmeletMuffins.jpg" alt="Mini Western Omelet Muffins" width="300" height="450" class="right" /></p>
<ul>
<li>About 2 oz thinly sliced deli ham</li>
<li> 2 thick sliced of sweet onion diced</li>
<li> About 1/4 of a large green pepper diced</li>
<li> 1 egg</li>
<li> 2 egg whites</li>
<li> Kosher Salt &amp; Pepper</li>
<li> non-stick cooking spray</li>
</ul>
<p>preheat the oven to 375 degrees.</p>
<p>Spray in a 12 cup mini muffin pan with non-stick cooking spray. Depending on the size of your ham slices cut them in half, form a small cone and place in the mini muffin pan like this. . . </p>

<p>Heat a non-stick skillet over medium heat. Cook the onion until just starts to brown. Add the peppers, sprinkle with salt and pepper. Cook for another minute before shutting off the heat. </p>
<p>Whisk the egg and egg white together with a bit of salt and pepper. Stir in the cooked onion and peppers. </p>
<p>Using a tablespoon scoop the egg mixture into the ham cups. </p>
<p>Bake for about 15 minutes until the egg is firm. </p>

I can&#8217;t believe it! :) It&#8217;s been forever and I&#8217;m happy to report my return to the kitchen was (sort of) welcomed by both the husband and the child. Actually the child DEVOURED his plate. The husband, picked, ate a bit, said it was &quot;good&quot;. Then I told him there was sweet potatoes in it and he made a face. You gotta love when the Dad is pickier then the kid. ;) </p>

<p>So I&#8217;ve used this flavor combination a few times before. First in <a href="http://greenlitebites.com/2008/03/16/baked-ham-with-sweet-potatoes-and-carrots/">Baked Ham with Sweet Potatoes and Carrots</a> and then on the grill with <a href="http://greenlitebites.com/2008/08/19/grilled-ham-steaks-with-sweet-potatoes/">Grilled Ham Steaks with Sweet Potatoes</a> but I have to admit, this way may be my favorite. It literally took 25 minutes from start to finish, was eaten by all and now I have lunch for Monday. How can you beat that? :)<img src="http://greenlitebites.com/resources/2009/food/20090822_hamSkillet.jpg" alt="Ham and Sweet Potato Skillet" width="300" height="400" class="right" /></p>
<ul>
<li> 12 oz  cured ham cut into cubes</li>
<li>1 really large sweet potato cut into cubes (mine was 500g)</li>
<li>6 oz carrots cut into chunks (170g) </li>
<li> 1 tbsp apple cider vinegar</li>
<li>1 tbsp Balsamic vinegar</li>
<li> 1 tbsp (21g) honey  </li>
<li>1 tbsp (20g) molasses  </li>
<li>&frac14; tsp all spice  </li>
</ul>
<p>Heat a large skillet over medium-high heat. Spray with non-stick cooking spray and add the cubed potatoes. Cook for about 5 minutes stirring occasionally. Add the carrots and cook for a few more minutes. </p>
<p>Whisk the vinegars, honey, molasses and all spice together. Top the potato and carrots with the mixture. Stir to coat, bring to a boil, cover and lower to medium-low. Cook for about10 minutes. Stir in the cubed ham and cook until potatoes are soft, about 5 more minutes. </p>

			<content:encoded><![CDATA[<p>This idea was in direct response to the toddler saying he &ldquo;did not like sandwiches&rdquo; in his lunch anymore. Who can blame him? Five days of a ham and cheese on whole wheat can get old. *sigh* What&#8217;s a mom to do? Never did I think I&#8217;d have a hard time coming up with ideas for his lunch box! It&#8217;s hard enough not being able to send him with a PB&amp;J or even a handful of peanuts as an easy protein source (his school is a peanut free zone), but now he&#8217;s taking sandwiches off the table too!  <span id="more-450"></span>(Note: I&#8217;m planning a lunch box ideas post soon!) </p>
<p>So, like usual, take this idea and run with it! Use a tortilla or even a rolled out slice of bread! Fill it with your favorite veggies and shred or slice them. Even skip the mustard in the roll and serve to your kids on the side as a dipping sauce with chopsticks! Whatever works! </p>
<p>Here&#8217;s how I made the ones pictured (which was my lunch today, by the way!) <img src="http://greenlitebites.com/resources/2008/food/sandsuhi.jpg" alt="Sandwich Sushi" width="300" height="400" class="right" /></p>
<ul>
<li>&frac12; slice of <a href="http://ronisweigh.com/2008/09/josephs-middle-east-bakery-lavash-bread.html">Lavash bread</a> (I use because it&#8217;s square, If you can&#8217;t find it, try flat out bread or a tortilla would work too!)</li>
<li> 1 <a href="http://ronisweigh.com/2007/07/laughing-cow-light-cheese-wedges.htm">laughing cow cheese wedge</a> </li>
<li>  squirt of honey mustard</li>
<li> 3 slices of thin sliced turkey breast</li>
<li> 1 slice then sliced lean ham</li>
<li> 3 slices of turkey pepperoni</li>
<li> 5-6 baby spinach leaves with the stems removed</li>
<li> 2 baby carrots shredded</li>
</ul>
<p>Smear he cheese and mustard on the bread and then start layering the ingredients as seen in the pictures. Notice I leave about 2 inches on the end &ldquo;free&rdquo;. As you roll the fillings will squish outwards. </p>

<p>Roll as tightly as you can.  Cut chunks with a serrated knife (more like lightly saw through as to not squish). I normally cut the very end off to get a flat edge. </p>

			<content:encoded><![CDATA[<p>A few days ago  <a href="http://ronisweigh.com/2008/09/josephs-middle-east-bakery-lavash-bread.html">I posted about Lavash Bread on my weight loss blog</a>. When I read the comments I laughed out loud as people suggested I use it to make pizza and said &ldquo;I know you will love it.&rdquo; </p>
<p>First of all my, readers REALLY know me and second, it was the first thing I thought of when I saw it in the store!</p>

<p>So coming home from the gym I remembered I defrosted a turkey sausage and I was all prepared to make an <a href="http://greenlitebites.com/2008/08/27/overstuffed-sausage-and-pepper-wrap">Overstuffed Sausage and Pepper Wrap</a>  when I remembered the Lavash bread! Then I thought PIZZA! (Much like<a href="http://www.youtube.com/watch?v=WvxgM3lr-mg"> that old Beggin Strips commercial</a>, just replace the dog with me and the bacon with pizza &#8211; that should leave you with a nice mental picture)</p>
<p>My initial thought was a meat-lovers but upon seeing all the meats in the skillet I decided there needed to be some color! Which one looks healthier to you? </p>

<p>So I ditched meat-lovers and went supreme! Now I&#8217;m going to tell you how I made it but remember, take it and run! Use what ya got! My goal was as light as I could make a huge supreme pizza with all the meats!<img src="http://greenlitebites.com/resources/2008/food/SupremePizza_main.jpg" alt="Supreme Pizza on Lavash Bread" width="300" height="400" class="right" /></p>
<ul>
<li>1 large piece of Lavash bread or flat bread (<a href="http://ronisweigh.com/2008/09/josephs-middle-east-bakery-lavash-bread.html">like Joeseph&#8217;s</a>)</li>
<li> 1 turkey sausage link</li>
<li> 1 tbsp real bacon bits (7g)</li>
<li> 1 thin slice of deli ham chopped</li>
<li> 4 small turkey pepperoni slices chopped</li>
<li> 2 florets of broccoli cut up</li>
<li> &frac14; of an orange pepper chopped</li>
<li> handful of baby spinach chopped</li>
<li> 2 tbsp tomato paste</li>
<li> sprinkle each of, Kosher salt, pepper, garlic powder, onion powder, dried basil, and dried parsley</li>
<li> 1 &frac12; oz of shredded mozzarella (preferably fancy shredded but I didn&#8217;t have any)</li>
</ul>
<p>Preheat the oven to 450 degrees. </p>
<p>Lay the Lavash bread on a sheet of aluminum foil. Cook in the oven for about 5 minutes until crisp. The edges will just start to brown. </p>
<p>Remove the skin on the sausage and cook up in a small no-stick frying pan. Break apart the meat it will want to stick together. Brown for about 2-3 minutes. Add the bacon bits, ham and pepperoni. Stir to combine flavors. Add the broccoli, peppers and spinach. Cook for about 1 minute and remove from heat. </p>
<p>Smear the tomato paste on the crispy Lavash bread. Sprinkle with all the spices. Spread with meat-veggie mixture. Top with the cheese. Sprinkle a bit of parsley and return to the oven for 5 minutes. Serve! </p>

<p>Now the serving is HUGE! What you see in the main picture (by the ingredients) is &frac14; of the pizza.  I&#8217;m going to count the whole &#8220;pie&#8221; as 1 serving because I ate the whole thing but if you wanted to go lighter you could split it with someone and add a salad on the side. It would be very satisfying! </p>

			<content:encoded><![CDATA[<p>Five months ago I made <a href="http://greenlitebites.com/2008/03/16/baked-ham-with-sweet-potatoes-and-carrots/">Baked Ham with Sweet Potatoes and Carrots</a>. Why is that important, you ask? Well, I ate the other half of that 3 pound ham tonight. Using the same seasoning as the baked dish, I cut the Ham into 3 oz &ldquo;steaks&rdquo; marinated and grilled them on the BBQ. It was delicious! The husband AND the the toddler BOTH asked for seconds. <ul>
<li>1-2 pounds of a cured ham cut into thick slices (or you could actually buy ham steaks)</li>
<li> 1 really large sweet potato cut into thick fry like pieces</li>
<li> 1 tbsp apple cider vinegar</li>
<li> 1 tbsp Balsamic vinegar</li>
<li> 1 tbsp (21g) honey</li>

</ul>
<p>Cut the ham slices and potato wedges.</p>
<p>Whisk the vinegars, honey, molasses and all spice together. Pour the marinade into a large ziplock bag and marinate the ham steak and potatoes for about an hour. </p>

<p>Preheat the grill. </p>
<p>Cook the potatoes over medium heat first as they will take longer (about 45 minutes).  To speed up the process you can start them in the microwave for 3-4 minutes and then grill. </p>
<p>Once the potatoes are just about done, place the ham steaks over high heat for about 3-4 minutes a side. The ham is already cooked so you are just heating it up and getting those pretty little grill marks. </p>

			<content:encoded><![CDATA[<p>To help get back on track after a weekend of too much candy  I decided to experiment with a big salad for lunch. I love me a big salad,  especially one I whip up with what I have on hand. </p>
<p>This one came out exceptionally good, with a nice tangy bite  from the spicy mustard that went really well with spinach leaves.  It was a little too spicy for the toddler who  tried a bite of my cherry tomato. He did that cute toddler thing where they  stick their tongue out try to wipe way the heat. <ul type="disc">
<li>1 tsp       ground mustard powder</li>
<li>1 tsp       water</li>
<li>2-3       cups baby spinach leaves</li>
<li>4-5 slices       of cucumber</li>
<li>5-6       cherry tomatoes</li>
<li>3 oz       lean ham cubed (I used leftover <a href="http://greenlitebites.com/2008/03/16/baked-ham-with-sweet-potatoes-and-carrots/" title="Permanent Link to Baked Ham with Sweet Potatoes and Carrots">Baked       Ham</a>)</li>
<li>1       cheese stick sliced (1 oz part skim mozzarella cheese)</li>
<li>½ tbsp       honey</li>
<li>1 tbsp       apple cider vinegar</li>
<li>1 tbsp       red wine vinegar</li>
<li>1 tsp       olive oil</li>
</ul>
<p>In a small bowl, whisk the mustard powder and water  together. Set aside (the longer it sits the hotter it gets.)</p>
<p>Prepare all the veggies, ham and cheese. Place everything in  a large Tupperware dish. You will be shaking this salad to coat everything in  the dressing. </p>
<p>Whisk the honey, vinegars and oil into the prepared mustard.   </p>
<p>Pour the dressing over veggies, shake it up and serve! </p>

			<content:encoded><![CDATA[<p>Boneless cured ham is something I tend to overlook. It never  really occurred to me that it could be an easy light dish until I picked one up  this weekend and noticed it was only 90 calories for 3oz. The problem is they  are normally too large to deal with but I noticed 3-5 pound sizes at my local  grocery store. Why can&#8217;t I cut one in half for the three of us? It’s  prefect!</p>
<p>So that’s what I did and I had fun  combining it with some sweet flavors that went perfectly with sweet potatoes  and carrots. The dish was a hit all around, toddler and all! Except the husband  who doesn’t like sweet potatoes but that’s his loss, they were to die for!<span id="more-112"></span> <img src="/resources/2008/food/ham.jpg" alt="Baked Ham with Sweet Potatoes and Carrots" width="300" height="400" class="right" /></p>
<ul type="disc">
<li>Small       cured ham (I cut a 3 pounder in half)</li>
<li>Handful       of whole cloves (around 16)</li>
<li>1       really large sweet potato cut in small chunks</li>
<li>¾       cup of baby carrots cut in half</li>
<li>1       tbsp apple cider vinegar</li>
<li>1       tbsp Balsamic vinegar</li>
<li>1       tbsp (21g)  honey</li>
<li>1       tbsp (20g) molasses</li>
<li>¼       tsp all spice</li>
<li>½       cup of water (separated)</li>
<li>½       tbsp corn starch</li>
</ul>
<p>Preheat the oven to 375 degrees. </p>
<p>Pierce the ham with a knife and  insert the whole gloves in the flesh.  I  place them in a row like pattern (see image below). </p>
<p>Place the ham in a baking dish  and spread the sweet potatoes and carrots around it. </p>
<p>In a small bowl whisk the apple  cider vinegar, Balsamic vinegar, honey, molasses, all spice and ¼ cup of the  water.  Pour over the ham, potatoes and  carrots. </p>
<p>Cover the baking dish with  aluminum foil and bake for 45 minutes to an hour until potatoes are soft. </p>
<p>Whisk the cornstarch with  remaining ¼ cup of water. When finished, remove the ham, potatoes and carrots  from the baking dish. Place it over medium heat, add the cornstarch mixture and  continue to stir while bringing it to a boil allowing the sauce to thicken to a  glaze. </p>
<p>Top the ham with a bit of the  glaze and serve with a side of potatoes and carrots. </p>

			<content:encoded><![CDATA[<p>This one is for all the mommies with toddlers.  I wanted something light for lunch and the  toddler was hungry after a long morning running errands. </p>
<p>You can really use any cracker toppings you like.  I just happen to be partial to turkey  pepperoni, ham and cheese.  This would  probably be really good under the broiler for a second or two to melt the  cheese but the toddler isn’t a fan hot foods yet. <span id="more-27"></span><img src="/resources/2007/food/cheeseCrackers.jpg" alt="“Here’s Lookin’ at You” Cheese and Crackers" width="300" height="400" class="right" /></p>

<li>honey       mustard</li>
<li>12       slices thin sliced lean ham</li>
<li>12       slices turkey pepperoni (available in <a href="http://greenlitebites.com/the-glb-store/">the store</a>)</li>
<li>1 mozzarella       cheese stick cut into 12 circles</li>
</ul>
<p>Layout the crackers, smear a bit of honey mustard and top  each with 2 slices of ham.  Use the  turkey pepperoni and cheese to make eyes. </p>
<p>Let the toddlers help and enjoy a fun lite lunch or snack! Serve  with a side of carrots sticks!</p>
<p>The ingredients make enough for 2 servings.  Although we only ate 1 and 1/2. </p>
