This is an oldy for me. One of those meals I make different every time. Sometimes I use canned beans, sometimes dry. Sometimes I sauté the veggies sometimes I roast them. I thought I’d share how I made it this weekend to give you some ideas. It’s one of those recipes you can take and make your own.
The husband is not a chili man so I get tons of leftovers that I freeze for work lunches. I use cheap plastic containers and freeze! All right, this is the simplest “recipe” ever. It truly is more of an idea. If you never tried butternut squash, it is a good first recipe to try. It’s easy and gives you an idea of the taste and texture of butternut.
Now I don’t want you to except potato type fries. Butternut has a slightly sweet nutty taste, it’s mild but there. These are good with just salt but if you want to make a sweet treat cinnamon and nutmeg would be good too. Read the rest of this post

I was a sweet potato late comer. For some reason, as a child I thought I didn’t like them. I didn’t even try them until I was pregnant. Looking for nutritious foods, I read up on the good old sweet potato. Full of Vitamin A, Vitamin C, high in fiber, low in calories what more can you ask for?

We are smack dab in the middle of baking season and I have a ton of ideas for “greenlitebites” but I always struggle with sweetener options. Do I just suck it up and use sugar? There has to be a better option, no?

I’m a HUGE dark meat turkey fan. I know, I know, it’s not as lean as the white stuff but it’s SO delicious and just as good for you nutritiously. Plus what are you going to do, throw it away?!?
As I was cooking this tonight, the husband walked by the kitchen and says, “Ohhhh that looks good! I can’t wait for dinner!”. This one is for all the mommies with toddlers. I wanted something light for lunch and the toddler was hungry after a long morning running errands.

I’m traveling for Thanksgiving but I just had to make SOMETHING before I left. I’ve been experimenting with pumpkin muffins and thought they’d make a good breakfast treat for Thanksgiving morning.
