I did it! I bought my first pomegranates. I have to admit I was scared. They look so darn intimidating, don’t they?

Originally, I was hesitant to post this idea being the kind of person who makes it a little different each time. If I have fresh ingredients I use them if not, dried works, I don’t really measure anything and I cook it all day on a Saturday or Sunday.

These little gems are an old favorite of mine. I’ve experimented with this recipe a bunch of times (you’ll notice the many ‘or’s below) and loved each one. They come out like pizza; even the bad batches are good. ;~)

I LOVE salmon! It’s easy to cook and goes well with simple sweet flavors. Normally I make a glaze with honey or molasses but tonight I decided to experiment with a fruit salsa.

When I was a kid, I would BEG my mom for fruit rollups. They ranked right up there with Capri Sun for me. Being in a “controlled income” household both were considered ‘special’ treats for our lunch boxes.
What is it about a flat, paper thin “slice” of “fruit”? I loved those sweet sheets of sugary goodness, wrapping them around my index finger and making it last for hours (was I the only one that would eat them this way?) I just wanted them to last longer!

This is an oldy for me. One of those meals I make different every time. Sometimes I use canned beans, sometimes dry. Sometimes I sauté the veggies sometimes I roast them. I thought I’d share how I made it this weekend to give you some ideas. It’s one of those recipes you can take and make your own.
The husband is not a chili man so I get tons of leftovers that I freeze for work lunches. I use cheap plastic containers and freeze! All right, this is the simplest “recipe” ever. It truly is more of an idea. If you never tried butternut squash, it is a good first recipe to try. It’s easy and gives you an idea of the taste and texture of butternut.
Now I don’t want you to except potato type fries. Butternut has a slightly sweet nutty taste, it’s mild but there. These are good with just salt but if you want to make a sweet treat cinnamon and nutmeg would be good too. Read the rest of this post

So I avoided the ‘what’s for dinner’ question like the plague tonight. This just isn’t the husband’s kind of meal.
