I am super proud of this recipe. It is by far, one of my absolute favorites. The funny thing is it came about because I had too much zucchini and lasagna in the fridge. That’s how I work, I’m creative with what I have on hand. I take it as a challenge and boy do I LOVE a challenge.
But I digress… back to the recipe.
This idea proves a little cheese goes a L-O-N-G way. Read the rest of this post
I LOVE STROMBOLI!
There I said it. It may be the number one reason I gained about 50lbs in college. It’s like a stuffed pizza and you’ll know about my pizza problem by now. ;~)
I thought I’d share how I get to have my Stromboli and eat it too. Let’s face it, a life without pizza and Stromboli is just not worth it!
Anyway, it’s possible to make a healthier weight conscious version that, frankly, I like better then those fat filled college binges I used to splurge on. Read the rest of this post
As requested, my spaghetti squash preparation technique. It’s nothing spectacular but hopefully it will show you how easy it is to prepare. I know I was REALLY hesitant to try it, not knowing what to expect or how hard it would be to cook. Read the rest of this post
I realize not everyone likes veggies straight up as I do. And sometimes even us veggie junkies need some flavor!
This is a simple marinade for asparagus that takes seconds to prepare and adds just a the right hint of sweetness without adding many calories. Read the rest of this post
What’s a ca-ookie you ask? Well, it’s the result my baking adventure this morning.
Let me start at the beginning.
I love experimenting in the kitchen (umm yeah, hence the blog.) Anyway, I had some extra time on my hand this morning and decided to experiment with some light cookie ideas that have been swimming in my head for the last few weeks. Yes, I actually have cookie ideas in this head of mine and normally I have no idea if they are going to work but it doesn’t hurt to try, right? Read the rest of this post
Have I told you I’m a smoothie fanatic? I love them and it’s an easy way to get fruit in the toddler when he’s “not in the mood” for breakfast. I can come up with a million different combinations.
Unlike my other quick smoothie idea this one uses plain non fat yogurt instead of the flavored stuff with the artificial sweeteners. Read the rest of this post
Alright, so I feel like I’m cheating with this idea but as soon as I tasted pomegranate I thought, “YUM! This would go great with watermelon!”
The funny thing is, and you aren’t going to believe this, I happen to have a watermelon in the middle of December. Strange I know, but the mini ones were on sale and we (the husband, the toddler and I) all LOVE watermelon. Read the rest of this post
update: Watch the toddler and I clean a pomegranate
I did it! I bought my first pomegranates. I have to admit I was scared. They look so darn intimidating, don’t they?

I posted this way back when on the weight loss blog but wanted to archive it here.
Originally, I was hesitant to post this idea being the kind of person who makes it a little different each time. If I have fresh ingredients I use them if not, dried works, I don’t really measure anything and I cook it all day on a Saturday or Sunday.
The husband has come to terms with that fact I have published “the family secret”. By far this is his absolute favorite dish of mine. Seriously, he can eat pasta with this sauce every day of his life and be happy. Read the rest of this post
I normally only make these meatballs when I make my homemade sauce but I thought they warranted their own post on the new food blog.
You could make them with your favorite spices and top with gravy over noodles or make them small for use in soups. The key is the meat, oatmeal, egg mixture use that base and make them your own. Read the rest of this post
These little gems are an old favorite of mine. I’ve experimented with this recipe a bunch of times (you’ll notice the many ‘or’s below) and loved each one. They come out like pizza; even the bad batches are good. ;~)
The coolest thing about this recipe is it’s appeal to both the chewy and crunchy cookie people. You’ll know there are only 2 people in the world, right? Those that like chewy cookies and those that like crunchy cookies. I have to admit I’ve always been a chewy girl but these cookies may be converting me. Read the rest of this post
Alright, so I’m a HAM! I’m really liking the video posts thing. They are so much fun to do and I get a break from typing!
This technique is a favorite of mine when I want a quick snack. Read the rest of this post
