Trader Joe’s Whole Grain Pizza Options

You know I have a soft spot for pizza, right? I even talked about my pizza addiction on my weight loss blog. I’m not kidding it’s bad, real bad. ;~)

Being in my, ummmm, 30’s (OMG I’m in my 30’S) I come to the realization that the love of pizza isn’t going away and I’m not going to live the rest of my life denying myself something I truly enjoy. So instead of scarfing down greasy, over cheesed, under nutritious slices at my local parlor (which I still do, just occasionally) I choose to make healthy pizzas at home. It’ truly is one of my favorite meals to make.

I’m still working on my own homemade whole grain dough but in the mean time I thank Trader Joe’s for their whole wheat pizza dough options. Read the rest of this post »»

Persimmons

“Is that a tomato?”

That’s what I asked the produce guy a few weeks ago after discovering a persimmons. I never heard of such a thing! So, I did what I always do. I threw it in the cart, came home and surfed the web for any information I could find.

English Muffin Tomato Pizza

When I was a kid, every day I’d come home from school and make a snack. Nine times out of ten that snack was some form of pizza! Some of Mom’s leftover sauce, a mound of cheese and an English Muffin was all I needed for some after school comfort.

Now after my long days at work, especially if I come home way after dinner time this is my go to lite snack before bed. It only takes but 5 minutes and for some reason they still comfort me after a busy day. Read the rest of this post »»

Quick Strawberry Banana Smoothie

This is the quickest smoothie recipe ever. We make it so much I think the toddler could tell you in his sleep how many strawberries are in it!

He loves smoothie morning. I whip out the hand blender, let him peel the banana, count the strawberries and lick the yogurt container. It’s fast becoming one of our favorite morning rituals.

Thai Inspired Vegetable Soup

Have you ever eaten at a Noodles & Company? One recently opened in my area and I LOVE it! I really like this trend of fast food that’s NOT burgers or fried chicken.

Anyway, they have a Thai Curry Soup that is my absolute favorite! I don’t normally eat Thai. Wait…. that’s a total understatement. I never even knew Thai food existed until about 3 years ago when some new friends took me to a Thai/Indian restaurant. Long story short Thai inspired flavors are new to me and the Thai Curry Soup at Noodles & Company really sparked my interest. It seemed to have such complex flavor and depth. Simple Pumpkin Spice Mini-Loaves

You will not believe how easy these are. I mean SUPER easy. Not only easy but everyone seems to like them! I’ve given them as gifts, brought them to parties and froze them for later use. This is, by far, my favorite “in a pinch” holiday dessert.

Roni’s “They don’t know what’s in there” Pizza Sauce

I have a fussy eater niece. I mean VERY fussy. I made a it my personnel mission to get some vegetables in her. Scouring my refrigerator for every veggie I had, I made a sauce for pizza, her favorite food.

Delicata Steak Fries

I am calling these Steak Fries because of there size but then again they would go nicely along a nice lean cut of beef.

Delicata Squash

I didn’t even know these little gems existed until a few weeks ago. My local grocery store started stocking the fall produce and I was excited for the change. In a huge bin of winter squash, I saw acorn, butternut, spaghetti and a cute little oblong squash about 3 inches in diameter and about 6-7 inches long. It was the Delicata.

Maryland-ish Crab Cakes

The husband is a HUGE crab cake fanatic. It’s about the only thing he orders when we go to a seafood restaurant. Actually, no, I’m lying, it IS the ONLY thing he orders.

This is my take on a Maryland Style Crab Cakes just for the husband. I replaced the yucky mayo and butter with oatmeal and yogurt. It may sound funny but both help the cake stay moist without adding extra fat. Read the rest of this post »»
