Roni’s Homemade Sauce Made with Meat

I posted this way back when on the weight loss blog but wanted to archive it here.

Originally, I was hesitant to post this idea being the kind of person who makes it a little different each time. If I have fresh ingredients I use them if not, dried works, I don’t really measure anything and I cook it all day on a Saturday or Sunday.

The husband has come to terms with that fact I have published “the family secret”. By far this is his absolute favorite dish of mine. Seriously, he can eat pasta with this sauce every day of his life and be happy. Read the rest of this post »»

Turkey Meatballs

I normally only make these meatballs when I make my homemade sauce but I thought they warranted their own post on the new food blog.

You could make them with your favorite spices and top with gravy over noodles or make them small for use in soups. The key is the meat, oatmeal, egg mixture use that base and make them your own. Read the rest of this post »»

Chocolate Cookie Bites

These little gems are an old favorite of mine. I’ve experimented with this recipe a bunch of times (you’ll notice the many ‘or’s below) and loved each one. They come out like pizza; even the bad batches are good. ;~)

The coolest thing about this recipe is it’s appeal to both the chewy and crunchy cookie people. You’ll know there are only 2 people in the world, right? Salmon with Chili Powder and Fruit Salsa

I LOVE salmon! It’s easy to cook and goes well with simple sweet flavors. Normally I make a glaze with honey or molasses but tonight I decided to experiment with a fruit salsa.

Fruit Leather

When I was a kid, I would BEG my mom for fruit rollups. They ranked right up there with Capri Sun for me. Being in a “controlled income” household both were considered ‘special’ treats for our lunch boxes.

What is it about a flat, paper thin “slice” of “fruit”? I loved those sweet sheets of sugary goodness, wrapping them around my index finger and making it last for hours (was I the only one that would eat them this way?) I just wanted them to last longer!

Vegetarian Chili over Spaghetti Squash

This is an oldy for me. One of those meals I make different every time. Sometimes I use canned beans, sometimes dry. Sometimes I sauté the veggies sometimes I roast them. I thought I’d share how I made it this weekend to give you some ideas. It’s one of those recipes you can take and make your own.

The husband is not a chili man so I get tons of leftovers that I freeze for work lunches. I use cheap plastic containers and freeze! Then when I bring to work, I don’t bother putting them in the fridge, by lunch they are almost defrosted. I pop them in the microwave and viola! Lunch! Read the rest of this post »»

Butternut Squash Fries

All right, this is the simplest “recipe” ever. It truly is more of an idea. If you never tried butternut squash, it is a good first recipe to try. It’s easy and gives you an idea of the taste and texture of butternut.

Now I don’t want you to except potato type fries. Butternut has a slightly sweet nutty taste, it’s mild but there. These are good with just salt but if you want to make a sweet treat cinnamon and nutmeg would be good too. Read the rest of this post »»

Mommy and Me Omelets

I LOVE having breakfast with the toddler, it truly is my favorite time of day and I’m not even a morning person!

When the toddler became a toddler, I introduced eggs into his diet. I read up on toddler nutrition on more then a few sites and concluded eggs were an easy way to get in some good stuff including protein, choline, folate, iron and zinc. Read the rest of this post »»

Leftover Turkey and Couscous Stuffed Peppers

All right, this will be my last leftover turkey dish, I promise! It’s just that I have all the turkey and I love coming up with new ways to use it. Geek, I know, I told you that, right? ;~)

So I avoided the ‘what’s for dinner’ question like the plague tonight. This just isn’t the husband’s kind of meal. Couscous, spinach, peppers, these things weren’t even in his vocabulary a few months ago! He finally saw the peppers and said, “oh, stuffed peppers”. Notice the lowercase “oh”.
