Lentil and Eggplant “Burgers”

This is my first entry for the Royal Food Joust! A monthly contest the Leftover Queen hosts on her site where she identifies three ingredients and we see what everyone can come concoct in their kitchen. Then her readers vote for a winner at the end of the month.

I think this is genius! What a fun idea! And you may not know this about me, but I LOVE a challenge.

Spicy Black Beans and Zucchini

I LOVE taco night, it’s one of my all time favorites. However, I never know what to make for a side dish. I mean beans are good but they are a little bland all by themselves.

So with my spice cabinet and a leftover zucchini in hand I whipped this up. You could use it as a side dish, as the taco “meat”, or my favorite, filling for a quesadilla. I’ve made 2 since Friday with the leftovers! Read the rest of this post »»

Quick Sweet & Tangy Salmon

The husband was ecstatic that I made a “normal” meal tonight. Normal meaning a protein, a starch/grain and a vegetable, all separate on a plate. He’s SO adventurous, isn’t he?

When I told him I was making salmon his exact quote was, “Awesome, wait… it’s not salmon stew or anything, is it?”

He CRACKS me up.

Quick Quinoa & Turkey Taco Stew

I don’t know WHAT came over me tonight. I was planning on tacos for dinner but the weather called for a much more comforting dish. Looking in the cupboard and seeing an old package of taco seasoning and a box of quinoa this idea smacked me across the face.

The husband tried it, said it was ok and then proceeded to make something for himself. He just isn’t a “stew man”. He doesn’t like one pot meals which SUCKS because I LOVE them, especially in the cold winter months. It’s ok by me I now have 5 lunches for work! Read the rest of this post »»

Strawberry Orange Salad

I don’t know WHAT came over me this morning but I wanted something tasty, healthy fresh and satisfying to start my Magnificent Monday and this popped into my head. To me nothing is more “fresh” tasting then oranges and strawberries and the cilantro just topped it off nicely. It was a very satisfying fruit salad with a twist!

Fast Salisbury Steak with Noodles

Update:Watch me make this meal from beginning to end in 20 minutes on video!

This is a staple in my house and one of the husband’s absolute favorites. Normally I make it with a can of French Onion Soup thickened a bit for the gravy but Friday I was all out. So I do what I do best, and hit the pantry. Staring me in the face was a can of Healthy Request (low fat) Cream of Mushroom Soup and it was a lucky find! I like this better then my original version.

Sesame Chicken and Broccoli

Inspired by the husband’s favorite Chinese takeout, this has already become a favorite and I just made it up! The husband asked me to put it into ‘regular rotation’ and the toddler even asked for seconds!

I made this with what I had on hand, defrosted chicken and frozen broccoli. You could definitely replace with fresh broccoli, add more veggies, whatever! The secret is in the sauce (or so they say! ;~p) Read the rest of this post »»

Slow Cooked Pinto Chicken with Corn and Quinoa

It was one of those days I didn’t want to worry about dinner. So before work I pulled out the Crock Pot and a pound of chicken breast from the freezer. Genius! Right? Who ever came up with the crock pot idea should be named inventor of the century. It’s a life savior!

So this idea is simple, a can of creamed corn, a can of diced tomatoes, a can of beans and some chicken. Spice it up anyway you like and add the quinoa at the end to soak up the liquid! Read the rest of this post »»
