Zucchini Pizza Bites – Video Post

The toddler is back! Watch us fumble our way through one of my favorite snacks. It’s a great idea when you need a cure for a pizza craving, as I do, OFTEN!

The video is a bit longer then my others, so I had to dump YouTube. Please let me know if you have any problems viewing it.

Sesame Chicken and Broccoli

Inspired by the husband’s favorite Chinese takeout, this has already become a favorite and I just made it up! The husband asked me to put it into ‘regular rotation’ and the toddler even asked for seconds!

I made this with what I had on hand, defrosted chicken and frozen broccoli. You could definitely replace with fresh broccoli, add more veggies, whatever! The secret is in the sauce (or so they say! ;~p) Read the rest of this post »»

Slow Cooked Pinto Chicken with Corn and Quinoa

It was one of those days I didn’t want to worry about dinner. So before work I pulled out the Crock Pot and a pound of chicken breast from the freezer. Genius! Right? Who ever came up with the crock pot idea should be named inventor of the century. It’s a life savior!

So this idea is simple, a can of creamed corn, a can of diced tomatoes, a can of beans and some chicken. Spice it up anyway you like and add the quinoa at the end to soak up the liquid! Read the rest of this post »»

Quinoa

Qui-WHAT?

That’s what I said to myself when I started seeing recipes online using this unfamiliar grain. I never heard of it before this year.

Researching a bit on the internet I discovered it’s a super grain that’s apparently not a grain at all. It’s related to spinach! WHFood.com lists quinoa in their top World’s Healthiest food list because of it’s high in protein, magnesium, iron and it’s low in calories. One half cup cooked has about 110 calories, 4 g of fat and 5 g of fiber. Read the rest of this post »»

Fiesta Chicken Salad

I’m “lucky”.

That’s what most people tell me when I confess I don’t like mayonnaise and I never did. Honestly, for as long as I can remember, the stuff has always grossed me out. It’s white, goopy and greasy. Why would you ever want to ruin a sandwich by slopping that all over the bread? (I’m a mustard girl ALL the way!)

Yes, I realize I just insulted all you mayo lovers out there and I’m sorry but seriously YUCK! Read the rest of this post »»

Sweet Bean and Tomato Salad

I came up with this idea this past summer after picking up some fresh green beans and cherry tomatoes at a local farm stand. The beans are a nice additional and you could make this as a meal or a side easily.

You can use fresh or canned green beans, whatever is easier. But nothing beats fresh! Just look at that great green color! Read the rest of this post »»

Butternut Carrot Chicken Soup/Stew

I came up with this idea to use the leftover butternut pieces when I make fries from a really large squash. It was just an experiment but after the first time made it I know I have a keeper!

I call it a soup/stew because you can decide how thick you want to make it by how much broth/water you add. The recipe I’ll give you below is supper thick, you can add a cup of water to thin it out and make a much more soup like dish. Read the rest of this post »»

Leftover Meatball Wrap

The husband gave me this idea the other day even though he doesn’t realize it. See, he’s a big meatball sub guy. He LOVES them. However, his favorite place for meatball subs changed their recipe a few years back and he hasn’t had one since. I’ve offered to make them for him but he’s stubborn like that. Whatever!

Anyway, he mentioned how upset he still is that this particular restaurant changed their recipe and I immediately thought, “Hmmmm meatball sub. That sounds YUMMY!”

Simple Homemade Hummus

Hummus was one of those late finds for me. I never heard of it until about a year ago when I ordered a vegetarian wrap. One bite and I was hooked!

Now, I am in no way a hummus guru and this recipe does not use all the traditional hummus ingredients but for a quick homemade meal or party snack this works great!

The texture, the hint of sesame flavor and the bite of garlic are perfect and you can spice it up as much as you like. Even the husband liked it! I almost fell off my chair! He’s just not a hummus type of guy. Read the rest of this post »»

Baked Zucchini Fries

Making the tilapia last night reminded me of another breaded favorite of mine, the zucchini fry. Yes, yes I know they aren’t really fries but when you are craving something and want that fry like experience, dipping in ketchup and all, this may satisfy you.

The toddler and I knocked off a batch for lunch today. However, the husband won’t go near them with a ten foot pole. Fine be me, I don’t want to share anyway. :~) Read the rest of this post »»

Crispy Baked Parmesan Crusted Tilapia

I came up with this breading idea awhile back. I have a weird fascination with breading things in other then traditional breadcrumbs. I’d rather use something whole grain or full of fiber like breakfast cereal!

The first time I tried it I was pleasantly surprised. The fish was done perfectly, not too dry and the breading was just crisp enough. Both the husband AND the toddler are HUGE fans. The toddler, of course, dips his in ketchup and I have to admit it’s pretty good that way. Read the rest of this post »»
