How do you do your pasta measurements – such as in your latest video, how much is 2 ounces? Is that 1/4 cup?
I don’t know WHAT came over me today. I was home working on a few projects and I just felt like something new for lunch. Yet I wasn’t in the mood for a salad or a sandwich and I really didn’t want to cook. What’s a girl to do?
Well, I ended up creating the simplest, no cook, multipurpose, filling “Salsa salad”. (Can you tell I had no idea what to call it?)
I was going to call this “You Can Cook Salmon” and just show how quick and easy salmon can be prepared. Then after setting up the camera, I was no where near ready to actually cook the salmon so it became just a complete dinner video.
Yes, I’m naming my own spices now. I can hardly believe it myself.
I came up with this spice idea a few years ago when I had no idea what to make for dinner. To my surprise, the husband loved it and I use it on Salmon and Tilapia all the time, especially when I’m not in the mood to really cook.
This was just a quick idea I had for dessert tonight. The toddler and I had such a great dinner and he ate so well I wanted to make a fun healthy snack.
I used a fat free pudding cup (4 oz) and 1/4 cup unflavored non-fat yogurt. Mix and serve with a spoon or a pint of strawberries for dipping! The toddler and dipped and then he finished it off with a spoon. It was huge hit that I’ll be making again!
The toddler and I came home HUNGRY today. I had no plan, nothing defrosted, and all I wanted to do was EAT. I still wanted something good, healthy and fast, NOT takeout or fast food.

When I posted the Quick Quinoa & Turkey Taco Stew awhile back, I received a few questions about Taco Seasoning. I normally never buy those little packets, you know, the ones with WAY to much salt in them, but when I made the stew I happen to have a packet lying around from an old recipe and it worked great. When I make it again I’ll probably use my own seasoning.
I couldn’t help myself. The toddler and I made pizza a few nights ago and he was the most perfect little helper! So I thought I’d post a little pictorial.
I made the Thin Crust Whole Wheat Pizza Dough, this time half whole wheat and half white whole wheat (no soy) and it was perfect!! (even the husband thought it was perfect!)
The title says it all! This is our first papaya and I think Ryan liked it more then I did! We will buying them again, especially considering 1 cup of papaya has only 55 calories, no fat, 3 g of fiber and almost 150% of your daily Vitamin C! According to NutritionData, it is also is a good source of Potassium, Vitamin A, and Folate.
Not having enough leftover sauce for pasta night, I came up with this idea to make it stretch a bit. Mom taught me well! :~)
The husband was happy, he loves anything with pasta and sauce (and he didn’t even complain about the whole wheat pasta). The toddler even picked out a few bites. Overall, it was a winner but I wished I had a bit more sauce to drizzle on top after baking. Next time I make it, it won’t be out of necessity. :~) Read the rest of this post
WOW WOW WOW I LOVED THIS!
Sorry, I really had to scream that. It WAS that good. After trying the papaya, I wasn’t that impressed. It’s good but not the type of fruit I’d snack on just raw like watermelon or grapes. So after the toddler and finished the video I got the smoothie idea. The papaya texture is just perfect for it!
I am looking for a light version of quiche to try to use up my leftover ham and asparagus from Easter. Any ideas or can you point me in the right direction? There has to be a way to make quiche a healthier dish.
