I am looking for a light version of quiche to try to use up my leftover ham and asparagus from Easter. Any ideas or can you point me in the right direction? There has to be a way to make quiche a healthier dish.
The season of the salad is just beginning!
Every spring I start to crave fun salads and being home for spring break this year, I started the experiments early. First, I went spicy with my Ham & Cheese Spinach Salad with Tangy Mustard Dressing and now I’m enter the sweet zone.
What kind of knife does your son use in your cooking videos? My 4 year old son loves to bake/cook and I want to get him one – is it just a plastic lettuce knife?

A quick video of the toddler and I making lunch today! We were planning on something else (as I say in the video) but had to make due with what we had on hand. The lunch was just for me, the toddler had a sandwich and about 2 whole peppers by the time we were finished. :~)
This is one of those dishes I whipped up in about 15 minutes not knowing what the heck I was doing. Honestly, I was on the phone with a friend chatting and all of sudden I was snapping photos of dinner.
I’ve never bought Mahi Mahi (dolphin fish) before but I’m trying eat more fish. So when I saw some frozen fillets on sale I thought I’d give them a try. I’m glad I did! It was moist and light, not a fishy taste at all.
To help get back on track after a weekend of too much candy I decided to experiment with a big salad for lunch. I love me a big salad, especially one I whip up with what I have on hand.
This one came out exceptionally good, with a nice tangy bite from the spicy mustard that went really well with spinach leaves. It was a little too spicy for the toddler who tried a bite of my cherry tomato. He did that cute toddler thing where they stick their tongue out try to wipe way the heat. It’s so freakin’ cute! I came up with the idea for a St. Patty’s day treat and now I’m obsessed. Having a houseful of family for Easter weekend gave me the perfect opportunity to try the new dessert on others over the age of 2 (the toddler is already a fan). Well, it was a hit! My mom especially liked it, calling it a very refreshing dessert, great for a BBQ or summer party.
Is it possible to be sad and happy at the same time? I’ve had so much fun running this contest. Reading and trying all the wonderful ideas but at the same time, it was so much work. I felt more pressure photographing other people’s ideas then my own and I really don’t like the responsibility of picking a winner. It’s stressful because I want everyone to win. I really do!
That being said, the competition was TIGHT! The husband and toddler made great sacrifice (*wink* *wink*) trying all the fabulous treats and my co-workers reaped the benefits of leftovers. Everyone loved everything, especially me!

Loosely based on a salad from an old Atkins cookbook, I make this every year for an Easter Dinner salad (or something similar – I tend to change it a bit every year). The “pesto” is a simple green dressing made from spinach and dried basil. Its nothing like traditional pesto, I just didn’t know what else to call it. lol
Today I made it as run through before servings it to my whole family on Sunday. I’m super happy with the results. So happy, I ate my whole experiment batch today! Read the rest of this post
I may have the only 2 year old on the planet who requests to make a smoothie video at 7:30 in the morning. I’m not kidding. He came into my bedroom this morning talking about breakfast. We decided on a smoothie and then he told me he was getting the camera! I burst out laughing and then realized what a fabulous idea! He took the pressure of me to come up with a video idea this week!
I love making up my own words. I do it all the time. This one is to describe the jello-yogurt concoction I came up with for St. Patty’s day. It’s green, it’s fun and it’s lite. You can’t beat that!
Boneless cured ham is something I tend to overlook. It never really occurred to me that it could be an easy light dish until I picked one up this weekend and noticed it was only 90 calories for 3oz. The problem is they are normally too large to deal with but I noticed 3-5 pound sizes at my local grocery store. Why can’t I cut one in half for the three of us? It’s prefect!
So that’s what I did and I had fun combining it with some sweet flavors that went perfectly with sweet potatoes and carrots. The dish was a hit all around, toddler and all! Except the husband who doesn’t like sweet potatoes but that’s his loss, they were to die for! Read the rest of this post
