Five months ago I made Baked Ham with Sweet Potatoes and Carrots. Why is that important, you ask? Well, I ate the other half of that 3 pound ham tonight. I’m bringing back the produce picks! It’s been forever and to be honest nothings has caught my eye recently until this bright yellow melon called my name last week.

Hi there, I tried your turkey burgers. I love the flavor. I cooked mine is a le creuset grille pan but they totally stuck to the pan and I generously added olive oil to coat the pan. Any tips on cooking these so so they don’t fall apart?? Thanks
It’s zucchini season, can you tell? I really can’t believe I haven’t posted these here on GreenLiteBites yet. I went digging for my own recipe (yes I do that) and had to look at my old site archives!
Anyway, these are on old favorite of mine. A little ketchup and salt, they take me right back to the good old North Eastern PA bazaars where I grew up on artery clogging potato pancakes, an old favorite of mine. You know you’ve done it before. Got a little busy, forgot to check the garden for a few days and then WOWZA you have a zucchini child on your hands.
Now most people shred those bad boys up and make zucchini bread but I want to try something a little different. I’ve seen recipes for stuffed zucchini before but they were never really stuffed, more sliced in half and topped. I decided to really STUFF one and I couldn’t be happier with the results! Nothing makes me feel better then returning home after a few indulgent days of vacationing than a homemade meal. A quick stop at the farm stand on our way home from Atlantic City equipped me with some large fresh zucchini, vine ripen tomatoes and the biggest Vidala onion I’ve even seen! This is how I put the three together for a simple summer meal.
The long awaited, hope it’s not a disappointment, kettle corn. No toddler in this one, I just needed a break!
However, he likes it, of course! The husband hasn’t tried it yet, yeah, I know, don’t ask.
