I have tried searching the internets for this answer…but no dice. Do you measure food BEFORE or AFTER it is cooked? I tested this with some ground turkey, and it was 4oz pre cooking, and then it shrunk to around 3 after cooking.
A while back Kalyn posted a recipe for Egg muffins and it intrigued me. I mean, basically it’s a single serve frittata you could carry to work! I received an “Ask Roni” email the other day from Deanna requesting shrimp recipes so when I saw them at the grocery store tonight, I thought, humpf, Why not?
So upon returning from the store I whipped up a quick marinade, let the shrimp sit for about 20 minutes while I put the groceries away and then I grilled them on skewers.
This was a complete impromptu lunch. I wasn’t even planning on posting it but it came out really good and the toddler loved it so what the heck!

As I say in the video, this is an old favorite of mine. It’s fast, it’s easy and it’s good! ;~P The toddler had 3 bowls!! (well toddler bowls so that was about a full serving). He kept saying, “more, pwease.”
Tonight I defrosted some turkey tenderloins and planned to grill them but I had no idea what to serve as a side dish. I wanted to make something on the grill (I hate cooking in and out of the house at the same time. If I’m grilling I’m grilling everything).
So I pulled out every veggie in the fridge, made a marinade, pulled out the skewers and viola! Instant fun side dish!
I’m calling this an “idea” because the recipe needs some work. Then again, all my recipes are just ideas (and they probbaly all need some work). Do with them, as you will.
This one was the product of leftover spaghetti squash and some fresh ground beef I was separating and storing from my weekly grocery trip. I just got this vision of a Mexican inspired comfort meal.
I LOVE LOVE LOVE when the husband isn’t home for dinner. Gosh, that sounds horrible, doesn’t it?
I should say I love having a day now and again that I can experiment freely in the kitchen without worrying about pleasing anyone but myself (and the toddler but he’s WAY easier then the husband!)
This idea hit me across the face about 45 minutes before dinner. I opened the fridge and saw peppers. Before I knew it I had a package of sausage in the microwave defrosting!
The husband said it was… you guessed it… “good”. HOWEVER, he asked for seconds AND he said he would like me to make it again! So that’s a good sign. :~P Even the toddler gobbled up a whole skewer! Read the rest of this post
A lot of you know I’m a HUGE McDonald’s Southwest Salad fan. It’s, by far, my favorite fast food salad. The flavors are perfectly combined and, in my opinion, no dressing is necessary. So I set off to make a knock off home version. I wanted to for a while and then a few email requests have nudged me to do it sooner rather then later.
