When I’m stumped on what to make for dinner and I want to grill I gravitate towards kabobs. They’re fun, cook up fast and are very easy to load up with veggies for a light meal!
I’ve been wanting to make homemade lettuce wraps forever and I finally got inspired while putting away my groceries and seeing leftover pineapple from breakfast. Yup, that did it for me. I know, I’m an odd duck.
Back from vacation, in need of a light healthy meal without grocery shopping. I was saved by a couple of old limes and lemons in the fridge, frozen tilapia fillets and my garden! That’s right, my garden! I had some fresh mint leaves and a baseball sized zucchini just waiting for me.
Ahhh you thought you got rid of me didn’t you. Well even though I’m relaxing on the beach with NO COMPUTER! (I had to say it like that because I can hardly believe it myself) I could NOT miss a weekly video. So I give you the guest chef spot I recorded for MizFit. I believe she posted it yesterday (I wouldn’t know, don’t have a computer) so I’m in the clear now. I didn’t want to rain on her parade and display it here first. :~)

My video has no audio. That’s right ladies and gentleman, my computer crashed while rendering the video and unfortunately the audio track was corrupted. Fortunately the actual video was intact. I was slightly upset as I do these videos in “real time” with no prep, no editing and no second takes (not that you couldn’t tell) ;~P

It’s late and I barely have it in me to post this but I had to share! Yesterday I bought a pint of blackberries because the toddler picked them out and the were on sale. I’m not particular fond of blackberries. I mean, they’re ok but not my favorite berry by far.

Inspired by Dani’s Frozen Banana and Cacao Topped Yogurt I wanted to make a fun, fast, lite, low point breakfast this morning. I needed a pick me up and for some reason when I’m feeling a little down and out of sorts, trying something new in the kitchen ALWAYS makes me feel better. Especially when it comes out as yummy as this did!!
Phew! this video almost didn’t happen! It was like everything that could go wrong did go wrong, phone ringing, grumpy toddler, almost didn’t have all the ingredients, battery was dead on the lap top, you name it, it happened. But we prevail with yet another disorganized, disciplining toddler cooking video where somehow I end up with a pretty good meal. This one complete with a mention of time out AND a tricycle accident off camera.
I’ve been wanting to post about our Taco Night forever! It’s my go to, fun, easy dinner and takes no time at all. Plus it (can be) super healthy! You can build a complete hand held meal with lean beef or ground turkey, fresh veggies, whole wheat tortillas and beans. All good stuff!
The toddler is a bit young to take advantage of the build your own taco bar I create so I normally make him a quick quesadilla using the meat and cheese and he gets pepper strips on the side.
OK, let me warn you right off that bat. This “Food Idea” is truly an idea. I just don’t have it in me to post a traditional recipe and look up nutritional information today. I’m just being lazy. :~P
Yesterday I made a comfort food meal, not a traditional stew or pasta based comfort but a fried food comfort meal. For me, there is just something about a big ‘ole plate of fried foods and a puddle of ketchup. It reminds me of those appetizer samplers at Denny’s or the local Diner.
