This is an idea of mine I remade after digging through old food photos for the cookbook. I made it again for the toddlers birthday party and the family loved it, especially my mom and the father-in-law (I had to use the “the” it’s my thing now).
Home from the beach and debating what to make for dinner, I decided on some quick burgers on the grill, a side of baked beans and a salad.
The salad is a mix of what I have left in the fridge upon my return, a bag of wilting spinach and a jar of roasted red peppers. I dressed it with a simple vinaigrette (which I didn’t think it needed as the peppers add a nice sweetness), flaxseeds and a bit of cheese.

I recorded this before I left but it took forever to upload for some stupid reason. So here I am on, on the boardwalk with the laptop chatting with my mom and friend. I just got back from a run and I’m having a blast. I hope you guys enjoy the rest of the week!
I had fruit, I had chicken, Hmmmmmm… this is what I came up with and honestly, I could not be happier! I loved loved loved it!

I have 2 confessions about this idea. Ya ready?
1. It was inspired by a certain someone who recently launched her first cookbook
2. I don’t like cheese on eggs.
Even though the husband isn’t, I’m a HUGE fan of one pan meals. A grain, a protein and tons of veggies in one easy casserole dish, you can’t go wrong.
Is this a casserole? Hmmmm Not sure. I tend to think of cheesy, pasta-ish style dishes as “casseroles” but I think this applies as well. You’ll have to let me know.
I came up with this idea last year when I was craving a sweet treat but didn’t have anything on hand. This kind of snack is the best because I truly believe…
1.) It’s utterly more satisfying when you make something yourself.
2.) Waiting for that snacks makes it all the more satisfying in the end.

As I say I the video, this is my idea to make a healthy party punch. I just think there are so many possibilities to make fun, fruity drinks without the use of sugar and soda.
You could make this more “adult” by adding your favorite rum but my intention was for the little ones.
