Quick French Toast… Video Post

…and I mean quick! Seriously, the video is 15 minutes. It took me 15 minutes to make a warm, healthy home cooked breakfast for the toddler before school. That 15 minutes included a bit of discipline, a pumpkin show off, a mini-commercial, the toddler cracking my eggs and scooping my spices. Quick Garlic Pasta with Chicken & Broccoli

This was a quick idea after having nothing ready for dinner. I was fighting off the urge to order in and I needed to please both the husband and the toddler. Now that’s no easy task! :~)

Somehow I succeeded! The only thing the husband said was it could have used a bit more garlic. I, on the other hand, thought it was the perfect amount. The hint was there without being overpowering and I couldn’t add more anyway, I used all that I had! Read the rest of this post »»

Roasted Veggie Soup with Black Beans and Bulgur

Oh my Word! I LOVE this soup! I found myself Friday with a crap load of veggies and craving for a nice healthy bowl of warmth. And boy was it perfect timing as a cold front just came in!

I made this on Friday during a complete food fest. The toddler was home form school and we spent the better part of the day in the kitchen like two happy clams chatting and munching. It was so much fun!

Simple Asian Inspired Wrap Filling

Equipped with nothing but an aging cucumber, a handful of baby carrots, some cooked chicken and my pantry I whipped this lunch up today. It was simple and tasty I only wish I had a few more ingredients. Maybe some sprouts, sesame seeds or even celery.

Simply Spinach Stuffed Mushrooms

This is another one that’s going to make mom laugh. Besides onion that, as a child, I despised and now can’t live without mushrooms were a close second for most hated veggie. Yet again my mom was right, they are GOOD! especially stuffed! (and in eggs. Yes, I actually had mushrooms twice today.)

Spinach Ricotta Roll

Wanting something “bad” but needing to be “good” I made this Spinach Ricotta Roll yesterday for lunch. Some of you may know my obsession with pizza and pizza like foods (for example stromboli). I basically love anything slapped on some pizza dough, smothered in cheese and dipped in a red tomato sauce. I mean seriously, who doesn’t?? :~)

Healthy Breakfast Hash

In the mood for a big Sunday breakfast and only having one egg can make you do funny funny things. ;~P

I fished out an old frozen bag of hash brown cut potatoes. Did you know they were just potatoes? I didn’t. I always thought frozen “hash browns” would be chock full of stuff I didn’t want to eat but on inspection of a few brands, some of them are just shredded potatoes with a preservative. But I digress. Idea: Mushroom, Pea & Chicken Casserole

I almost didn’t post this because it was one of those quick things I just threw together in shear desperation and even though I jotted down the directions I just thought it wasn’t polished enough to share. Then I mentioned it to my Mother-in-law this weekend. She said it sounded good. So I reconsidered.
