Awhile ago I made Sweet & Spicy Black Bean Dip. Then… my blender broke (wonder why) and I created Really Quick Spicy Bean Dip while declaring my love of the dip that is made with beans. :)
Roni, I bought some frozen cod and attempted to bake it, put Mrs Dash on it..oh my it was horrible…texture was awful and it tasted well tasteless. What can I do with this fish to make it edible? I have another whole bag of it…..help?

A couple of months ago I was lucky enough to travel to Chicago for a Quaker weekend. On of the other guests there was Dave Grotto, author of 101 Foods That Could Save Your Life. First, let me tell you Dave is one awesome guy! He tolerated me and all my questions about food and cooking. I swear I talked his ear off and could have kept him hostage for much longer! He was very gracious and it was a pleasure meeting him.
I LOVE bar style food and these little guys made me feel like I was being “bad” when I was actually being “good”. Loose terms I know but you know that i mean. ;~)

Last year I shared my technique for making turkey (or chicken) stock with the Thanksgiving turkey bones. Well this year I perfected it! So I was ecstatic when the in-laws gave me the Christmas turkey carcass this year! (yes, yes… still a food geek.)
This weeks video I make another low fat cookie idea for the holidays, Chocolate Meringue Cookies. The idea is easy, make a simple meringue, flavor it how you like and leave it in the oven overnight.
This cookie recipe is a variation of my Chocolate Oatmeal Walnut Cookies. They are made exactly the same with just a few tweaks to change up the flavor a bit. I also lowered the sugar to 1/2 cup to cut back on the calories a bit. It worked! They are perfectly sweetened and these guys are now under 50 calories a cookie AND they are made with such good stuff! Read the rest of this post
I wasn’t going to post this idea until I watched the toddler DEVOUR his plate. I couldn’t believe it. My mission was to get more fish in the boy, he generally doesn’t like the texture. So I selected Mahi Mahi as it’s pretty firm and mild. I made fun toddler sized chunks out of them. Like fish sticks but better as I know EXACTLY what’s in them. :) Read the rest of this post
Yesterday I was looking for a quick, tasty breakfast and smoothies always hits the spot for me. Normally I go straight to the frozen fruit but this time I went for something a bit more seasonal. PUMPKIN!
Way back when I did a produce pick for fresh pumpkin but for the most part I stick to the canned pureed stuff. It’s just so darn convenient!
