As I said in my original “crusted” tilapia idea, I’m fascinated with breading things in anything other then traditional breadcrumbs. I just think it’s fun to come up with new ideas for “bread-ings”.
I was on a mission to use the leftover turkey in some ingenious ways this year. Something fun and different but light, especially after the amount of calories I’ve consumed over the last 2 days! Yikes!

The toddler and I make one of my favorite quick holiday desserts. It’s not “healthy”, per say but it’s fast, low fat and EVERYONE loves it! EVEN the husband, and he doesn’t like any of my dessert ideas.
I made this dish for a friend. That’s right, I have sought out others to cook for since the husband is overall… BORING! I kid, but you know what I mean. I know his likes, and dislikes and it’s fun considering someone else’s. I guess you can say I’m food cheating. That’s right I admit it, I food cheat on my husband. At least he knows and we have an open dinner relationship. LOL :~P
Continuing with my thanksgiving prep I present a completely new idea. Well…. at least I think it’s new. :~)
As you may know this is the first year I’m cooking Thanksgiving dinner. I’m feeling the pressure to make things very traditional but I also want to make them my own (with health and nutrition in mind, of course!) The toddler and I cleaned our traditional morning Pomegranate (we do it at least once a week) and the idea smacked me in the face! Why not top some berry flavored oatmeal with theses!

Continuing with my Thanksgiving experiments I present to you the best mashed potatoes EVER! Seriously, I’m not kidding, these were d-e-l-i-c-i-o-u-s! Simple but delicious. EVEN the husband agreed and let me tell you, he’s a mashed potato snob. It’s really the only way he even likes potatoes.
I was in one of those moods. You know, when you want to eat something just to eat. Because you know it’s there. You’re not particularly hungry BUT if grab whatever it is you want, you’ll eat. And eat. and EAT!
Yup, that’s the mood I was in. I had a bag of soy crisps calling my name from the pantry. I just couldn’t get them out of my head. Normally I’d grab the bag, and I’m not kidding, eat the whole thing. I rarely can stop at a serving size. Read the rest of this post
