It’s been awhile since we did a breakfast video so I figured, why not? This morning we made a half a batch of Banana Oatmeal Cups with Chocolate Chips using a few substitutes to compensate for my lack of ingredients.
This isn’t the healthiest idea I’ve come with it but it sure is tasty and super easy to make! Plus NO ONE will every know you slashed some fat and added healthy pumpkin to their unsuspecting festive cupcakes.
I realize these are quite out of season but the toddler and I were just in a mood yesterday. You can surely take the same idea and use a different flavor cake mix and pudding box. Read the rest of this post
I’ve been wanting to experiment with a blueberry muffin for FOREVER! I’m not sure this one is complete quite yet. I may tweak it slightly but I’m satisfied with the results and so was the toddler. He ate two! Even the husband took a bite and said they were good. Although he’d never eat a whole muffin. He’s just not a muffin man. :)
I whipped one of these up the other day with a few ounces of leftover turkey meat and I immediately fell in love. The honey mixed in the burger cooked on the outdoor grill created this fantastic burnt sweetness. The mustard adds a bit of tang and the oatmeal keeps it super moist.
I was a bit hesitant when Chiquita asked me to review their new smoothie mixes. I’m not normally a fan of pre-package smoothie mixes or powders as I’d much rather make my own by adding fresh fruit, yogurt and ice to the blender. Just do a search for smoothie and you’ll see how many ideas I’ve posted and to be honest, I make many more that I never tell you about. :) Read the rest of this post
This recipe was sort of a fluke. I made bulgar thinking I was going to use it for something else. Forgot I made it. Saw it in the fridge…Yada yada yada… Quick Fried Bulgar was born. Sorry, not sure where the Seinfeld reference came from. ;~)

I could eat this kind of meal every day. The leftovers were immediately wrapped and placed in the freezer to stop me from eating more then one. ;~) The video is long as I make them from start to finish but don’t worry you I’ve posted the recipe below.

We spent most of it outside working on the yard, BBQing some chicken, and then took the little guy to a local carnival. Update 2: Homemade Almond Milk the Video!
I made a shake after my workout tonight and I have no problem declaring it my favorite immediately. That is how GOOD it was. However, the toddler did not agree. His exact quote was “it’s yucky.” Wonder where he learned that word from. ;~)
This was a quick lunch I made yesterday based on Mom’s Pasta Fagioli (we pronounce it pasta faz-oo.) Mom never made it as a soup, although I’ve seen it that way plenty of times. I always thought of it as the quick pasta meal when we didn’t have meat or sauce prepared.
Toddler, again, is in rare form and mom, again, is ready to pull her hair out. HOWEVER, I still manage to show you how I whipped up a quick lunch for myself using, some couscous, pomegranate juice and chicken based on a marinade I thought up the other day. Without toddler it would have took me all but 10 minutes. With toddler it turned into a frustrating 20. Either way I whipped up a new tasty idea and it was yummy!
