Update 2: Homemade Almond Milk the Video!
I made a shake after my workout tonight and I have no problem declaring it my favorite immediately. That is how GOOD it was. However, the toddler did not agree. His exact quote was “it’s yucky.” Wonder where he learned that word from. ;~)
This was a quick lunch I made yesterday based on Mom’s Pasta Fagioli (we pronounce it pasta faz-oo.) Mom never made it as a soup, although I’ve seen it that way plenty of times. I always thought of it as the quick pasta meal when we didn’t have meat or sauce prepared.
Toddler, again, is in rare form and mom, again, is ready to pull her hair out. HOWEVER, I still manage to show you how I whipped up a quick lunch for myself using, some couscous, pomegranate juice and chicken based on a marinade I thought up the other day. Without toddler it would have took me all but 10 minutes. With toddler it turned into a frustrating 20. Either way I whipped up a new tasty idea and it was yummy! These muffins were inspired by this wonderful looking bread over on Recipe Girl. I saw the picture, read prunes and said aloud, “GENIUS!” The toddler and I made a couple of batches to get the sweetness right and we were pleased at this mornings results! In fact, we were so smitten there are only 2 muffins of the 6 left. The husband will have nothing to do with them, his loss. This is one of those “let-me-tell-ya-what-I-made-for-dinner-last-night” type of ideas. I happened to go grocery shopping and thin sliced chicken breast was on sale. I was planning on making chicken legs already so I picked up a package to experiment with on the side. I’m not the biggest fan of legs so this was a bonus for me. I’d prefer a breast or thigh if I’m going for a meat on the bone kind of meal.
The toddler sets the tone in the first 2 minutes for the rest of the video. CRAZY! The phone rings, I lose him, literally, and my mind. It truly is a train wreck BUT in the midst of it all I give you my tips for low fat mashed potatoes and a quick gravy. That is IF you can stick with me through the whole video. HA!
Both the toddler and I ate avocado and liked it! Can you believe it?! Here’s a little secret I learned today. If you replace or add a healthy ingredient into a food item your toddler already likes, he’ll eat it no questions asked. That’s what I did with the avocado. I simple put it in the quesadilla as I would chicken or beans (2 things he’s used to in quesadillas) and he happily ate it. GOSH! I love getting good stuff in the boy! :)

I’m obsessed. I love the fact that I can make my own “milk” out of super healthy almonds. I love that the toddler likes it. I love that we use it on morning cereal. And now… I love that it comes with cookies!! :)
Let me explain.
Phew! I almost missed a week! Since posting my very first video (on Dec 1, 2007! YIKES!) I have not missed a video of the week. Don’t believe me? Just check out the list! Sometimes I’m late but I always sneak it in sometime between Sunday and Saturday.
My mom is going to laugh at me yet again. We’ve been having conversation about getting older and losing our minds. She’s famous for buying gifts, forgetting and then finding them stashed all over the house. I laugh now but I’m bound to do it myself. Actually I have no doubt I will. Case in point the horde of baking potatoes I now have in my possession.
