Okay, so I recorded us making a breakfast I already recorded. *sigh* it’s come down to a repeat I guess. Oh well, I wanted to post something but I’ve been so preoccupied with my job, the new house and this stupid cold I can’t shake. I hope to post a tour of the new kitchen next week. We won’t officially be in the house for two more weeks but it’s ours and the end of living out of boxes is now i sight!

I did it! I cooked dinner! I can’t believe it! :) It’s been forever and I’m happy to report my return to the kitchen was (sort of) welcomed by both the husband and the child. Actually the child DEVOURED his plate. The husband, picked, ate a bit, said it was “good”. Then I told him there was sweet potatoes in it and he made a face. You gotta love when the Dad is pickier then the kid. ;)
I NEEDED to cook this morning. It was like therapy. I’m so sorry for my absence. I’ve been dealing with quite a bit of personal stuff. But let’s not talk about that… I want to tell you about my experimental muffins that I turned into “upside down cakes” because they didn’t rise. ;)
It was a dinner-less day today. The whole family was out and about at different times. I went shopping. The husband took the little guy putt putt-ing. Then later the husband golfed while Ryan watched me run a 5k at a local winery. It was a really eventful day! By the time I got home I just wanted something bar-food like with a healthy twist. I was such a good girl. I spent time getting ready for the week. I created a menu and shopping list. I came home from work all ready for my tacos. I open the fridge to pull everything out only to discover I have NO salsa. Aaack! This is odd as I normally keep at least 3 jars of my favorite in stock. The title says it all. I had boneless chicken breasts, a few cans, a splash of seasoning and FINALLY a home cooked meal! Unbelievably the husband and toddler both ate this! Did you know yesterday was Milk Chocolate Day? yeah.. me either. If I did I would have consumed more of the best stuff on earth. :) I actually had no chocolate on hand so I celebrated by making a simple yet super tasty breakfast!
This is one of those “why-didn’t-I-think-of-this-before” ideas. I’m a big fan of light chocolate soy milk. It has a strikingly similar nutritional profile as regular old skim milk only better because it has CHOCOLATE in it. :) Read the rest of this post
