We’re baaaaack. :) Just a short video this week where the child and I share some produce picks from our local farmers market.
Can you tell I have a lot of couscous in the pantry that I’m trying to use up? :)
This was a super late, super quick meal I brought together after a super long day. I realize the idea is not that different then yesterdays One Pot Chicken with Mango and Couscous but I thought I’d share anyway and show you how versatile this type of dish is. Read the rest of this post
When Dad is away Mom will play. :)
The husband wasn’t home for dinner tonight so I got a chance to experiment freely. I loved it. In a weird way I needed it. Cooking is such an outlet for me and I take such satisfaction in coming up with an idea, executing it and creating a meal from scratch.
As I say in the video, we actually recorded this one twice. Of course! Why wouldn’t my computer act up while trying to squish a video session in the morning in my mess of a house while packing and trying to get the toddler a healthy breakfast before his first day of full time “camp.” *sigh* but we salvaged it. :)
If you read my weight loss blog you may know I’ve been feeling a bit out of control lately. My house is in disarray as I prepare to move into an apartment wating for my new house to be built. I recently started a new job at a local University and I threw my back out a couple of days ago. Needless to say I’m pretty stressed and, like many people, food seems to be my go to stress reliever.
This fabulous meal came via Krista S. She was nice enough to share the idea with me and as soon as I saw it I knew I HAD to make it. I’m a HUGE taco fan and I love the idea of ditching the shell and replacing them with crisp lettuce leaves. These are light, super tasty and FULL of fresh veggies. What’s not to love? :)
Preparing for the toddler’s 4th birthday party I decided to make a new marinade and grill up some chicken. The husband pleaded with me to “go safe.” Translation: use tried and true store bought BBQ sauce.
It’s been awhile since we did a breakfast video so I figured, why not? This morning we made a half a batch of Banana Oatmeal Cups with Chocolate Chips using a few substitutes to compensate for my lack of ingredients.
This isn’t the healthiest idea I’ve come with it but it sure is tasty and super easy to make! Plus NO ONE will every know you slashed some fat and added healthy pumpkin to their unsuspecting festive cupcakes.
I realize these are quite out of season but the toddler and I were just in a mood yesterday. You can surely take the same idea and use a different flavor cake mix and pudding box. Read the rest of this post
I’ve been wanting to experiment with a blueberry muffin for FOREVER! I’m not sure this one is complete quite yet. I may tweak it slightly but I’m satisfied with the results and so was the toddler. He ate two! Even the husband took a bite and said they were good. Although he’d never eat a whole muffin. He’s just not a muffin man. :)
I whipped one of these up the other day with a few ounces of leftover turkey meat and I immediately fell in love. The honey mixed in the burger cooked on the outdoor grill created this fantastic burnt sweetness. The mustard adds a bit of tang and the oatmeal keeps it super moist.
I was a bit hesitant when Chiquita asked me to review their new smoothie mixes. I’m not normally a fan of pre-package smoothie mixes or powders as I’d much rather make my own by adding fresh fruit, yogurt and ice to the blender. Just do a search for smoothie and you’ll see how many ideas I’ve posted and to be honest, I make many more that I never tell you about. :) Read the rest of this post
