Quick Avocado Quesadilla

Both the toddler and I ate avocado and liked it! Can you believe it?! Here’s a little secret I learned today. If you replace or add a healthy ingredient into a food item your toddler already likes, he’ll eat it no questions asked. That’s what I did with the avocado. I simple put it in the quesadilla as I would chicken or beans (2 things he’s used to in quesadillas) and he happily ate it. GOSH! I love getting good stuff in the boy! :)

I’m obsessed. I love the fact that I can make my own “milk” out of super healthy almonds. I love that the toddler likes it. I love that we use it on morning cereal. And now… I love that it comes with cookies!! :)

My mom is going to laugh at me yet again. We’ve been having conversation about getting older and losing our minds. She’s famous for buying gifts, forgetting and then finding them stashed all over the house. I laugh now but I’m bound to do it myself. Actually I have no doubt I will. We got cow’s, we got soy and now we almond. Milk that is! Now I’m not going to get all preachy or tell you I’m going dairy free. Although I’ve been thinking about it. There has always been something the creeps me out about drinking milk that’s made made for baby cows. And I never understood the stigma against breast-feeding when we freely drink the “breast milk” of another species. It just seems illogical to me.

Have I told you about the toddlers obsession with Chinese food? He LOVES Low Mein and Chicken with Broccoli. He even attempts to eat with those kid chopsticks they hold together with a rubber band. Makin’ Peppered Pork with Peppers

The toddler (crazy as usual) and I make dinner from start to finish. As I say in the video I really wanted to show you how fast this meal can come together. The video is 22 minutes, but I’m telling ya, if I didn’t have a toddler to entertain, discipline and talk to, it would take me 10. I swear!

Peppered Pork with Peppers

Click here to watch the toddler and I make this dish from start to finish

They liked it… They REALLY liked it! I can’t believe it. The only complaint came from the toddler was when he informed me he did not like “stuff” on his peppers. How can fault him for preferring raw peppers over cooked. So I took them off his plate (after he tried a bite, of course) and replaced them with uncooked green pepper strips. Golden Corn Muffin Topped Turkey Chili

Oh my WORD! I’m SO glad I made this even though I knew the husband and toddler would hate it. Have I mentioned the husband’s unmanly trait of hating chili? Seriously I must be married to the only man in America who doesn’t enjoy a bowl of chili. It’s CHILI! Not only is he not a chili man he’s not corn muffin man either. So when I mentioned this idea I got the old *eye roll*. I made it anyway and had burgers ready for him and the toddler. This way I could enjoy the fun meal.
