I whipped one of these up the other day with a few ounces of leftover turkey meat and I immediately fell in love. The honey mixed in the burger cooked on the outdoor grill created this fantastic burnt sweetness. The mustard adds a bit of tang and the oatmeal keeps it super moist.
I was a bit hesitant when Chiquita asked me to review their new smoothie mixes. I’m not normally a fan of pre-package smoothie mixes or powders as I’d much rather make my own by adding fresh fruit, yogurt and ice to the blender. Just do a search for smoothie and you’ll see how many ideas I’ve posted and to be honest, I make many more that I never tell you about. :) Read the rest of this post
This recipe was sort of a fluke. I made bulgar thinking I was going to use it for something else. Forgot I made it. Saw it in the fridge…Yada yada yada… Quick Fried Bulgar was born. Sorry, not sure where the Seinfeld reference came from. ;~)
Anyway, this is good. I’ve made it twice this week as a quick meal for myself. It’s super tasty and a cinch to prepare. You can’t go wrong. Read the rest of this post
I could eat this kind of meal every day. The leftovers were immediately wrapped and placed in the freezer to stop me from eating more then one. ;~) The video is long as I make them from start to finish but don’t worry you I’ve posted the recipe below.
I’m making history here at GreenLiteBites. My first ever alcoholic beverage! What can I say? I was in the mood. It was a hot day. We spent most of it outside working on the yard, BBQing some chicken, and then took the little guy to a local carnival. Once the toddler was in bed and the husband mentioned he may have a beer, I got a hankering for a summer drink. Read the rest of this post
Update 2: Homemade Almond Milk the Video!
I made a shake after my workout tonight and I have no problem declaring it my favorite immediately. That is how GOOD it was. However, the toddler did not agree. His exact quote was “it’s yucky.” Wonder where he learned that word from. ;~)
This was a quick lunch I made yesterday based on Mom’s Pasta Fagioli (we pronounce it pasta faz-oo.) Mom never made it as a soup, although I’ve seen it that way plenty of times. I always thought of it as the quick pasta meal when we didn’t have meat or sauce prepared.
Toddler, again, is in rare form and mom, again, is ready to pull her hair out. HOWEVER, I still manage to show you how I whipped up a quick lunch for myself using, some couscous, pomegranate juice and chicken based on a marinade I thought up the other day. Without toddler it would have took me all but 10 minutes. With toddler it turned into a frustrating 20. Either way I whipped up a new tasty idea and it was yummy! I’ll make it again, to take pictures and post the ingredients with nutritional information. Read the rest of this post
Hey Mikey, He likes it! or should I say.. THEY like it. It’s been awhile since I made a toddler AND husband approved meal. No complaints. No bargaining. No fighting. No leftovers!
What’s better yet? It’s a cinch to make! Here’s what I did. Read the rest of this post
These muffins were inspired by this wonderful looking bread over on Recipe Girl. I saw the picture, read prunes and said aloud, “GENIUS!” The toddler and I made a couple of batches to get the sweetness right and we were pleased at this mornings results! In fact, we were so smitten there are only 2 muffins of the 6 left. The husband will have nothing to do with them, his loss. They are a hearty breakfast muffin, not too sweet, not too cake-y, just the right texture and very filling. Read the rest of this post
This is one of those “let-me-tell-ya-what-I-made-for-dinner-last-night” type of ideas. I happened to go grocery shopping and thin sliced chicken breast was on sale. I was planning on making chicken legs already so I picked up a package to experiment with on the side. I’m not the biggest fan of legs so this was a bonus for me. I’d prefer a breast or thigh if I’m going for a meat on the bone kind of meal.
The toddler sets the tone in the first 2 minutes for the rest of the video. CRAZY! The phone rings, I lose him, literally, and my mind. It truly is a train wreck BUT in the midst of it all I give you my tips for low fat mashed potatoes and a quick gravy. That is IF you can stick with me through the whole video. HA!
