I had one of those days today. You know the kind that start with a flat tire and end at a fast food restaurant. ugh. By the end of the day I wanted something. Something refreshing. Something tasty. Something I would feel good about eating after having just a wee too much chocolate shake after dinner. :)

I failed. :( My only mission tonight was to get salmon in the boy. I tried so hard to make a kid friendly dish. I really did. I breaded it. I sweetened it a bit. I even made it dip-able in ketchup. If that doesn’t define toddler friendly I don’t know what does.

This is what i missed these last few months. Having a stocked kitchen (semi at least) and just whipping something up. I love trying new things. It’s such a fun challenging outlet for me. I mean I gotta eat.. why not have fun with it. Right?
We did it! We recorded a video in the new kitchen! It was actually the toddler, err, I mean the kid’s idea (I call him the toddler through the whole thing, when will I realize he’s FOUR.)
No new ideas but we taste test Fiber One Apple Cinnamon Muffins. They were very tasty and came our perfectly even with my Roni Modifications. ;~)
It’s been WAAAAY to long! I can’t believe how much I’ve missed not only cooking but posting my ideas here on GreenLiteBites. I can’t promise consistent recipes as we will be unpacking for awhile but I am making an effort to cook and will try out a few new ideas as I have time. LIke this one for a simple side dish.
I wanted broccoli but I’m bored with simply nuking frozen or steaming fresh so I decided to roast it. Boy I’m glad I did! What an awesome way to prepare boring old broccoli! Some of the edges scorch and the florets soften without getting mushy. Seriously, it’s awesome! Read the rest of this post
This recipe isn’t polished as I totally butchered the preparation BUT it was SO tasty I had to share the flavor combination. I’ll make it again with more detail and repost but I thought this may give you some ideas. Of course you can go chicken instead of pricey scallops, they just happen to be on sale this week at the grocery store AND the child LOVES them. :)
Or I guess you can call them salmon patties. But being from Maryland, land of the crab cake, cake just sounds right to me. :)

Okay, so I recorded us making a breakfast I already recorded. *sigh* it’s come down to a repeat I guess. Oh well, I wanted to post something but I’ve been so preoccupied with my job, the new house and this stupid cold I can’t shake. I hope to post a tour of the new kitchen next week. We won’t officially be in the house for two more weeks but it’s ours and the end of living out of boxes is now i sight!
