I was such a good girl. I spent time getting ready for the week. I created a menu and shopping list. I came home from work all ready for my tacos. The title says it all. I had boneless chicken breasts, a few cans, a splash of seasoning and FINALLY a home cooked meal! Unbelievably the husband and toddler both ate this! Did you know yesterday was Milk Chocolate Day? yeah.. me either. If I did I would have consumed more of the best stuff on earth. :) I actually had no chocolate on hand so I celebrated by making a simple yet super tasty breakfast!
This is one of those “why-didn’t-I-think-of-this-before” ideas. I’m a big fan of light chocolate soy milk. It has a strikingly similar nutritional profile as regular old skim milk only better because it has CHOCOLATE in it. :) Read the rest of this post

I’m heading out on vacation today but first I wanted to share a book with you. I was sent Notes on Cooking: A Short Guide to an Essential Craft to review just before moving a few weeks ago. It’s a cute little hard bound book and I when I looked inside I fell in love with the "notes" format. (It’s really just a long bullet list – more like reading a blog then a book)

Long day today. I snuck in a yoga class before coming home from work and let the husband and child fend for themselves. Translation: fast food. :)
For me, I pulled out a chicken breast this morning so it would be defrosted when I got home from work. I had no idea what I was going to do with it but I knew it was better then coming home to nothing.
I felt like I was on an episode of Dinner Impossible tonight. My mission… a healthy family dinner in under an hour using my new kitchen with an electric stove, no counter space, less then half my normal kitchen tools and no help.
