Before you watch this video I have to tell ya a story. Now… I specifically make chicken into chicken nugget style for the toddler. Everyone knows toddlers like breaded chicken, right, RIGHT?!? Mine does so why not make a healthy nugget at home? (Ok, so I like them too but that’s besides the point.) Well all of a sudden when we sat down to eat dinner after this video the toddler declares he doesn’t like them. EVEN THOUGH he’s been eating them for weeks!
I’ve been playing around with this oatmeal idea for a few weeks. I tried quick, instant and rolled (old fashioned) oats and honestly, I liked the rolled best. They only take a few minutes more to prepare and the texture is much better, in my opinion. Plus they seem to fill me up longer.
Oh My WORD! I am SO happy with the way this meal came out. Inspired by a mushroom craving (mom is nodding her head in disbelief as I used to LOATHE mushrooms) I defrosted some boneless pork chops and and went to town. Honesty, I didn’t exactly know what I was going to do. I just started chopping, searing and mashing.
I don’t know what I was thinking. I had a rough day. I probably shouldn’t have recorded but I did anyway. For some reason I knew it would make me feel better. And it did. :)
Now let me tell you about the video so you know what to expect if you want to watch it. It’s long. The toddler shows up about 5 minutes in and he’s, ummmmm, all toddler. It’s about the only way I can describe it. This video is truly a look at how we make dinner most nights, disheveled and unorganized. But FUN! it worked out in the end. My parents were coming and I needed something quick and easy for dinner. I already had a batch of sauce that I made earlier in the week. So I ran to the store and picked up some boneless chicken breasts.
I’m calling this “Naked” Chicken Parm because I’m leaving the chicken bread-less. I often wondered why Chicken Parm HAD to be made with a deep fried breaded piece of chicken. Out of all my ideas this is one of my absolute favorites. It’s so fast and easy. Honestly, I can’t believe I made it up! LOL The toddler loves them and they freeze really well (just pop a frozen one in the microwave for 25 seconds!). Oh and the pancakes have no added sugar, are whole grain, low fat and only one a point a piece!
Returning home after an all morning conference, I was craving a salad. Strange, right? Thankfully I had some leftover chicken breast and I just bought a jar roasted peppers. That was all the inspiration I needed! :)

I don’t know what’s up with me but I’ve been buying avocado. I don’t like guacamole so I thought I’d try to come up with other ways to eat this healthy fruit (produce pick coming soon about it.)
My first experiment , Avocado Lime Dressing, was tasty but this idea takes the cake. Here’s the thought… I don’t like guacamole because of the texture but I like all the flavors that are in it. So why not use them and make something I do like? Read the rest of this post
This recipe could be considered a failure. I guess. I mean… I loved it but I didn’t even try it on the husband because I knew he wouldn’t and the toddler declared the burgers too “oniony”. Either way, I’ll still share as you can, at least, take the idea and make it your own by skipping the onion or even adding something else.
I will not dare say I know the difference between a bread, a cake, a muffin, or even a pie for that matter. All I do know is sometimes I crave a “baked good”. At least I did today.
When I was little, my grandmother would make this yummy banana bread/cake (whatever) in a bundt pan with chocolate chips. It was one of my favorites. Read the rest of this post
This weeks video is a little all over the place. For those that watch every week the tree in the belly has turned into a “bug”… I think! You’ll have to watch and translate.
I knew I would have NO time to make dinner tonight so I grabbed a few cans and turned to my trusted Crock Pot. I have to admit, this is my new favorite veggie chili idea. I just threw everything in the pot and walked away. Next time I’ll have a few more veggies to throw in, like a zucchini, yellow squash, more peppers. Whatever you want to add would work with this base.
