Book Review: Notes on Cooking!

I’m heading out on vacation today but first I wanted to share a book with you. I was sent Notes on Cooking: A Short Guide to an Essential Craft to review just before moving a few weeks ago. It’s a cute little hard bound book and I when I looked inside I fell in love with the "notes" format. (It’s really just a long bullet list – more like reading a blog then a book)

I generally don’t have time to read long books. My schedule is just too crazy which is why I normally stick with short stories or books with lots of pictures. :) Read the rest of this post »»

Curried Chicken with Peas

Long day today. I snuck in a yoga class before coming home from work and let the husband and child fend for themselves. Translation: fast food. :)

For me, I pulled out a chicken breast this morning so it would be defrosted when I got home from work. I had no idea what I was going to do with it but I knew it was better then coming home to nothing.

Garden Turkey Steaks with a Simple Gravy

I felt like I was on an episode of Dinner Impossible tonight. My mission… a healthy family dinner in under an hour using my new kitchen with an electric stove, no counter space, less then half my normal kitchen tools and no help.

The idea was to make a light meal. What I call a summer “steak” using fresh veggies and extra lean ground turkey. Read the rest of this post »»

Super Quick Orange Chicken with Couscous

Can you tell I have a lot of couscous in the pantry that I’m trying to use up? :)

This was a super late, super quick meal I brought together after a super long day. I realize the idea is not that different then yesterdays One Pot Chicken with Mango and Couscous but I thought I’d share anyway and show you how versatile this type of dish is. Read the rest of this post »»

One Pot Chicken with Mango and Couscous

When Dad is away Mom will play. :)

The husband wasn’t home for dinner tonight so I got a chance to experiment freely. I loved it. In a weird way I needed it. Cooking is such an outlet for me and I take such satisfaction in coming up with an idea, executing it and creating a meal from scratch.

Produce Picks: Ulgi Fruit and Santa Claus (the Melon)

As I say in the video, we actually recorded this one twice. Of course! Why wouldn’t my computer act up while trying to squish a video session in the morning in my mess of a house while packing and trying to get the toddler a healthy breakfast before his first day of full time “camp.” *sigh* but we salvaged it. :)

Back to Basics Quinoa Stuffed Zucchini

If you read my weight loss blog you may know I’ve been feeling a bit out of control lately. My house is in disarray as I prepare to move into an apartment wating for my new house to be built. I recently started a new job at a local University and I threw my back out a couple of days ago. Needless to say I’m pretty stressed and, like many people, food seems to be my go to stress reliever.

Taco Lettuce Wraps

This fabulous meal came via Krista S. She was nice enough to share the idea with me and as soon as I saw it I knew I HAD to make it. I’m a HUGE taco fan and I love the idea of ditching the shell and replacing them with crisp lettuce leaves. These are light, super tasty and FULL of fresh veggies. What’s not to love? :)

Asian Apricot Marinade AKA The Delicious Chicken

Preparing for the toddler’s 4th birthday party I decided to make a new marinade and grill up some chicken. The husband pleaded with me to “go safe.” Translation: use tried and true store bought BBQ sauce.

BORING

Quick & Light Pumpkin Spice Cupcakes with Cheesecake Frosting

This isn’t the healthiest idea I’ve come with it but it sure is tasty and super easy to make! Plus NO ONE will every know you slashed some fat and added healthy pumpkin to their unsuspecting festive cupcakes.

I realize these are quite out of season but the toddler and I were just in a mood yesterday. You can surely take the same idea and use a different flavor cake mix and pudding box. Read the rest of this post »»
