I had another one of those morning where nothing sounded good. I didn’t feel like eggs, I’m sick of cereal and I just didn’t want to make muffins. I was just craving something different. Twenty minutes later, Apple Cinnamon Breakfast Quinoa was born! What can I say? I LOVE the challenge of inventing! :)
I firmly believe the more flavor and spice a meal has the more satisfying it is. My favorite part of the pantry is the spice cabinet. I may not have the fanciest most expensive spices money can buy but the 99 cent version sure do the job.

I TOTALLY forgot about this idea! I made it up weeks ago and didn’t think about it again until last night when I was craving something sweet. Using an egg roll wrapper (I was planning on won ton but they were all out) a handful of chocolate chips and some healthy peanut or almond butter you get crispy, chewy, chocolaty treat in minutes!
Yesterday I challenged myself to come one with a tasty lunch to use some leftover shrimp I had from our seafood night (I’m really trying to do a fish night at least once a week.) I bought some small shrimps on sale and boiled them for shrimp cocktail. The toddler ACTUALLY likes shrimp this so it’s an easy way to get some protein in the boy. Especially as getting fish in him is getting harder and harder.
Do you know what a star fruit is? Maybe you heard of a Carambola? I haven’t but I have seen these funning looking fruit in the stores. Normally near the mango, pineapple and weird Asian pears. :) Here’s what one looks like cut…
This is one of those “here’s what I whipped together” type of ideas. Here’s the situation… It’s lunch time, I have a 20oz package of ground turkey defrosted to make a double batch of Southwestern Turkey Burgers (I like keeping them in the freezer) which will leave me 4 oz leftover. (Why they only package ground turkey in 20oz packages is BEYOND me but I’ve gotten used to it.)
Yesterday morning I just wanted something different for breakfast. It was just one of those days nothing sounded good. So I hopped online, did a quick search and found this. I didn’t even read the post, I just saw the picture and immediately thought Spinach Bacon Egg Wrap! (I stopped reading recipes when I realized it was impossible for me to follow one. lol)
WAAAAY back when, I posted Apple Pie Oatmeal. The idea pre-dates GreenLiteBites as it was originally posted on Roni’s Weigh (which at the time was Weight Watchen–Holy crap I’ve been blogging for awhile!) Anyway, I had a craving for the original Apple Pie Oatmeal but since I no longer buy the flavored packets of oatmeal I had to recreate it using rolled oats.
I think this version is actually better. It has less ingredients (compared to the packet), it’s cheaper (you can now use the oatmeal in bulk,) it’s not as sweet and I just love being independent of products. :)

I’m sick. I hate being sick. Just about the only thing that makes me feel better is soup. Today I whipped this up with a few aging peppers, wilting cherry tomatoes and my last onion. I’m in desperate need of a grocery trip after my weekend away but I was too miserable to leave the house. Thankfully my pantry was able to serve me well, again. :) Read the rest of this post
This weeks video looks like we did it on the fly when in actuality I’ve been trying different variations of this idea for a few weeks. It’s simple really, puree some spinach with a bit of water and use it to die scrambled eggs. It’s simple, it’s easy and it’s fun! :)
"Tips" as in pieces. I just thought it sounded like a cool name and frankly, I didn’t know what to call this quick creation. I made it up on a whim and to my surprise it’s become one of the husbands favorite new meals. Even the toddler ate the chicken without complaint (well… with a little coaxing but I’m blaming that on his age, not the dish.) :)
