I’ve made 3 variations of this idea so far but I will craft a specific recipe with true nutritional information purely for the fact that it’s fast becoming a husband favorite. Now that’s pretty rare!
Sometimes I just get craving and last night was one of those times. After recording a video for Roni’s Weigh I took my hand at an idea I’ve had for some time. Could I use won ton wrappers as crusts for mini apple pies?
Well, I’m happy to say, the answer is YES!

I FINALLY got a minute to tell you about this soup. I made it on Saturday and I’m in love! I used my giant batch of turkey stock I made from the Thanksgiving bird and the last of the leftover turkey meat. Of course you can use chicken broth and leftover chicken instead. Whatever works!

Sorry for my lack of posts. The holidays hit along with a bad case of bronchitis. I’m still battling cough and fever. :(

This is how I made them. He likes them but doesn’t LOVE them. Me? I think they are great! and so does the child. They are much closer to a traditional meatball. The recipe here uses all dry ingredients for convenience sake. However, I think the meatballs would really pop with some fresh herbs, fresh minced onion and fresh garlic.
I’m not kidding.. walked in the door from work, put on the camera(s) and 10 minutes later I was sitting down with the family for dinner!
The video is a bit funky as I put my new camera to the test. I’m thinking about switching so you’ll have to let me know what you think.
My mission…. to come up with a new fun way to serve asparagus on Thanksgiving. That’s right people, I’m cooking Thanksgiving dinner.. again. I think it’s mine for good or at least until the kid grows up and invites his dear old mom over for the holidays. :)
Anyway, last year I perfected the mashed potatoes and invented my crock pot sweet potatoes. Which my mom really fell in love with and they are now part of our Thanksgiving dinner tradition. The title really says it all so I’m not going to set this up much. I will say everyone ate dinner without complaint EXCEPT for the husband when it came to the couscous, of course. Toddler and I both enjoyed it very much. Actually it was my favorite part of the meal. Especially with a bite of chicken on the fork. :)
I LOVE scallops. Always have. Only problem is they are only ever served one of two ways… seared or in a scampi. At least that’s how I always see them.
Small bay scallops are great because they cook up literally in 3 minutes and absorb a lot of flavor very quickly. Oh! and the boy likes them. Always a bonus in my book. :)
When I was a kid one of my favorite things to do with Mom was make egg creams. I have fond memories of stirring the concoction with a large tablespoon and drinking the frothy result. Mustache and all. :)
I also remember asking her why in the world they were called egg creams when we didn’t use any eggs or cream to make them. I’m not quite sure she knew and after a little research I’m not sure anyone really does.
I’m a little late with this. partly because I was in a state of shock to be on the front page of CNN.com and partly because it didn’t occur to me until know to say hello.
