Ask Roni: Other Weight Watchers Friendly Recipe Sites

I was wondering if you knew of any other good web sites besides yours that includes WWP with their recipes. I never really stray from your site, but I decided that I want to loose weight but I can’t afford to join Weight Watchers so I thought I would just go by a 28 point value system each day and see how that goes for me.

Hi Kelly!

You totally need to stray! There are tons of resources out there! Here are just a few I know of. . . Read the rest of this post »»

Dark Chocolate Banana Dipping Sauce

I CAN NOT WAIT UNTIL STRAWBERRY SEASON!

Sorry, I’m a little excited. I whipped up this chocolate dipping sauce as an experiment for my waffles this morning and it came out better then I expected. It will be awesome as a dip for strawberries. Here’s the story. . .

Pork and Bran Flake Schnitzel

I finally got a chance to cook! The end of my week was a bit insane and we ate out more then I’d like to admit. Let’s just say I pulled these pork chops out for Wednesdays dinner. It’s Saturday.

Anyway, if you don’t know, Schnitzel is normally a veal cutlet pounded thin, breaded, fried in butter and served with lemon. I just took the idea and used pork for the veal, bran flakes for the breadcrumbs, and non-stick cooking spray for the butter. I also made a quick gravy and added a hint of lemon just to give the traditional recipe a nod. Read the rest of this post »»

Cinnamon Spiced Strawberry Chocolate Smoothie

This is the results of that pesky little “I just want something” voice in the back of my head. It’s simple but oh so tasty!

I love the combo of cinnamon, chocolate and strawberries. I also love that the soy milk provides all the sweetness. It makes it super simple!

Stuffed Cabbage AKA Pigs in a Blanket

Tonight I took my first stab at Pigs in a Blanket (that’s what we call stuffed cabbage up in North East Pennsylvania.) I’ve been wanting to make them since mom made a batch of hers a few months back. They are a perfect meal idea to jam pack full of healthy veggies.

Mini Western Omelet Muffins

First I made Mini Egg Muffins. Then Mini Spinach Egg Muffins. Now I present Mini Western Omelet Muffins! :)

Western omelets have always been my favorite. The combination of onion, peppers and ham with egg dipped in ketchup is a little taste of breakfast heaven for this breakfast lover.

The Husband’s New Favorite Chicken with Veggie Couscous

Remember waaay back when I said. . .

“Apparently all I had to do was shove a beer can up a chicken’s a$$ to get him excited about dinner!”

I may have been wrong. I’m not sure if it was the can of beer or the fact that I was serving him meat on a bone.

Pumpkin Yogurt

It’s Christmas Eve! YAY!

I actually made this up yesterday, snapped the most awesome shots of the little guy eating it and then accidently deleted them off the camera. :(

So I decided to make it again this morning. It came out even better when I discovered dipping graham crackers in it was a little taste of heaven. Like dessert chips-n-dip. I’m seriously thinking of putting it like that for a New Years party we’re having. Read the rest of this post »»

Chocolate Banana and Blueberry Breakfast Bowl – Cereal Optional :)

I’ve been on a frozen wild blueberry kick after discovering my local Costco’s sells them in bulk. Most mornings the little guy and I pour our cereal, load it up with frozen blueberries and enjoy breakfast together. It’s becoming a nice morning habit.

We mix it up now and then. Types of cereal, adding banana, alternating between milks, sometimes skim, sometimes almond and sometimes my new favorite, light chocolate soy. Read the rest of this post »»

Spinach and Fennel Salad with Garlic Balsamic Vinaigrette and Dried Berries

OK, OK, OK so I ate WAY too much at the office holiday party today. Not too mention I had fast food for lunch. So I decided it was a lite salad for dinner day. There were leftovers for the toddler. The husband went out for… wait for it… wait for it… Fast food (he was Christmas shopping.) That left me to fend for myself.

I love it when this happens! Read the rest of this post »»

PearlOnionandMushroom

Pearl Onion and Mushroom Skillet Idea

I’ve made 3 variations of this idea so far but I will craft a specific recipe with true nutritional information purely for the fact that it’s fast becoming a husband favorite. Now that’s pretty rare!
