Yes, you read the correctly. KALE CHIPS and guess what. The little guy LIKED them. He didn’t think he would. He gave me some crap (off camera) about not wanting to try them because they are green. Sorry, is that name too crazy? I just get so psyched when I get good stuff in my boys! Especially when they eat it willingly!

Now let me warn you. Normally I write up and post a recipe immediately after I make it but this one has been sitting in the old noggin for a few days. Chocolate Cherry Almond Vita-Loaf

This was a another snow day experiment. I like baking from scratch but sometimes using a mix is a life saver. It takes all the guess work out of it and I can simply have fun. I like having fun. Especially in the kitchen. :)

Anyway I used Vitalicious’s Deep Chocolate Vita Muffin Mix. I’m a fan of these mixes. Their ingredient lists aren’t perfect but they are one of the few whole wheat mixes I can find.

Produce Pick: Kale

Confession time. I have NEVER bought a bunch of Kale ever. Never!

I have no memories of mom buying it. I never ate it growing up. I rarely see it on a restaurant menu. Yet I read about it all the time. The health benefits are countless. According to NutritionData.com Kale is a good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese. 1 cup chopped (67g) has only 33 calories, 1 g of fiber and 2 g of protein. We are in the middle of a blizzard here in Baltimore. So what do I do?

THIS is what happens when I don’t have to make the husband or the child happy with dinner. Here’s the story… We have a TON of leftovers from a get together we had this weekend but nothing I really want to eat, again (fried chicken) so I decided to simply cook for me and let the boys fend for themselves.

Mexican Pizza

I took a vacation day from work today after a fabulous trip to Boston. I don’t know about you but I always need a vacation from my vacations. :)

Anyway, I wanted to make a quick brunch and I happened to have a can of refried beans opened from some quesadillas I made on Thursday with the little guy. You guys know me and my pizza addiction so it shouldn’t be that much so this idea shouldn’t be that much of a surprise.
