Leftover Turkey (or Chicken) Enchilada Filling

So I’ll admit it, I’m sick of turkey leftovers at least in the traditional sense of making a plate with all the fixins. Having cooked poultry in the fridge on the other hand, totally inspiring.

Tonight I used those leftovers to make something completely different, enchiladas! All it took was some pantry items, a couple of veggies, taco shells and a bit cheese from my Thanksgiving spread. Read the rest of this post »»

Thanksgiving Harvest Salad Idea

My experimental salad was a hit! I had some fresh greens from the farm and decided to get creative on Thanksgiving. I figured the worse thing that could happen was a full of bowl of salad at the end of the meal.

Turnips

Turnips are NOT Disgusting…

…even though the Little Guy immediately thought so. I can not believe how fast he’s being influenced to think vegetables = gross. I have no doubt that two years ago he would have not reacted the same way. Regardless, I shall not give up. As you’ll see in the video, he’s willing to try and we still have fun! Colorful Roasted Potatoes with Carrots and Rosemary (Plus a Tasteful Selections Giveaway!)

Tasteful Selections contacted me and asked if I’d be willing to try their small colorful potatoes. “Of course!” I said. I am NOT one to turn down potatoes, ESPECIALLY while pregnant. ;) (Have totally been craving potatoes)

Raspberry Almond Oatmeal

There are like three different ways I can start this post that I don’t know where to begin! Let me start with what inspired the oatmeal for breakfast this morning. Braised Cabbage

A new way to eat cabbage! I’m ecstatic!

Did I just say that? I did. What can I say? I love cabbage! I never bought a head unless I was making stuffed cabbage which was very rare. Then I started getting small heads in my farm share and I made my first cabbage salad. I fell in LOVE and make it all the time. Sweetener Comparisons: Honey, Agave, Molasses, Sugar, Maple Syrup

I have heard a lot about agave nectar, and have a friend who makes delicious breakfast bars with it as a sweetener. I believe it is used to replace honey, and has a lower glycemic index. I was wondering whether you have used this sweetener, and also if you could explain your use of honey along with molasses: what does one offer that the other does not?

Spinach Arugula Pesto with Walnuts

I’m a total pesto newbie. Don’t get me wrong, I LOVE pesto, but I just never make it. I always thought it had to be made a certain way, with pine nuts, tons of oil and fresh basil. Well, pine nuts are outrageously expensive, I don’t like to go overboard on oil, and fresh basil is not something I always have on hand especially this time of year. However, I DO have an over abundance of greens from my farm share this week.

Molasses Cookie Balls

I made these on a complete whim this morning. A few days ago I caught this Molasses Cookie recipe post on Black Book Kitchen Diaries and the seed was planted. Molasses cookies! I couldn’t get them out of my head. I thought about them for days.
