Give me 5 ingredient (6 if you count a side dish of frozen broccoli) and I’ll give you a family pleasing meal and enough leftovers for a few lunches. :) I love it!
I used a can of “healthy request” cream of mushroom soup to save some time and dressed it up with some fresh mushroom and worcestershire sauce. I love that combo. It makes a great gravy like base that goes wonderfully over noodles. Even the husband thinks so and let me tell you, he’s a gravy over noodles kind of guy. OK, confession time. I have never bought barley before. I never even gave it a second look. I mean what do you do with it? Side dish? Stuffing? I’m sure it would work but the only way I’ve ever eaten it was in beef barley soup. Even then I wasn’t that impressed. But I figured I’d give it a try. I’m tired of brown rice. It’s time to mix it up a bit.

Last weekend the Little Guy and I had a BLAST experimenting with some Vitalicious mixes. The idea. . . marble together the brownie mix with the banana nut muffin mix. The result… DELICIOUS! Scallops were on sale! Scallops were on sale! I love when scallops are on sale! :) I rarely buy them but they are by far, my favorite seafood. There just so delicate, sweet and easy to prepare. Grilled, seared, baked, scampi-ed, kabob-ed, you name it they cook up fast and absorb flavors easily.
Last night I decided to bake my bay scallops. It was an easy, fast way to cook them up evenly and perfectly. I paired them with simple brown rice and peas that were flavored with a bit of lemon, thyme and rosemary. Read the rest of this post

Little guy, friends and I make an old favorite of ours, 100% Whole Wheat Banana Muffins. As I say in the video, this is one of the first recipes I posted here on GreenLiteBites. It’s a completely homemade, whole grain, sugarless, muffin that’s high in fiber and low fat. Plus it’s super easy and pretty fast. Even with juggling a 4 year old, batman and power rangers I get the batter completed in 20 minutes while recording. Not too bad. :) Read the rest of this post
Sometimes things don’t go according to plan but they still work out, like this idea for a Chicken, Kale and Sweet Pepper Wrap. Originally I was thinking I’d use the kale leaves for the wrap itself but once I pulled out the ingredients I realized it just wasn’t going to work. Thankfully I had some tortillas on hand so I decided to put the kale IN the wrap. It worked out great! I loved the combo of salty bacon, sweet peppers and slightly bitter kale. Here’s the story… We picked up a cooked rotisserie chicken and I wanted a quick side. This is what I came up with mostly because I didn’t want to make a separate veggie and starch. This is really a recipe reboot. Almost 2 years ago I whipped up my first ever batch of Quick Whole Grain Banana Pancakes. Since then we’ve made them a billion times. No. Really. I’m not exaggerating at all! OK, maybe I am. A little. But seriously.. this is one of our morning go to’s and it’s quick enough to do on a workday. The leftovers (if there are any) are easily thrown in the freezer and popped in the microwave for an even quicker breakfast when you are on the run.

I have been tasked with bringing a crockpot mini-meal to my friends bridal shower next week. One problem… I never made a crockpot mini-meal! And I can’t just follow a standard recipe. You should know me by now. ;)
So I decided to use my unsuspecting extended family over Easter weekend as guinea pigs and I whipped up an idea I had for a few weeks. Thankfully Mom was here to make some suggestions. We got a little festive today and revisited an old favorite of ours, Yelatin. It’s what we call the combination of jell-o (gelatin) and yogurt. We first experimented with it for St. Patricks day and then had fun mixing colors in a fun mold. This year we tried some new egg molds Grandma gave us with much success!
