I got an influx of Kiwis from our Crazy Fruit Day and had no idea what to do with them. Sure I could eat them straight up or make a fruit salad but that’s boring. I wanted to have some fun!

This week I decided to record a bit as I prepared for my first party in the new house. I made the husbands favorite, Stuffed Shells. As I say in the video, I’m not going to give nutritional information or specifics but I shared my "lighter" technique as well as my tips for entertaining slightly lighter.
Let me first say this idea only hit me because of our recent influx of fruit. :) I had a slow morning as the little guy had a doctors appointment. So I got to chill a bit instead of rushing in to beat traffic.
So I took the idea behind my quick banana pancakes and gave apple a try. I was pleasantly surprised how they came out. Really Moist and fluffy! But honestly, I wish they tasted a bit more "apple-y" (is that a word?) Next time I may add another apple and double the cinnamon but overall this should give you a good starting point for your own experiments. Read the rest of this post
This weeks video is a bit all over the place. During our crazy fruit adventure we end up trying an Asian Pear and Kiwi Berries. Both VERY good!
I don’t know WHAT came over me. I had these thin cut pork chops and I just went to town. I swear cooking is becoming a creative outlet for me more and more. I just love it!
So this idea was totally inspired by fall and my recent trip to a local farm where I bought a bunch of apples and a giant butternut squash. I love winter squash and apple together. I blended the two in Winter Squash Soup with Roasted Seeds but this time I cubed them and added a bit of bulgur. What a great stuffing for pork or even just a side dish! Read the rest of this post

I had one of those days today. You know the kind that start with a flat tire and end at a fast food restaurant. ugh. By the end of the day I wanted something. Something refreshing. Something tasty. Something I would feel good about eating after having just a wee too much chocolate shake after dinner. :)

I failed. :( My only mission tonight was to get salmon in the boy. I tried so hard to make a kid friendly dish. I really did. I breaded it. I sweetened it a bit. I even made it dip-able in ketchup. If that doesn’t define toddler friendly I don’t know what does.

This is what i missed these last few months. Having a stocked kitchen (semi at least) and just whipping something up. I love trying new things. It’s such a fun challenging outlet for me. I mean I gotta eat.. why not have fun with it. Right?
We did it! We recorded a video in the new kitchen! It was actually the toddler, err, I mean the kid’s idea (I call him the toddler through the whole thing, when will I realize he’s FOUR.)
No new ideas but we taste test Fiber One Apple Cinnamon Muffins. They were very tasty and came our perfectly even with my Roni Modifications. ;~)
It’s been WAAAAY to long! I can’t believe how much I’ve missed not only cooking but posting my ideas here on GreenLiteBites. I can’t promise consistent recipes as we will be unpacking for awhile but I am making an effort to cook and will try out a few new ideas as I have time. LIke this one for a simple side dish.
I wanted broccoli but I’m bored with simply nuking frozen or steaming fresh so I decided to roast it. Boy I’m glad I did! What an awesome way to prepare boring old broccoli! Some of the edges scorch and the florets soften without getting mushy. Seriously, it’s awesome! Read the rest of this post
