This morning I needed a little kitchen therapy. I’ll probably explain why over on my weight loss blog later but I don’t feel like hashing it all out right now. Let’s just say I needed some time with myself doing what I love, experimenting in the kitchen. So that is what I did. :)
This is it. My last official post as an Athenos Spokesblogger. It’s sort of sad but not really because I get to give stuff away to you! That always makes me happy! :)

Well, I did it. I really did it! I have to admit part of me didn’t think it was possible. When ATHENOS asked if I’d be willing be a Spokesblogger for their Make a Change for the Feta campaign. It included creating 18 Feta Cheese ideas for the month of July and I was a little nervous. With a family, a full time job and a vacation planned would it even be possible?
Over and over and over again you guys kept suggesting feta with eggs and I just didn’t see it. If you’ve been reading for awhile you know I absolutely hate cheese on eggs. I’m not sure why. I love eggs. I LOVE cheese but put them together and…. ick, at least in my opinion.
I decided to face my fears this morning and take your suggestion. Worst case scenario…. I don’t like it. It wouldn’t be the first time I cooked something that just didn’t work out. Read the rest of this post

Tuesday night is rough for us. Little Guys has karate, the husband as Gaelic Football practice and I’m on dinner duty as usual. (note: I’m never NOT on dinner duty. That’s what happens when you marry a non-cook, non-foodie.)
I’ve never eaten coleslaw in my life. Is that weird? Isn’t that was a cabbage salad is?
Anyway, I was armed with the cutest little heads of cabbage from the farm and, yup you guessed it, feta. :) So i decided to combine them together and I’m so glad I did! This was fabulous! I almost ate the whole bowl in one sitting. I had to force myself to save it for dinner.
You may or may not have noticed but we’ve been severely slacking in the video department. Life has just been too crazy. Once I’m full time blogging I’ll get my weekly groove back.
I made this last week as a complete experiment. I thought it came out alright but not great. Until… I ate it cold! Then I feel in love! The sweet couscous with the bite of cilantro, fresh summer squash and creamy feta? YUM!
The husband wasn’t game but I had a friend come over and try it. She thought it was tasty and loved the cilantro. I think I may need to start cooking for others. ;) Read the rest of this post
Have I ever confessed my LOVE of cheese and crackers to you? Give me a hunk of cheese (cheddar, jack, muenster, whatever,) a knife, some crackers and I’m in heaven. I like it so much I stopped buying blocks of cheese. I’m serious! I can’t be trusted with them in the house. I can easily put down the whole thing! I have no cheese shut off valve. I really don’t.
OK, don’t stone me for this but I HATE tuna salad. I never order it. Ever. I think it’s gross and totally disgusting. Not because of the tuna but because of the mayonnaise. I’ve never been a fan of mayo, even when I was a kid. Once I saw someone make it in a demonstration (blending oil and egg together) and it sealed the deal for me forever. No mayo thank you very much, I’ll stick with mustard.
But I really do like tuna. As I was rummaging through my fridge/pantry wondering what I was going to make last night, I came across a can. I also just happened to get my new shipment of feta from Athenos. A light bulb went off! Read the rest of this post
