Yet Another Chili Idea

In the fall I could make a chili every weekend but unfortunately the husband isn’t a fan. I know, crazy… right? I mean WHO doesn’t like CHILI?!? Especially on a cool fall day! This drives me nuts as chili is the ultimate comfort food for me. I don’t care if you make it with beef, turkey, or only beans. Scoop it over rice, bulgur, pasta or even couscous, doesn’t matter. Top it with some cheese and it’s love in a bowl in my opinion.

Pumpkin Oatmeal Cups

It’s fall! Can’t you tell by my recent posts? Breads, soups, butternut squash, oatmeal, sweet potatoes and PUMPKIN have been dominating my thoughts and this morning was no different. I woke up with a craving for pumpkin and I decided to make a variation of my Banana Oatmeal Cups specifically for the season.

Mini Banana Bread Loaves

I made this bread on a total whim this morning. I was in the midst of cleaning and organizing the house (WAY overdo) and these two overripe bananas were just starring at me. Asking, no, BEGGING, to be made into bread. I could have gone with my old 100% Whole Wheat Banana Muffins but I didn’t want muffins I wanted bread. Moist, sweet banana bread, like mom used to make.

Pear Cilantro Dressing Over Mixed Greens

Out of all the things joining a CSA has done for me I think increasing my consumption of leafy greens is by far the most appreciated side effect. Before the farm the only greens I would buy and consequently consume was baby spinach and romaine both of which I bough in pre-cut, pre-washed bags. I rarely, if ever, bought a head of anything. This severely limited my consumption of some tasty greens I didn’t even know were editable!

Vegan Pumpkin Oatmeal Cookies

I’m prefixing these with “Vegan” not because I’m marketing them as such but because it immediately warns you that they are untraditional. I have no issues with Vegan desserts. If anything, I find them fascinating because they push the envelope and prove you can make yummy healthy things without the traditional loads of butter, eggs and sugar that we are used to. Simple Sweet Potato Hash

I woke up with a hankering for a diner style breakfast this morning. I just don’t think I’ve been eating enough breakfast recently which makes me starving by early afternoon. Then I end up picking my way until dinner and snacking all night until I go to bed. I don’t like this pattern. It leads days like this one. Seriously, I had so much ice cream last night it made my belly hurt.

Butternut Squash Stew with Bulgur

This idea is inspired by an old favorite of mine, Butternut Carrot Chicken Soup/Stew, which I haven’t made in ages. Mostly because butternut squash has been out of season until now.

My Overnight Steel Cut Oats Adventure

I’ve had a package of steel cut oats (this exact container) in the pantry forever! And for some reason I’ve been nervous to try them in spite of the countless recommendations from twitter friends and fellow bloggers.

I decided to try the overnight method and cook the oats in the crockpot, crock pot, slow cooker, whatever you call that thing! I didn’t follow any recipes. I just used the water to oats ratio recommendation and added a pinch of salt. Read the rest of this post »»

FAILED: Apple Chutney Turkey Loaf

Tonight’s dinner was an absolute FAIL! Well.. not ALL of it but my idea to make an apple chutney turkey loaf based on the apple chutney burgers (that I love) just didn’t come out as I expected.

I used too much vinegar, not enough apples and the loaf just didn’t stay together. I also attempted to make an apple based gravy which no one liked but me. However my Creamy Mashed Potatoes were a hit (they always work out perfectly) and the side of broccoli was the first thing gone off everyones plates. Read the rest of this post »»

Moroccan Soup with Lentils, Chickpeas & Couscous

I’m finding the best way to make a dent in my vegetable stores is soup. Last week I made Fresh From the Farm Vegetable Soup with Leeks and Kale which was awesome. Then I used up my tomatoes making a quick Homemade Garden Tomato Soup which I’m sad is gone. :(

Homemade Garden Tomato Soup

I’m not sure if this is actually how you make tomato soup as I’ve never made tomato soup that didn’t require a can opener and a red and white can. Regardless, this came out super tasty so why not share.

Saturday I was staring at a plethora of tomatoes on my counter. Some on their last legs just waiting to be eaten and others just picked from this weeks trip to the farm. Simply Roasted Beets

“Who would have thunk it? I like beets!” -The Husband

We did it! We tried beets for the first time tonight and they were a HUGE success. The husband was VERY hesitant and was actually a little upset when I told him I was making them. He had that eye roll, oh God here we go again, kind of look.
