One of my goals here on GreenLiteBites is to inspire more people to cook at home. Plain and simple. I’m not going claim to be some hoity toity chef or a know it all cook, because I’m not. Today called for chili. It really did. But I had zippy time, nothing defrosted and no desire to CHOP anything. So I hit the pantry.
Keeping cans of beans in stock is a must for me. I also have bags of dry beans but to be honest, I rarely plan anything that far in advanced to soak the beans overnight. Instead I buy cans when they go on sale or stock up from my local Aldi‘s. Stored this way they are still a super cheap protein source and most of the extra sodium from the canning can be reduced by draining and rinsing. Read the rest of this post
I’ve been bored in the vegetable department lately. We tend to gravitate towards the same frozen things over and over, especially in the winter. Frozen broccoli, frozen peas and the occasional bag of MIXED frozen veggies for a treat! Note the hint of sarcasm. I’m tired of the microwaved vegetable side dish.

I love pears! Seriously, I can’t get enough of them right now. I have a ton that are at the peak of ripeness. I don’t want them to go to waste so I ate one with breakfast and then experimented with this for lunch. I must say… A-mazing!

I’m fairly new to the idea off adding fruit to sandwiches. I’m not sure why it’s taken me this long to try it, the possibilities are endless and it’s such a great way to add lots of flavors with a healthy twist. Not to mention, for my fellow Weight Watcher fans, fruit is now FREE so it’s a 0 point addition!
Let’s start with a confession, as I normally do. I never make Portabello burgers. Actually, I RARELY even buy Portabello mushrooms. They are just one of those things that won’t fly with husband or child so I don’t bother. But when I saw them at the store this weekend, I couldn’t resist. I’m home for lunches now so whipping myself up something is a possibility. So that’s exactly what I did!
