I woke up with a hankering for a diner style breakfast this morning. I just don’t think I’ve been eating enough breakfast recently which makes me starving by early afternoon. Then I end up picking my way until dinner and snacking all night until I go to bed. I don’t like this pattern. It leads days like this one. Seriously, I had so much ice cream last night it made my belly hurt.
This idea is inspired by an old favorite of mine, Butternut Carrot Chicken Soup/Stew, which I haven’t made in ages. Mostly because butternut squash has been out of season until now.
I decided yesterday felt like a crock pot day. I just didn’t want to worry about dinner and I had defrosted chicken from a recent grocery store trip, carrots and a butternut from the farm. It was perfect! Why not just throw everything in! Read the rest of this post
I’ve had a package of steel cut oats (this exact container) in the pantry forever! And for some reason I’ve been nervous to try them in spite of the countless recommendations from twitter friends and fellow bloggers.
I decided to try the overnight method and cook the oats in the crockpot, crock pot, slow cooker, whatever you call that thing! I didn’t follow any recipes. I just used the water to oats ratio recommendation and added a pinch of salt. Read the rest of this post
Tonight’s dinner was an absolute FAIL! Well.. not ALL of it but my idea to make an apple chutney turkey loaf based on the apple chutney burgers (that I love) just didn’t come out as I expected.
I used too much vinegar, not enough apples and the loaf just didn’t stay together. I also attempted to make an apple based gravy which no one liked but me. However my Creamy Mashed Potatoes were a hit (they always work out perfectly) and the side of broccoli was the first thing gone off everyones plates. Read the rest of this post
I’m finding the best way to make a dent in my vegetable stores is soup. Last week I made Fresh From the Farm Vegetable Soup with Leeks and Kale which was awesome. Then I used up my tomatoes making a quick Homemade Garden Tomato Soup which I’m sad is gone. :(
Well I’m happy to say my fridge is stocked yet again with a homemade veggie filled soup but this time I went for SPICE! Read the rest of this post
I’m not sure if this is actually how you make tomato soup as I’ve never made tomato soup that didn’t require a can opener and a red and white can. Regardless, this came out super tasty so why not share.
Saturday I was staring at a plethora of tomatoes on my counter. Some on their last legs just waiting to be eaten and others just picked from this weeks trip to the farm. My mom suggested I puree and freeze any that I don’t have time to use. Which I had all intention on doing until I got a whiff of the glories tomatoes in the blender. Read the rest of this post
“Who would have thunk it? I like beets!” -The Husband
We did it! We tried beets for the first time tonight and they were a HUGE success. The husband was VERY hesitant and was actually a little upset when I told him I was making them. He had that eye roll, oh God here we go again, kind of look.
He watched me pull them out of the oven, peel them and put them on the plates with this expression… Read the rest of this post
I’ve never been a tuna salad person. I think we established that on my Garden Tuna Salad with Feta Post. But being home for lunch has me wanting to get creative and I always seem to have cans of tuna in the pantry. Nor sure why. Pair that with a crap load of veggies from the farm (I joined a CSA-learn more here) and you get things like this Spicy Garden Tuna.
I’m really into the smoothies right now. Normally I run on an empty stomach but being 2 and half months pregnant, that’s just not working for me anymore. So now I make a quick smoothie, get some good healthy fruit in and it gives me just enough energy to enjoy a run without getting cramps or feeling nauseous.
This weekend I stocked up on tons of fresh fruit and it inspired me to try some new flavors. Normally I use yogurt or milk as my liquid but I wasn’t in the mood for ‘creamy’ I wanted something more… Read the rest of this post
OK, who am I kidding, this should be called the “Not At All Homemade Chocolate Banana Bundt with Chocolate Glaze” but “Almost” sounded better. ;)
Here’s the story…. I had a craving. I woke up Saturday with an itch to bake something chocolate. There was only one problem. No flour. None. Zip. ZERO. I used my last bit to make pancakes a few days before and I just kept forgetting to restock. I know. I know. What kind of cook am I? Allowing myself to run out of flour. The horror! When you join a CSA and have a few lazy days in the kitchen you end up being overwhelmed with vegetables. My fridge is busting at the seams with fresh produce and I needed to find a tasty a way to use some up. The first thing that came to mind….. SOUP!
What’s better then a big bowl of vegetable soup? Especially as the nights are getting cooler and the fall weather is moving in. It’s perfect soup season. :) Read the rest of this post
