I STILL haven’t gone grocery shopping since before Thanksgiving. Do you believe it? I just haven’t had the time and frankly, I don’t want to spend the money. Between traveling this weekend and Christmas shopping I’m spent in both the time and money department. Ahhhh gotta love the Holidays! note: Actually I DO love the holidays.. I’m just whining. :)

I whipped this up the other night for dinner in a bit of desperation. I really haven’t grocery shopped since before Thanksgiving and even then I was only buying stuff for the holiday. So my stocks are down. Once the leftovers were gone I really had nothing left to make for dinner.
I scoured the freezer and pantry and found a pound of frozen shrimp, a bag of frozen peas and of course there’s pasta in my pantry. I always keep whole grain pasta on hand. I find pasta the easiest thing to use when whipping up a fast dinner. Read the rest of this post

My initial idea to use the remaining leftover Thanksgiving turkey was a white chili, but then I realized I didn’t actually have any chilies, or peppers for that matter. So I’ll call this a “stew” instead. Whatever it is, it was GOOD! I knew I’d be the only one eating it so I decided to spice it up a bit. So I’ll admit it, I’m sick of turkey leftovers at least in the traditional sense of making a plate with all the fixins. Having cooked poultry in the fridge on the other hand, totally inspiring.

My experimental salad was a hit! I had some fresh greens from the farm and decided to get creative on Thanksgiving. I figured the worse thing that could happen was a full of bowl of salad at the end of the meal.

Tasteful Selections contacted me and asked if I’d be willing to try their small colorful potatoes. “Of course!” I said. I am NOT one to turn down potatoes, ESPECIALLY while pregnant. ;) (Have totally been craving potatoes)

This recipe was inspired by two things. 1.) The North Carolina Sweet Potato Commission reached out asking me to help spread the word on how AWESOME sweet potatoes are. I agree, so this was an easy assignment. And 2.) All the chatter on my Simple Sweet Potato Hash recipe about sweet potato soup. Something I never had before.
