Yesterday was GORGEOUS out! The first day in a long time that didn’t have me wanting to hibernate so I took complete advantage. This pregnant butt went out for a nice long walk and I made a wonderful summer inspired meal while the boys played outside.
What was the summer inspired meal? You ask. Well…. Read the rest of this post
I made this on Saturday and honestly… SHOCKED at how good it came out! I bought an avocado without a clue as to how I was going to eat it, again. Honestly, I’m not the biggest fan of the avocado. I don’t even like guacamole! I just started incorporating a bit of avocado here and there as accents in my diet for the health benefits. I must admit, I’m growing to love the creaminess it adds to dishes.

Not feeling very festive at 8 months pregnant and not being married to Mr. Romance, I thought I’d celebrate with a simple Valentines day treat for myself.
It seems V-day is all about the chocolate covered strawberries anymore. They were sold out of them at the grocery store and my local candy spot has been taking ordered for weeks! I thought, why not put the flavors of dark chocolate dipped strawberries into a simple smoothie? Read the rest of this post
I’ve said it before and I’ll say it again, when the husbands away I get to play! In the kitchen that is. :)
I whipped this fun dish up with the intention of “testing” the 5 year old. I really wanted to see how he would react to a veggie filled, fruit flavored chicken based one pot dish–something that I LOVE. The husband? Not so much.
Well I’m happy to say he passed! Just look at him! (and OMG how BIG is he?!?) Read the rest of this post
Update: Click here to see me make this on video.
I made this on Saturday and have been dying to tell you about it ever since! There is just something about the Portabella for me at the moment. I don’t know what it is but the big caps just look so appetizing at the grocery store. I’ve been picking them up and experimenting. First was the Cheddar Pepper Stuffed Portabello Burger which was super yummy but then I had lunch with a fellow "Foodie" and we both ended up ordering the same thing, a Portabella panini with red onion and roasted peppers.

The husband is a wing FANATIC! So of course what is he preferred Super Bowl meal? And how do you normally get wings? UGH. I’m SO tired of battling him on the EATING OUT thing! Instead, I convinced him to let me cook this year’s Super Bowl food. My approach was a flavorful wings that wasn’t necessarily hot. I was going for a moist version of a dry rub. One of my goals here on GreenLiteBites is to inspire more people to cook at home. Plain and simple. I’m not going claim to be some hoity toity chef or a know it all cook, because I’m not. I’m also not an organic nut or spice snob. I never buy fresh nutmeg or fresh vanilla beans, even though I would like to try them one day. Nope, my situation is pretty cut and dry. I’m a working mom, doing her best to feed her family. Read the rest of this post
I told you. Once we made our first Green Smoothie there would be others. This one was inspired by Mo in the comments.
We actually recorded this on Friday but I had a TON of technical difficulty with the video. You’ll have to excuse the abrupt stop at the end. It was all I could salvage.

Today called for chili. It really did. But I had zippy time, nothing defrosted and no desire to CHOP anything. So I hit the pantry.
Keeping cans of beans in stock is a must for me. I also have bags of dry beans but to be honest, I rarely plan anything that far in advanced to soak the beans overnight. Instead I buy cans when they go on sale or stock up from my local Aldi‘s. Stored this way they are still a super cheap protein source and most of the extra sodium from the canning can be reduced by draining and rinsing. Read the rest of this post
I’ve been bored in the vegetable department lately. We tend to gravitate towards the same frozen things over and over, especially in the winter. Frozen broccoli, frozen peas and the occasional bag of MIXED frozen veggies for a treat! Note the hint of sarcasm. I’m tired of the microwaved vegetable side dish.
So I fired up the old oven and roasted some fresh veggies to mix it up a bit. Read the rest of this post
If you read my weight loss blog you may have caught my recent obsession with grapefruit. I’ve been enjoying them straight up almost every morning but yesterday I took the leap and used one as inspiration for a new salad idea.
Last week Dottie shared this technique to “Supreme a Grapefruit.” I never honestly thought cutting a grapefruit this way. It opens up a whole world of possibilities! Read the rest of this post
