A few days ago the husband and I celebrated our 10th wedding anniversary. Well, we didn’t really do much to CELEBRATE. It’s kind of tough with a newborn but we had fun all the same.

So sorry for my short hiatus. It’s crazy times in these parts. The baby and the conference have been keeping me busy but the Easter holiday pushed me over the edge. I had a house full of grandparents and babies to feed. :)
The main course for Easter dinner was a marinated pork loin of which I have plenty of leftovers. Yesterday we ate some for dinner and today I turned a few slices into this amazing sandwich. I’m serious, it really was amazing. Let me say it again…. Read the rest of this post

Boredom. That’s usually where I get my ideas from.
Yesterday I was hungry but didn’t know what I wanted to eat. I was out of leftovers. The husband wasn’t home to tempt me with fast food. And I had no desire to make a BORING old ham sandwich.

I’m lucky. Both husband and child LOVE asparagus. It took years to convince the husband but the Little Guy has always been fan, eating them like French fries when he was just “the toddler.” Him and I still use our fingers when having them with dinner. :)
Our favorite way to eat asparagus is just simply roasted with a tiny amount of olive oil and some kosher salt. If I’m feeling a bit creative I will marinate them or add some lime slices for my simple “Margarita Asparagus”

A few weeks ago the husband and I went to Chili’s for lunch and I ordered the Chicken Enchilada soup. It was DIVINE! Just complete cheesy goodness with chunks of chicken and veggies and a delicious mild flavor. I never had a soup like it before.

I love dinners like this! I had pork chops defrosted but wasn’t sure how I was going to make them. So I decided to pull out some pantry items and just experiment.
Boy did I get “the face” from both husband and child!
The Little Guy especially had that there’s-no-way-I’m-eating-that expression as he sat down at the table. On Taco night – ditch the shredded cheddar and instead stir in 2 wedges of the Queso Fresco & Chipotle Laughing Cow into the meat at the end of cooking. It makes it creamy, moist, cheesy and DELICIOUS! Since the wedge is only 1 point, and I’m only eating a small portion of the meat – it turns into less points than eating the shredded cheddar but so much more flavor! Yum…

You may or may not know I’ve returned to Weight Watchers. Now that I’m counting points I try real hard not to fall into the rut of eating cereal every day. Sure, it’s easier to weigh out a serving and count but I’d much rather a warm breakfast with less processed foods.

On a blog called Simplifried she shares what she calls ‘elastic’ recipes – basically she explains the structure of a ‘thing’ (like a frittata) so that one can understand ‘how’ a recipe is made and then make endless variations. I’m not the best cook so this has been remarkably helpful to me. Would you be willing to do that for smoothies? I don’t understand how a smoothie goes together (when is a fruit sweet enough and when do you need to add a sweetener; is yogurt for texture or some other purpose; is ice for the liquid or the cold?). I’m still at the stage where I don’t like a lot of foods – would like to experiment with smoothies but I don’t ‘understand’ them. You always explain things in such a clear, rational way. Please???
