Sweet Mini Meatball Idea

I have been tasked with bringing a crockpot mini-meal to my friends bridal shower next week. One problem… I never made a crockpot mini-meal! And I can’t just follow a standard recipe. You should know me by now. ;)

So I decided to use my unsuspecting extended family over Easter weekend as guinea pigs and I whipped up an idea I had for a few weeks. Thankfully Mom was here to make some suggestions. Yelatin Eggs

We got a little festive today and revisited an old favorite of ours, Yelatin. It’s what we call the combination of jell-o (gelatin) and yogurt. We first experimented with it for St. Patricks day and then had fun mixing colors in a fun mold. This year we tried some new egg molds Grandma gave us with much success!

Fruit Salad! The Video.

Double Chocolate BlueBran Muffins

I miss baking. :( With my full time job I haven’t had time experiment like I used to. So when the little guy asked to make muffins the other day I hit the pantry, used a mix and put my own spin on it to appease the "from scratch" gene my mom passed on.

We used another VitaMix from Vitalicious. This time the BlueBran. Alone it’s good but not my favorite. It’s super sweet with a very bran texture which is fine but I thought adding a little chocolate would make it even better. I’m happy to say I was right. ;) Read the rest of this post »»

Hearty Black Bean and Corn Salsa from the Pantry

Last night was taco night! I love family taco night. It’s super fast and easy to make lighter and healthier by adding tons of veggies. You can check out some of my tricks by clicking here for my basic Taco Night post or click here to watch my taco night video.

With the tacos I usually like to make at least one side dish that actually ends up being my taco filler as it’s usually bean based like Spicy Black Beans and Zucchini. Spinach Calzones

Give me Trader Joe’s whole wheat pizza dough and I will figure out some way to use it with whatever I have in the fridge. Today it was a box of frozen spinach and some fat free ricotta, 2 things I try to keep on hand. Of course I used more spinach then cheese but it was still a tasty guilt free pizza like lunch while being super healthy! How can you beat that?

Overnight Chicken Broth Turned Bulgur Soup

Friday night for dinner I "cheated." It was the end of a long week. I didn’t want to go out to dinner but I didn’t want to cook either. So I stopped by the grocery store for one of those store cooked rotisserie chickens. You know, the ones kept under the warming lights all day in the plastic containers.

Ask Roni: Baked Good Temptation

Hi Roni — if you feel like you’ve gotten a few questions from Kathleen lately, well that’s because you have. ha! Lots of questions lately — I’m in the Weight Watchers, breastfeeding, working out ZONE right now…if only my 4-month-old could be in the sleeping thru the night zone…oh well…
so here’s a question about temptation and baked goods. I love your GLB recipes — [had Southwestern Turkey Burgers for dinner tonight!] I especially love the recipes for sweet treats. Cookies, bites, etc. my husband is not a ‘dessert guy’ – my 2 yr old has well, a 2 year old’s appetite. this is going to sound funny but I’m almost afraid to make GLB cookies/bites/muffins for fear that I will eat them all. I’m wondering if you have any tips — thinking maybe I should half the recipes or just freeze a bunch? baked good temptation….any experiences/tips/tricks welcome!

Quick Bulgur Chili

I whipped this up today with some aging peppers and a few cans I found in my pantry. We didn’t go grocery shopping yet, I only had a small bit of onion yet and had to use kidney beans when I really wanted black but this worked out better then expected. Lunch is such a great time for me to experiment as the husband and toddler are normally ok with sandwiches. That’s when I decide to have fun. :)

Simple Slow Cooker Pork Loin

Confession time… I’ve been so busy with work and the conference that last week I barely had time to cook. We ate out a record breaking 3 nights in a row. I know, I know *hanging head in shame* but hey, I do my best. These things will happen.

Well Saturday I was determined NOT to eat out again. So in the afternoon I pulled out the trusty crock pot and made up this quick meal. To my surprise the husband LOVED it.
