Herb-alicious Burgers!

Let me start this post off by saying I PROMISE not to turn GreenLiteBites into a burger blog. I’ve just been so obsessed with my grill and burgers are my go to fun food in the summer.

That being said, I started thinking.. why do we always add flavor by adding things like cheese and bacon on top of the burger? Don’t get me wrong I love a juicy bacon cheese burger but can we up the flavor of a burger without adding so many fat and calories?

Bacon Cheese Inside Out Turkey Burgers

I love experimenting with fun turkey burger ideas because, let’s be honest, a plain turkey burger is kind of boring. I either want a juicy, simple beef burger OR a flavor-filled turkey burger. Either works for me. :)

Today I was inspired by a traditional bacon cheeseburger. I had some 99% lean turkey defrosted and a couple of Mini Babybel light rounds, which melt fabulously!

Breast Milk Storage

I’m taking a slight detour from my normal food musings to share a quick tip for fellow nursing moms.

I already had a video outlining my approach to store breast milk but it was long and didn’t really need to be. So Little Bean and I set up the camera and I ran through the idea real quick.

Below the video is the step the step instructions and Read the rest of this post »»

Zesty Asian Inspired Marinade

It’s been 2 years since I grilled. TWO YEARS.

When we moved in 2009 we couldn’t take our outdoor grill with us and it’s taken us this long to get up and running with a new one.

Sad, I know.

But enough of living in the past!

This simple, tasty Asian inspired marinade is brought to you by my new summer cooking companion… Read the rest of this post »»

A Less Green More Blue Simple Smoothie

I think I was getting slightly too adventurous in the “green” smoothie department. Not for me but for Little Guy. He’s been less interested in them and I didn’t want to lose this fun, way way to get “the good stuff” into him.

So I took a step back and made a simple, sweeter, less green, green smoothie.

Mission accomplished… Read the rest of this post »»

One Pot Butter Beans with Brown Rice and Optional Cumin Dusted Pork Chops

Give me a stocked pantry and a large deep skillet and I can happily whip something up for dinner every night. There’s only one problem.

I’m the only one who will like it.

The husband is just NOT a fan of one pot meals. He doesn’t like everything all mixed up. As for the Little Guy the jury is still out. Sometimes he’s game and other times he turns his nose up. Read the rest of this post »»

Dark Chocolate Raspberry Oatmeal

I don’t know how to even start this post.

This idea came out so good I’m speechless.

Seriously speechless.

I made an experimental breakfast but it could easily be dessert. It’s that good. I’m not kidding!

This is how it started…

From Frozen Strawberry Yogurt Parfait

Something disappointing yet glorious happens when you defrost frozen berries. Disappointing becuase once frozen you can never get that plump fresh fruit texture back. It’s gone forever. However, it’s glorious becuase you get something completely different yet tasty in it’s own right.

I’m sure not everyone will agree but I kind of like the fruit soup you get when you leave the berries to defrost on the counter for a few hours. Read the rest of this post »»

Cucumber and Cheese Salad with Roasted Red Peppers

I’ve been in a mood lately with food. I don’t know what it is. I barely have anything fresh in my fridge. I have no time to go shopping. It’s gonna be a rough week.

Yesterday I whipped this up using what I had on hand. All I could find was an aging cucumber, half of a red onion, non-fat yogurt a few days passed it’s date, an open jar of roasted peppers, honey and two missed matched The Laughing Cow Cheese Mini Babybel rounds. Oh and of course my spices. I always have my base spices. ;) Read the rest of this post »»

A Simple Salmon Glaze From the Pantry

I pulled this together for dinner last night for some defrosted salmon fillets but it would be tasty on chicken or pork as well.

I say “from the pantry” on these ideas becuase I only used items that I try to keep on hand. Having a few staples like lemon juice, soy sauce and spices let’s me whip things up without having to hit the grocery story on a regular basis. Honestly, I’m a week behind on the shopping. I’ll be hitting that pantry hard until this weekend at least! Read the rest of this post »»

Crescent Pizza Pockets

I’ve had a package of crescent rolls in my fridge since Thanksgiving. THANKSGIVING! Sad I know but these things are quite a trigger for me. If I bake them I tend to want to eat the whole package. So they are safer in my fridge tucked away out of site.

But then I catch a glance and things like this happen. ;)

The idea is simple. Use a the crescent dough as the vessel for my favorite food of all time.. PIZZA! Read the rest of this post »»

The Simplest, Lightest, Easiest Tuna Salad Ever!

Ohh how I miss my kitchen! I’ve been so preoccupied with the conference and the baby I barely have time to eat let alone experiment. You could probably tell by my lack of new ideas recently.

*sigh* I’m not going to bore you with my whining. Let me get to this new tasty sandwich I made today!
