Sometimes I make things and wonder — Am I the only one who would like this? Maybe my tastes aren’t as picky since I’m the chef.
Last night I had 20 minutes to whip together dinner before running errands with the family. I had fish defrosted and I wanted a rice based side dish. I love rice and fish. It’s such a classic combo but sometimes not a very filling one. Plus I only had 1 filet of fish for each of us. Read the rest of this post
I’m so excited for the contest! Instead of your basic run of the mill random drawing we are holding a contest for the most creative spice set. What would be in your dream spice collection? The set can be inspired by anything–the holidays, your favorite cuisine, what was in mom’s pantry, whatever! Read the rest of this post
I STILL haven’t gone grocery shopping since before Thanksgiving. Do you believe it? I just haven’t had the time and frankly, I don’t want to spend the money. Between traveling this weekend and Christmas shopping I’m spent in both the time and money department. Ahhhh gotta love the Holidays! note: Actually I DO love the holidays.. I’m just whining. :)
Anyway, I knew yesterday was going to be a busy day so I decided to pull out the old crockpot. Read the rest of this post
I whipped this up the other night for dinner in a bit of desperation. I really haven’t grocery shopped since before Thanksgiving and even then I was only buying stuff for the holiday. So my stocks are down. Once the leftovers were gone I really had nothing left to make for dinner.
I scoured the freezer and pantry and found a pound of frozen shrimp, a bag of frozen peas and of course there’s pasta in my pantry. I always keep whole grain pasta on hand. I find pasta the easiest thing to use when whipping up a fast dinner. Read the rest of this post
You guys know me by now. I share my successes AND failures. Anyone remember this one? It still makes me laugh.
Anyway, today I attempted to make Roasted Butternut Squash Muffins. I’ve been craving muffins something fierce plus it’s been awhile since I had some alone time with my kitchen. What can I say, sometimes I just need to bake. Read the rest of this post
My initial idea to use the remaining leftover Thanksgiving turkey was a white chili, but then I realized I didn’t actually have any chilies, or peppers for that matter. So I’ll call this a “stew” instead. Whatever it is, it was GOOD! I knew I’d be the only one eating it so I decided to spice it up a bit. Topped with just a bit of colby/jack cheese and some fresh cilantro, it was a warm bowl of goodness on a cold rainy day. Read the rest of this post
So I’ll admit it, I’m sick of turkey leftovers at least in the traditional sense of making a plate with all the fixins. Having cooked poultry in the fridge on the other hand, totally inspiring.
Tonight I used those leftovers to make something completely different, enchiladas! All it took was some pantry items, a couple of veggies, taco shells and a bit cheese from my Thanksgiving spread. Read the rest of this post
My experimental salad was a hit! I had some fresh greens from the farm and decided to get creative on Thanksgiving. I figured the worse thing that could happen was a full of bowl of salad at the end of the meal.
To my surprise there was an almost empty bowl! I just polished off the rest for dinner tonight. There’s just something about the combination of Read the rest of this post
…even though the Little Guy immediately thought so. I can not believe how fast he’s being influenced to think vegetables = gross. I have no doubt that two years ago he would have not reacted the same way. Regardless, I shall not give up. As you’ll see in the video, he’s willing to try and we still have fun! I woke up with a hankering for oatmeal again. Tis the season!
Honestly, I think I can do a whole blog devoted to just oatmeal toppings. It’s such a fabulous vessel to try out fun flavors. Today I took some Georgia Pecans (I won a bag on twitter!) and one of my favorite fruits of all time…

Tasteful Selections contacted me and asked if I’d be willing to try their small colorful potatoes. “Of course!” I said. I am NOT one to turn down potatoes, ESPECIALLY while pregnant. ;) (Have totally been craving potatoes)
I was excited to get my two bags in the mail the other day and decided to make a simple roasted dish with them. The colors were amazing. There were red, yellow, and my favorite, purple! Each one no more than and inch or two in diameter. Read the rest of this post
There are like three different ways I can start this post that I don’t know where to begin! Let me start with what inspired the oatmeal for breakfast this morning. I glanced at my email before Little Man woke up and saw Gina’s new recipe, Cinnamon Apple Spiced Oatmeal and thought, “MMMmmm oatmeal! Perfect for this rainy morning!”
Then I opened my fridge and was reminded I bought a pint of Raspberries. I LOVE Raspberries. Read the rest of this post
