I pulled this together for dinner last night for some defrosted salmon fillets but it would be tasty on chicken or pork as well.
I say “from the pantry” on these ideas becuase I only used items that I try to keep on hand. Having a few staples like lemon juice, soy sauce and spices let’s me whip things up without having to hit the grocery story on a regular basis. Honestly, I’m a week behind on the shopping. I’ve had a package of crescent rolls in my fridge since Thanksgiving. THANKSGIVING! Sad I know but these things are quite a trigger for me. If I bake them I tend to want to eat the whole package. So they are safer in my fridge tucked away out of site.
But then I catch a glance and things like this happen. ;)

A few days ago the husband and I celebrated our 10th wedding anniversary. Well, we didn’t really do much to CELEBRATE. It’s kind of tough with a newborn but we had fun all the same.

So sorry for my short hiatus. It’s crazy times in these parts. The baby and the conference have been keeping me busy but the Easter holiday pushed me over the edge. I had a house full of grandparents and babies to feed. :)

Boredom. That’s usually where I get my ideas from.
Yesterday I was hungry but didn’t know what I wanted to eat. I was out of leftovers. The husband wasn’t home to tempt me with fast food. And I had no desire to make a BORING old ham sandwich.
Then I remembered I picked up two HUGE Portabello mushroom caps last weekend. They just looked so good I had to buy them.

I’m lucky. Both husband and child LOVE asparagus. It took years to convince the husband but the Little Guy has always been fan, eating them like French fries when he was just “the toddler.” Him and I still use our fingers when having them with dinner. :)
Our favorite way to eat asparagus is just simply roasted with a tiny amount of olive oil and some kosher salt. If I’m feeling a bit creative I will marinate them or add some lime slices for my simple “Margarita Asparagus”

A few weeks ago the husband and I went to Chili’s for lunch and I ordered the Chicken Enchilada soup. It was DIVINE! Just complete cheesy goodness with chunks of chicken and veggies and a delicious mild flavor. I never had a soup like it before.

I love dinners like this! I had pork chops defrosted but wasn’t sure how I was going to make them. So I decided to pull out some pantry items and just experiment.

The Little Guy especially had that there’s-no-way-I’m-eating-that expression as he sat down at the table. On Taco night – ditch the shredded cheddar and instead stir in 2 wedges of the Queso Fresco & Chipotle Laughing Cow into the meat at the end of cooking. It makes it creamy, moist, cheesy and DELICIOUS! Since the wedge is only 1 point, and I’m only eating a small portion of the meat – it turns into less points than eating the shredded cheddar but so much more flavor! Yum…
