I recorded this video for the Laughing Cow and wanted to share it here. The ideas is a simple–a festive snack using strawberries, blueberries and a Mini Babybel® Light.
Please forgive my recent string of fresh herb inspired posts. I know not everyone has them or can keep them on hand, but I just can’t get enough of them right now! They make everything taste fresh and satisfying!

You knew I had to do it. The ripe mango, the berries, the fresh herbs… omg how I LOVE this season!
This turned out awesome and it was the perfect compliment to jazz up a pretty boring fish meal.
How did the family react? Pretty much how I expected, except with one awesome twist!
Yesterday I came home from a 3-day excursion at Mom’s to some wonderfully ripe Mangoes. I just HAD to do something with them this morning.
I didn’t have much of anything else in the house, so I hit the herb garden and made an old favorite, Low Fat Whole Grain Crêpe.
I totally stole this idea from my friend Carrie who had the most beautiful rainbow fruit kabobs at her daughters birthday party. They were GORGEOUS and so FUN!
I immediately imagined the Little Guy and I making them together. What a fun way to get your little one to have fun in the kitchen while learning about and taste-testing all sorts of different fruits! Read the rest of this post
Sorry for my short hiatus… AGAIN. I’m still adjusting to baby and trying to figure out a schedule now that Little Guy is home. Posting should become a bit more consistent now and I (we) even recorded a video today! I should have it ready tomorrow. Thanks for being patient with me as I find my groove again.

There’s only so many baked sweet potatoes a girl can eat before she gets bored!
Yesterday I decided to try something a little different by cutting them and adding a bit of flavor. The result was fantastic. However, Little guy declared, “too spicy.”
It took me awhile to figure out what he meant because they weren’t spicy at all, not hot-spicy anyway. He just didn’t like the addition of seasoning. I can’t complain though, at least he tried them. It’s so simple, so tasty and So FUN!
Let me start this post off by saying I PROMISE not to turn GreenLiteBites into a burger blog. I’ve just been so obsessed with my grill and burgers are my go to fun food in the summer.
That being said, I started thinking.. why do we always add flavor by adding things like cheese and bacon on top of the burger? Don’t get me wrong I love a juicy bacon cheese burger but can we up the flavor of a burger without adding so many fat and calories?
I love experimenting with fun turkey burger ideas because, let’s be honest, a plain turkey burger is kind of boring. I either want a juicy, simple beef burger OR a flavor-filled turkey burger. Either works for me. :)
Today I was inspired by a traditional bacon cheeseburger. I had some 99% lean turkey defrosted and a couple of Mini Babybel light rounds, which melt fabulously!
I’m taking a slight detour from my normal food musings to share a quick tip for fellow nursing moms.
I already had a video outlining my approach to store breast milk but it was long and didn’t really need to be. So Little Bean and I set up the camera and I ran through the idea real quick.
