Quick Asparagus Soup: Don’t Throw Away the Ends!

I’m lucky. Both husband and child LOVE asparagus. It took years to convince the husband but the Little Guy has always been fan, eating them like French fries when he was just “the toddler.” Him and I still use our fingers when having them with dinner. :)

Our favorite way to eat asparagus is just simply roasted with a tiny amount of olive oil and some kosher salt. If I’m feeling a bit creative I will marinate them or add some lime slices for my simple “Margarita Asparagus”

Chicken Enchilada Soup

A few weeks ago the husband and I went to Chili’s for lunch and I ordered the Chicken Enchilada soup. It was DIVINE! Just complete cheesy goodness with chunks of chicken and veggies and a delicious mild flavor. I never had a soup like it before.

One Pot Creamy Braised Pork Chops with Rice and Peas

I love dinners like this! I had pork chops defrosted but wasn’t sure how I was going to make them. So I decided to pull out some pantry items and just experiment.

Boy did I get “the face” from both husband and child!

The Little Guy especially had that there’s-no-way-I’m-eating-that expression as he sat down at the table. I gave him the stern look and said, “Try it, before you decide.” There was also a “don’t give me any crap” mixed in there too as I have no patience when it comes to people turning up their noses to food that’s prepared for them, but I digress. Overstuffed Cheesy Beef Taco Wrap (Filling)

I can’t take full credit for this idea. Cindy sent me this in a wonderful email…

On Taco night – ditch the shredded cheddar and instead stir in 2 wedges of the Queso Fresco & Chipotle Laughing Cow into the meat at the end of cooking.  It makes it creamy, moist, cheesy and DELICIOUS! Since the wedge is only 1 point, and I’m only eating a small portion of the meat – it turns into less points than eating the shredded cheddar but so much more flavor! Yum…

Sweet Potato Scramble

You may or may not know I’ve returned to Weight Watchers. Now that I’m counting points I try real hard not to fall into the rut of eating cereal every day. Sure, it’s easier to weigh out a serving and count but I’d much rather a warm breakfast with less processed foods.

Strawberry Kiwi Smoothie with Spinach: An Elastic Recipe Approach

A few weeks ago I received this email from Adrianna…

On a blog called Simplifried she shares what she calls ‘elastic’ recipes – basically she explains the structure of a ‘thing’ (like a frittata) so that one can understand ‘how’ a recipe is made and then make endless variations. I’m not the best cook so this has been remarkably helpful to me. Would you be willing to do that for smoothies?  I don’t understand how a smoothie goes together (when is a fruit sweet enough and when do you need to add a sweetener; is yogurt for texture or some other purpose; is ice for the liquid or the cold?).  I’m still at the stage where I don’t like a lot of foods – would like to experiment with smoothies but I don’t ‘understand’ them.  You always explain things in such a clear, rational way.  Please???

One Pot Chicken and Rice with Pearl Onions and Vegetables

As I said in my pregnancy update, yesterday I was in a complete brain cloud. My day was spent reacting to all the responsibilities I forgot about. An assignment here. A phone call there. All of sudden I found myself at dinner time with nothing defrosted and barely a desire to cook. But my desire to eat out after this weekend was even less, so I rummaged through the freezer to see what I could find. I haven’t gone grocery shopping making supplies low. Real low. Simple Green Cupcakes – A St. Patrick’s Day Surprise!

I’m not claiming this idea to be “healthy” so please, all crazy health nuts need not comment. The idea here is to have a little fun with the kids, celebrate a holiday by making something green (without taking all day or making a huge mess), and possibly adding a few extra vitamins into the mix, literally.
