Let’s start with a confession, as I normally do. I never make Portabello burgers. Actually, I RARELY even buy Portabello mushrooms. They are just one of those things that won’t fly with husband or child so I don’t bother. But when I saw them at the store this weekend, I couldn’t resist. I’m home for lunches now so whipping myself up something is a possibility. So that’s exactly what I did!
I did it! I FINALLY tried the green smoothie rage that seems to be sweeping the blogosphere. Many have suggested it to me in the past. So many I can’t even list them all but it was Wendy‘s recent comment on my Orange Creamsicle Smoothie idea that finally called me into action.
Based on my Single-Serve Upside Down Pineapple “Cake” I made a new variation. Seriously, the options are endless!
Today I used a clementine as inspiration for a small, perfectly portioned dessert just for me. No mess, no leftovers and completely satisfying! Write up below the video..
About a year ago I tried Kale for the first time. It’s just one of those ingredients I don’t gravitate towards naturally. I never really know what to do with it. While getting it weekly from the CSA this summer I experimented with a few ideas but I still haven’t really adopted into our weekly menu much.

This idea came after a day of intense pineapple cravings. I rummaged through my pantry searching for a can of pineapple like a mad woman. I couldn’t get the thought of it out of my head. Thankfully I had one. :) I always try to keep a stock of canned fruit, especially through the winter.

I get too giddy about food. It’s sad. It really is. There is nothing I enjoy more then the challenge of looking in the fridge and coming up with something fun to eat. The creative aspect of it is as satisfying if not MORE satisfying then the eating aspect. Seriously, I’m a freak.

I wanted, I NEEDED, to start my day with a refreshing breakfast after my weekend of cookies, chocolate and potatoes. Yup.. that was pretty much all I ate for the last 3 days and boy am I feeling it!
So this morning’s simple breakfast was just a way for me to start the day off on the right foot. It was a fun twist on my normally berry based smoothies.
Sometimes I use the color of food to inspire me. There’s something about putting together certain colors that just seems completely satisfying in both the taste and sight departments. Today I was driven by the classic Christmas colors of Red and Green.

I may be married to the only man in America who doesn’t like beef stew. Seriously, you will have to let me know because I can’t imagine NOT liking only one of the most amazing comfort foods ever! My mom always made it with potatoes, carrots and beef. The sauce was thick and we’d dish out bowl after bowl at dinner.
When I make it, regardless of how, he pokes around the carrots, eats maybe one potato and devours the meat. The beef really is the only thing he eats. Read the rest of this post
Craving alert! Well, not really a typical pregnancy craving. It was more like a desire to eat a warm healthy lunch, kind of craving.
I don’t have much in the house in the way of fresh produce at the moment. I used all my spinach in the Turkey Spinach Lasagna Roll-ups, I don’t buy tomatoes off season (except for a pint or two of grape ones for snacking) and my CSA (the farm) season is over. :( Read the rest of this post
