Ginger Pear Turkey Burger with Pear Yogurt Spread

Unfortunately, I only had 4oz of leftover ground turkey when I made this experiment. It came out better than I ever expected and it would have even been better if I could have made it with more ground turkey.

The pear/ginger combination was awesome with the turkey. It was a fun spin and I will make it again once I get my hands on more meat. The only thing I’ll do differently next time is double everything and add an egg. Even though the burgers stayed together I think they needed a bit more glue. Read the rest of this post »»

A Do-What-You-Want-With-It Sante Fe Style Chicken from the Slow Cooker (with 5 ideas)

I made this TWO weeks ago and totally forgot to post it. Ok, that’s a lie. I had to psych myself up to actually sit down and get it all out of my head. I knew it was going to be a long one!

This was a total winner of a dish. We ate it 2 nights in a row and I had it for lunch twice. Now that’s getting your money’s worth out of a crock pot meal!

Avocado on the Half Shell for Baby

Confession: I’m not the biggest avocado fan. I simply don’t understand people that go gaga over guacamole? It’s green and weird and a weird green.

However, I must admit, after picking some up for Little Bean I’ve been giving them another chance. Especially now that I’m keeping some in stock for him…. Read the rest of this post »»

Leftovers Devoured! I Swear!

We were in such a rush yesterday morning I TOTALLY forgot to take a picture of his lunch box. It didn’t dawn on me until I went to post and all I had on the camera was the “after” photo.

Anyway, this is what he went to school with…

Yay for Lentils!

Don’t make that face. I know, I know, lentils aren’t everyone’s favorite, BUT they are SO good for you!

Protein, Fiber, Iron, Potassium … do I need to keep going? Just check out their profile on World Healthiest Foods.

They are also super cheap and last forever in the pantry: a fabulous combo for this stock-happy mom.

Seriously, why aren’t I eating these things more? I’m hopping on the lentil bandwagon and taking baby with me… Read the rest of this post »»

One Pan Idea: Roasted Meatballs with Brussels Sprouts and Sweet Potatoes

My dishwasher broke… AGAIN! Ugh. It’s a mess. I’ve had a guy out 6 times this year for a 2 year old appliance. Utterly ridiculous!

When you have no dishwasher you tend not to want to use a lot of dishes. Especially pots and pans. THAT was the motivation for last night’s dinner.

Is it be possible to roast a complete, light meal in one pan while making the entire family happy? Read the rest of this post »»

Guacatuna Salad

Between this and this I’ll never make tuna with mayo again. Not that I was making it very often, as I hate (despise would be a better word) mayo. There’s only one sandwich I use it on (this one) and I use so little, one jar would last me a lifetime.

Anyway, my goal isn’t to bash mayo, it’s to give you new ideas and I hope this one inspires you.
