Leftovers Devoured! I Swear!

We were in such a rush yesterday morning I TOTALLY forgot to take a picture of his lunch box. It didn’t dawn on me until I went to post and all I had on the camera was the “after” photo.

Anyway, this is what he went to school with…

Yay for Lentils!

Don’t make that face. I know, I know, lentils aren’t everyone’s favorite, BUT they are SO good for you!

Protein, Fiber, Iron, Potassium … do I need to keep going? Just check out their profile on World Healthiest Foods.

They are also super cheap and last forever in the pantry: a fabulous combo for this stock-happy mom.

Seriously, why aren’t I eating these things more? I’m hopping on the lentil bandwagon and taking baby with me… Read the rest of this post »»

One Pan Idea: Roasted Meatballs with Brussels Sprouts and Sweet Potatoes

My dishwasher broke… AGAIN! Ugh. It’s a mess. I’ve had a guy out 6 times this year for a 2 year old appliance. Utterly ridiculous!

When you have no dishwasher you tend not to want to use a lot of dishes. Especially pots and pans. THAT was the motivation for last night’s dinner.

Is it be possible to roast a complete, light meal in one pan while making the entire family happy? Read the rest of this post »»

Guacatuna Salad

Between this and this I’ll never make tuna with mayo again. Not that I was making it very often, as I hate (despise would be a better word) mayo. There’s only one sandwich I use it on (this one) and I use so little, one jar would last me a lifetime.

Anyway, my goal isn’t to bash mayo, it’s to give you new ideas and I hope this one inspires you.

Butternut Squash For Baby

Nothing says “fall is coming” more to me than winter squash. I love seeing the bins at the grocery store full of acorn, spaghetti and of course, butternut squash.

I’m fairly new to this amazing vegetable. I tried my first one a few years ago and fell in love. It has a sweet flesh similar to a sweet potato, but softer and less dense once cooked. You’ll probably laugh, but my favorite way to eat them is in fry form like this.

It was time to spread the squash love to Little Bean. May I present our Butternut Squash Adventure… (Warning: photo overload ahead. I was having too much fun with the camera) Read the rest of this post »»

Pretty Pretty Peas

I never understood people’s aversion to peas. I blame the brownish mush that comes in cans. Fresh and even frozen peas are so vibrant and tasty. My Little Guy has always loved them. He even eats them frozen out of the bag when I’m cooking!

Will his younger brother share this love? Find out in my newest Baby Food Adventure… Read the rest of this post »»

Maybe the Mango Ate Your Baby

Not much compares to the ripe sweetness of fresh mango. Five years ago I had my first one and fell in love. So did the Toddler at the time (click here to see how we still eat out favorite fruit)

Join me as I introduce this family favorite to our newest member. Let the baby food adventure begin… Read the rest of this post »»

Sweet Potato and Black Bean Chili

Looking for something fun to do with sweet potatoes I came across this recipe on EatingWell. That’s all I needed to see. The seed was planted.

Today I decided to make my own version which barely resembles the original recipe. I needed to use what I had on hand which was…
