I may be married to the only man in America who doesn’t like beef stew. Seriously, you will have to let me know because I can’t imagine NOT liking only one of the most amazing comfort foods ever! My mom always made it with potatoes, carrots and beef. The sauce was thick and we’d dish out bowl after bowl at dinner.
When I make it, regardless of how, he pokes around the carrots, eats maybe one potato and devours the meat. The beef really is the only thing he eats. Read the rest of this post
Craving alert! Well, not really a typical pregnancy craving. It was more like a desire to eat a warm healthy lunch, kind of craving.
I don’t have much in the house in the way of fresh produce at the moment. I used all my spinach in the Turkey Spinach Lasagna Roll-ups, I don’t buy tomatoes off season (except for a pint or two of grape ones for snacking) and my CSA (the farm) season is over. :( Read the rest of this post
I’m not a baker. You’ll be able to tell with this recipe and my lack of basic baking equipment like parchment paper and piping bags. Don’t get me wrong I find baking fun but honestly, I’m a rebel in the kitchen. I don’t follow recipes or recommended cooking techniques. I simply don’t believe there is a “right” way of cooking. Or what I really want to call, the I-don’t-have-enough-of-any-one-ingredient lasagna. Here’s the story, I had a pot of homemade sauce I made a full days ago. Normally we go to town and just have pasta for like 4-5 days in a row. The Little Guy and I stick with varying shapes of whole grain and the Husband to his boring old non-whole grain rigatoni. The only pasta shape he eats besides spaghetti.

Sometimes I make things and wonder — Am I the only one who would like this? Maybe my tastes aren’t as picky since I’m the chef.
Last night I had 20 minutes to whip together dinner before running errands with the family. I had fish defrosted and I wanted a rice based side dish. I love rice and fish. I STILL haven’t gone grocery shopping since before Thanksgiving. Do you believe it? I just haven’t had the time and frankly, I don’t want to spend the money. Between traveling this weekend and Christmas shopping I’m spent in both the time and money department. Ahhhh gotta love the Holidays! note: Actually I DO love the holidays.. I’m just whining. :)

I whipped this up the other night for dinner in a bit of desperation. I really haven’t grocery shopped since before Thanksgiving and even then I was only buying stuff for the holiday. So my stocks are down. Once the leftovers were gone I really had nothing left to make for dinner.
I scoured the freezer and pantry and found a pound of frozen shrimp, a bag of frozen peas and of course there’s pasta in my pantry. I always keep whole grain pasta on hand. I find pasta the easiest thing to use when whipping up a fast dinner. Read the rest of this post

My initial idea to use the remaining leftover Thanksgiving turkey was a white chili, but then I realized I didn’t actually have any chilies, or peppers for that matter. So I’ll call this a “stew” instead. Whatever it is, it was GOOD! I knew I’d be the only one eating it so I decided to spice it up a bit. So I’ll admit it, I’m sick of turkey leftovers at least in the traditional sense of making a plate with all the fixins. Having cooked poultry in the fridge on the other hand, totally inspiring.
