Roasted Butternut Squash Yumminess for Baby

As you may know, I’m sharing adventures in baby food making over on Baby’s First Year. So far I’ve done, sweet potato, peas, mango, and now one of my favorite things in the world, butternut squash.

Blueberry and Golden Corn VitaMuffins

Can you say… CRA-AAVING!

I wanted a baked good but I didn’t wanted to bake. I know, such problems I have. This is why I have a stash of VitaMuffin Mixes on hand. They are quick, tasty, and compared to most mixes a bargain in the calorie/fat department.

However, you know me by now. I can’t make them as is. There has to be some doctoring. This time I added blueberries and some cinnamon to make a twist on a sweet corn muffin. Read the rest of this post »»

Cheesy Tomato Soup with Peas and Orzo from the Pantry

I’m on a soup kick at the moment. Blame the rain and slightly cooler temperatures. For as much as I don’t want summer to end, I’m welcoming the change. Nothing inspires me more in the kitchen than a new season. I start to remember all the things I forgot about and then get excited to find them again. Like SOUP! lol I’m a geek like that.

Anyway, this idea isn’t my lightest, it isn’t my healthiest, but it sure is tasty! And it works for a great, fast meal when you have nothing fresh on hand. Read the rest of this post »»

My *Almost* Rainbow Soup with White Beans

Ok, so I went a wee bit nuts on the produce this weekend. Literally all I see when I open my fridge is vegetables.

Don’t get me wrong, that’s a GOOD thing, BUT I’m worried about some of it rotting before I get a chance to eat it.

It’s Book Giveaway Time!

Adventures in Baby Food Making and School Lunches

With school starting for a 1st grader, a 6 month old learning to eat, and a goal to cook more than we go out, I’m in the middle of a family food frenzy. My goal is to plan, plan, plan! Sunday I’m setting a dinner menu for the week to help me ward off the husband’s requests to eat out.
