Confession time.
When I was a kid I LOVED Easy Cheese. That cheese “stuff” found in a can that you can squirt in fun patterns onto crackers. You know…. this stuff.
And yes… I have squirted it directly in my mouth on more than one occasion. Come on. Fess up. YOU have too! ;)
Ohh but they are tasty! And you’ll never guess what’s in them. Or better yet, what’s NOT in them. :)
I love the challenge of making baked goods out of “healthy” things. My intention isn’t to necessarily duplicate traditional baked goods but to make tasty treats that are yummy and add SOME nutritional value to our diets.
Joe left a comment on my recent Single Serve Steal Cut Oats Topped with Blueberries post about using quinoa for breakfast and I haven’t been able to get the thought out of my head ever since. A couple of years ago I made Apple Cinnamon Breakfast Quinoa but haven’t dabbled with the idea in awhile. It was about time.
I’ve been on quite a journey with oatmeal. Five years ago I never touched the stuff. Ever. It just wasn’t on my radar. I don’t remember eating it much as a kid. It surly wasn’t something I made in college and you guys know who I’m married to, right? I don’t think the husband has ever had a bowl. At least not since I’ve known him.

AVOCADO?
yea.. I didn’t believe it either. This is very similar to my Banana Soft-Serve experience. Simply do a search for avocado pudding and you will see tons of web sites with recipes using a simple avocado as the base ingredient for pudding.
I had to try it.
Yesterday was GORGEOUS out! The first day in a long time that didn’t have me wanting to hibernate so I took complete advantage. This pregnant butt went out for a nice long walk and I made a wonderful summer inspired meal while the boys played outside.

I made this on Saturday and honestly… SHOCKED at how good it came out! I bought an avocado without a clue as to how I was going to eat it, again. Honestly, I’m not the biggest fan of the avocado. I don’t even like guacamole! I just started incorporating a bit of avocado here and there as accents in my diet for the health benefits. I must admit, I’m growing to love the creaminess it adds to dishes.
Not feeling very festive at 8 months pregnant and not being married to Mr. Romance, I thought I’d celebrate with a simple Valentines day treat for myself.
It seems V-day is all about the chocolate covered strawberries anymore. They were sold out of them at the grocery store and my local candy spot has been taking ordered for weeks! I whipped this fun dish up with the intention of “testing” the 5 year old. I really wanted to see how he would react to a veggie filled, fruit flavored chicken based one pot dish–something that I LOVE. The husband? Not so much.
