3 Cheese Spinach Flat Bread Pizza

I made this on Thursday. THURSDAY! I hate when I can’t post something I’ve eaten within 24 hours. It just bugs me. Not sure why, it really doesn’t matter when I post it, does it?

Anyway, I did whip this up to cure a pizza craving and I couldn’t be happier. Using a little bit of 3 different cheese adds wonderful flavor. Making it indulgent when it really isn’t! The whole pizza weighs in at less then 250 calories! Read the rest of this post »»

Pistachio and Bran Crusted Tilapia

It’s been awhile since I jazzed up a tilapia fillet. I’ve breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party.

Leftover Turkey Quesadilla with Cranberries and Gouda

Fun leftover turkey idea #2! Click here for leftover turkey idea #1.

I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can’t get enough of the smokey gouda/sweet craisin combo. It goes great with turkey and adding in the earthy Brussels sprouts rounded everything out. Dip it in a little leftover gravy and you got a taste of heaven. Read the rest of this post »»

Leftover Turkey Salad Sandwich

It’s the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff.

Apple Pie Oatmeal for Baby

Baby food is normally BORING. Sweet potato. Carrots. Peas. Rice Cereal. Sure they make some combos like summer vegetables or apples with blueberries, but there’s no pizzazz to them.

I say add a little spice! Little Bean has already had cumin dusted pork chops, greek spiced salmon, and Mexican chicken. I also add a bit of spice to his morning bowl of oatmeal. Here’s how I make “Apple Pie Oatmeal” for Baby….

Sweet Cinnamon Cheese, Apple and Turkey Sandwich

Sunday I made this sandwich on a complete whim. I just bought a bunch of red delicious apples (they were on sale.) I had 2 slices of turkey breast left in the fridge and a few wedges of The Laughing Cow Cheese just waiting to be used.
