Baked Ham with Sweet Potatoes and Carrots

Boneless cured ham is something I tend to overlook. It never really occurred to me that it could be an easy light dish until I picked one up this weekend and noticed it was only 90 calories for 3oz. The problem is they are normally too large to deal with but I noticed 3-5 pound sizes at my local grocery store. Why can’t I cut one in half for the three of us? It’s prefect!
So that’s what I did and I had fun combining it with some sweet flavors that went perfectly with sweet potatoes and carrots. The dish was a hit all around, toddler and all! Pumpkin, peach, and blueberry, what an awesome combination! Using the muffin mix was a great base for this flavor combination. The muffins came out super moist, tasty and even the toddler was a fan.

Blueberry Cheesecake Muffins Contest Finalist 4

I was super psyched to make these. The combination of a sweet cream cheese, cheesecake like filling with blueberry bran muffins sounded delectable. And the husband was excited as the cheesecake part reminded him of the filling in his favorite dessert, the pumpkin roll.
I made them last night and split the tasty results with a friend. Let’s just say Good stuff! Everyone enjoyed them except the toddler, he was a bit turned off by the look of them, but that’s fickle 2 year old for you. Hmmmm Pizza and chocolate. Ok, who’s bright idea was this?!? Oh yeah, it was Christie our third featured VitaMix Contest Finalist.
I was really looking forward to making this one with the toddler but the brownies took so long to cool; he had to go to bed! That being said, the husband acted like a toddler when he saw it, so I guess that kinds counts as kid approved. He was like, “WOW, it really looks like pizza!”

Thin Crust Whole Wheat Pizza Dough

The husband is SICK of pizza, and honestly, I think I am too! I’ve been experimenting for months! But this last week I’ve really been trying to finalize the recipe. I promised it for too long and I wanted to finalize it.
Now, I have to be honest. I’ve NEVER worked with yeast before. I NEVER baked a bread and I had NO idea what I was doing when I started this adventure. So I would appreciate any feedback, good or bad.

I’ve been waiting to make this finalist. Such a simple idea and who doesn’t like GOOEY CHOCOLATE?!?
Well after dinner the toddler and I hit the kitchen. We had a blast making them (he was able to help a lot) and the results were tasty! The addition of just 3 little chips and marshmallows really did make this delisciously gooey center! I was SO excited to make my first VitaMix Contest Finalist this morning! Being forced to make a chocolate entry as I only had one package of Deep Chocolate VitaMix (Chocolate Muffin Mix) (I’m waiting for my shipment to come in so I can make the rest),

Oh My GOSH! I did it, I finally did it. It took days reviewing, reading and drooling over the 60+ entries. Every idea was just genius! Really, just genius! I didn’t think it was going to be as hard as it was. I really didn’t.

When the husband is away, I get to play!
I LOVE when it’s just the toddler and I for dinner. I get to experiment freely without trying to please someone who has completely different taste then I do.
Anyway, I had this idea of mini turkey meatballs. I thought they would be fun for me to make and easy for the toddler to eat. Originally, I was going to do a sweet and sour but I didn’t have enough ingredients so I went with what I had in the pantry.

Tortilla-Less Tortilla Soup - Video Post

Alright, I don’t know WHAT I was thinking. All I can say is my illness must have caused a momentary lapse of sanity resulting in me thinking I could actually cook an entire dish on video with a distracting toddler roaming around.
Just be prepared for Diego sunglasses, tent talk, the Tabasco incident, piano playing and me messing up as usual. At one point, I try to show you the dish off camera. I’m a mess! I’m patting myself on the back for this one. It is one of my absolute favorite creations and today I actually had other taste testers besides the husband. Taste testers who are open and willing to try new things and they LOVED it! Man I love cooking for people who actually like to eat.
