As I mention in the video we joined a CSA (Community Supported Agriculture.) For those of you that don’t know, basically that means I pay a yearly feel to pick up my weekly "share" of produce that’s grown on the farm. Every week is a little different based on what’s in season and what they harvested. It ends up to be $30 a week and I’m sure I spend that already at the grocery store. Quick Berry Protein Shake

I’m on a protein for breakfast kick at the moment. Normally I stick with eggs making an omelet or cracking open a hard boiled but this weekend I had a full house and they wiped me clean of eggs!

Grilled Chocolate and Cherries

Cherries are in season! At least I think they are since they are all over my grocery store. The little guy totally freaked when he saw them this weekend. He’s a cherry fanatic! So we picked up a half a pound.

Fennel and Spinach Soup

I don’t know what came over me yesterday. I had this insane craving for soup on a hot summer day. Strange, I know. After wondering around the produce aisle I came up with this idea. a Puree-ed spinach and fennel soup. Light enough for summer and tasty enough for… well… me. lol

Vidalia Roasted Radishes

Tonight’s dinner was a success all around! Not only did I think that the experimental roasted radishes came out delicious but BOTH the husband and little guy liked them, no, LOVED them!
I’m telling you, the stars must be in perfect alignment. Little guy ate his whole plate without one single complaint. Not one. I nearly fell off my chair. These are the days that make me smile. POM Marinated Chicken with Brown Rice and Spinach

I made this dish the other night when I defrosted chicken and didn’t know what to do with it. I do that a lot, defrost a protein and then wing it with what I have on hand. I find it super fun and creative. This time I used some POM juice, brown rice and spinach. A fabulous combo especially with a little dried tarragon mixed in.

Veg-ed Out Manwich (Sloppy Joes)

This is a semi-homemade style Sloppy Joe recipe I whipped up for small party I was having today. I wasn’t in the mood to do a complete from scratch but I can’t possibly serve a meal without veggies (it’s just not in my blood ;) so this was a quick compromise.

15 Minute Red Beans and Rice

Yesterday after work the little guy and I turned on the camera and made a super quick dinner that he actually liked! I was shocked!
The husband wasn’t home but I can tell you this wouldn’t be his favorite meal. He’s not a all in one pot type of guy, no matter what it is. So I’m happy I now have a new one pot partner. ;)

Turkey and Mushrooms over Noodles

Give me 5 ingredient (6 if you count a side dish of frozen broccoli) and I’ll give you a family pleasing meal and enough leftovers for a few lunches. :) I love it!
I used a can of "healthy request" cream of mushroom soup to save some time and dressed it up with some fresh mushroom and worcestershire sauce. I love that combo. It makes a great gravy like base that goes wonderfully over noodles. Even the husband thinks so and let me tell you, he’s a gravy over noodles kind of guy. Fried Barley with Cilantro and Carrots

OK, confession time. I have never bought barley before. I never even gave it a second look. I mean what do you do with it? Side dish? Stuffing? I’m sure it would work but the only way I’ve ever eaten it was in beef barley soup. Even then I wasn’t that impressed. But I figured I’d give it a try. I’m tired of brown rice. It’s time to mix it up a bit.

Vitalicious Chocolate-Banana Marbled Brownie Cake – Video Post

Last weekend the Little Guy and I had a BLAST experimenting with some Vitalicious mixes. The idea. . . marble together the brownie mix with the banana nut muffin mix. The result… DELICIOUS!
