Ask Roni – Freezing Brown Rice
Hi Roni,
Love your blog and GreenLiteBites. This is my 1st question to you ever but there are likely to be more!
I’d like to cook brown rice more often but it just takes too long when I only want to do a quick dinner. Do you ever cook up a big batch and freeze it? If you do what are your tips? If you don’t do you think it would work out ok?

Chilled Broccoli Salad

Armed with an industrial sized bag of broccoli florets from my local whole sale club and tired of steamed broccoli I present Chilled Broccoli Salad!
The idea is inspired by the buffet style broccoli salads you may see at a party or event. Except I skipped the mayo, limited the cheese and bacon, replaced the sugar with Stevia and added some carrots for color. I LOVED the results and I kind of wish I made more, so feel free to double! Supreme Pizza on Lavash Bread

Whole Grain Zucchini-Pineapple Bread

I finally did it! I’ve been kicking around zucchini bread ideas for some time and after a few experiments I’m ready to post.
The idea is a modified version of a recipe my mom uses from an old cookbook. It intrigued me with it’s use of crushed pineapple as a sweetener. Rainbow Turk-a-Roni

I have a confession. It may be a culinary no no to admit but I don’t care! :~)
One of my favorite school lunches growing up was beef-a-roni. You remember it, right? Overcooked elbow pasta, grade F meat in some kind of tomato base. I don’t know when the concept of “comfort” food begins but at age 9 this really hit the nail on the head for me. Maybe it was the massive amount of fat and carbs that made me feel all warm and fuzzy inside. Who knows. But whatever it was, that was one lunch I always asked for seconds of. Poor Man’s Egg “Salad” Sandwich

When I was a kid I had some quirks, I guess we all do. One of my moms favorite stories about me and my stubbornness is refusing to eat ice cream if it wasn’t chocolate. She just told the story (again) at Labor Day! LOL I also loved cheese, but hated it melted and for some reason would always ask for my peanut butter and jellies with no jelly, I thought it was gross. Mexican Inspired Okra Orzo Stew

My first Okra experiment! That’s exactly what it was, and experiment. I literally cooked this dish yesterday afternoon having NO idea what would come out of me. Sometimes I become like a possessed chef. I had a gross of tomatoes from my moms garden on one hand and this “Okra stuff” on the other.

Also known as Lady’s Fingers, these interesting little vegetables are totally new to me. We never had them growing up, I don’t EVER remember seeing them in the grocery store and honestly, I’m not sure I even knew they existed until I started watching the food network.

Grilled Mexican Pepper Tortilla Panini
