Black Bean & Cilantro Lettuce Wraps with Yellow Squash

I know some people are predisposed to hate cilantro but I am definitely NOT one of them. MAN I can’t get enough of this stuff! I got a bushel from the farm this past week and it’s been burning a whole in my fridge since friday.

Hmmm what fun can I have with this?

Zucchini Turkey Burgers

Somewhere — I think it was SkinnyTaste — I saw a turkey recipe with zucchini. I don’t remember the details but the thought stuck with me. Ground turkey is infamously dry and unlike beef, you can’t serve it slightly rare to counteract. Normally I mix in some oats as it helps to hold on to some moisture, but adding zucchini seemed like a great idea too!

Bok Choy Tuna Wraps

Joining a CSA is definitely a challenge. Half our share are things I’d never think of buying. Not because they aren’t good or I don’t like them, but simply out of habit.

Take Bok Choy for example. I’ve never bought a head of Bok Choi. According to NutritionData.com, 1 head of this crunchy, fun vegetable has 751% of our daily Vitamin A, 630% of our daily Vitamin C, 478% Vitamin K, 139% Folate, 88% Calcium, even 37% Iron all for about 110 calories.

Yesterday was frantic farm day. Ryan gets off the bus at 3:40. Swim class is 4:30 then straight to the farm to pick up our share. As if that was hectic enough, we had storms rolling in and tornado warnings. Thankfully we just beat the monsoon and got our share without getting soaked.

I’ve discovered Chia Seeds at my local grocery store and now there is no going back. These things are awesome! Even the baby thinks so. :) Click here to see his first time trying them.
