The most popular question I get when I tell people I joined a CSA (the farm) is how do we eat it all?
Every week I pick up a share of fresh vegetables from the farm and every week, I also wonder how we’re gonna eat them, but somehow we do, one way or another.
Is it possible for a meal to have an origin story? If so this may be one of the funniest. Well not funny ha ha but funny as in strange? Interesting? Weird?

Every summer I forget how awesome soup and it’s unfortunate. A good broth based soup filled with fresh veggies is light, filling and super easy to make. Summer should be the best time to soup it up with best vegetables being in season!
A few days ago I found myself with a couple of leeks and a load of peppers from the farm.
A meal the whole family loved! Can you believe it? Not only did they love it they devoured it. The Husband even asked for thirds!
That NEVER happens!
The best part? Let’s see… It was easy. It was meatless. It was super fast make. Oh! and I got this guy to try raw summer squash…
I saw this idea in Food Magazine the other day and HAD to try it immediately!
Basil is about the only thing I successfuly grew in my small container garden this year. I have 3 plants that just keep producing this favorite herb of mine. I also had a cilantro plant, my other favorite, but it didn’t make it past July. :(
I was going to call this “reverse pizza” or “upside down pizza” but that doesn’t quite describe it right. I had an idea to use a spreadable cheese for the “sauce” and then fresh garden tomatoes as the “cheese” for a quick pizza like dish on a tortilla.
I cooked something besides burgers or fish sticks! YAY! It’s been crazy in these parts. The Husband now plays tennis in the evening, I’ve been playing catch-up after my BlogHer Vacation in NY and frankly, I’ve been uninspired in the kitchen.

I was ecstatic to get a spaghetti squash in this weeks farm share! After trying it a few years ago, I’m hooked! It’s one of my favorite things to experiment with.
If you’ve never had some, it’s mildly sweet with a fun spaghetti like texture. I have an OLD video where I show how I used to cook it in the microwave but now I bake it. The texture is much better and it’s super easy if you do it whole. I’ve been meaning to do a video on how I do it. Maybe next week? Read the rest of this post
