Leftover Brown Rice with Peas and Pomegranates

So the night I was sick we ordered chinese food for dinner and with Chinese food comes leftover rice. You know the rice that comes on the side of every menu item that no one ever seems to eat because you ordered fried rice or noodles on the side anway? Yea, that rice. The stuff that usually gets tossed.

Well I like to look at it as someone just delivered me cooked rice and says, “Here, make something.”

Pomegranate Berry Smoothie

Have I been inactive for 8 days? That may be a record! The holiday season hit this year and hit hard. It all started with The Husband’s birthday on the 21st. We had his company holiday party out of town, then Christmas Eve and Christmas Day at home with the kids, then off to Grandma and Grandpa #1′s for the day, then Grandpa and Grandma #2′s the next day, then we had the road trip from hell on the way home (serious traffic, diaper blow outs, grumpy kids,) then today I got sick!

Cranberry Topped Cheese and Cucumber "Crackers"

I think I’ve confessed my cheese addiction before but just in case I’ll say it again…

I LOVE CHEESE!

One of my favorite snacks as a kid was to cut hunks from a block of cheddar, slice some good pepperoni and top a buttery cracker. It was a texture thing, a taste thing and, well, a mindless thing. Before I knew it I’d look down and the block would be gone!

Quick Spicy Butternut Black Beans and Peas

The Husband wasn’t home for dinner last night and there were leftovers for the kids, so I decided to experiment a bit.

I was in the mood for something comforting but quick. I had zero desire to prep. So most of this is made with quick pantry items. I happened to have cubed squash that I cut into slightly smaller pieces.

It was easy, tasty and satisfying!

No-Bake Chocolate Cranberry Thumbprints

I’m trying REAL hard not to become date obsessed. I always see them out during the holiday season, so I picked some to experiment with and am now wondering why they aren’t more popular.

Ham Salad in a Pinch

I am seriously on reserves in my house. The fridge is EMPTY. I don’t even have a bag of spinach or baby carrots, 2 things I’m rarely without.

Thankfully my pantry is normally pretty stocked and that includes my freezer. I pulled out a baked ham for dinner the other night and have frozen bags of peas and broccoli for backups.

Simple Clementine Smoothie

I go through smoothie waves. Some months I’m making them almost daily and then for some reason, I forget to even consider them an option. Normally I rediscover the yumminess when my fridge is empty and I’m scrounging around for a half decent breakfast, like today.
