A meal the whole family loved! Can you believe it? Not only did they love it they devoured it. The Husband even asked for thirds!
That NEVER happens!
The best part? Let’s see… It was easy. It was meatless. It was super fast make. Oh! and I got this guy to try raw summer squash…
I saw this idea in Food Magazine the other day and HAD to try it immediately!
Basil is about the only thing I successfuly grew in my small container garden this year. I have 3 plants that just keep producing this favorite herb of mine. I also had a cilantro plant, my other favorite, but it didn’t make it past July. :(
I was going to call this “reverse pizza” or “upside down pizza” but that doesn’t quite describe it right. I had an idea to use a spreadable cheese for the “sauce” and then fresh garden tomatoes as the “cheese” for a quick pizza like dish on a tortilla.
I cooked something besides burgers or fish sticks! YAY! It’s been crazy in these parts. The Husband now plays tennis in the evening, I’ve been playing catch-up after my BlogHer Vacation in NY and frankly, I’ve been uninspired in the kitchen.

I was ecstatic to get a spaghetti squash in this weeks farm share! After trying it a few years ago, I’m hooked! It’s one of my favorite things to experiment with.
If you’ve never had some, it’s mildly sweet with a fun spaghetti like texture. I have an OLD video where I show how I used to cook it in the microwave but now I bake it. Last weekend I bought a package of Portobello mushroom caps. First I made my Marinated Portobello Mushroom Spinach Salad then a couple of Mexican Style Portobello Mushroom Pizzas. That left me 1 cap left for lunch yesterday.
I perused the internet finding this Grilled Portobello Panini on the Food Network. The idea of the Portobello as the meat of a warm pressed sandwich with some tasty cream cheese was exactly the type of lunch I had in mind. Read the rest of this post
I’ve gone out to dinner on my birthday for as long as I can remember. It’s just what we do. What we’ve always done.
There’s no doubt I like eating out. I enjoy a break from the kitchen, I like getting waited on for a change, but it’s expensive and just not as fun for me with 2 young kids (if I’m being honest.) I’d rather cook a good meal at home, even on my Birthday. So I’m starting a new tradition of cooking something new for myself on my day and the family is NOT allowed to complain. (They did anyway.)

It’s my birthday and I HAD to bake a cake.
Just had to.
Of course I can’t bake a “normal” cake because that would be too easy and too, well, full of calories. So I made myself a fun marbled cake using my favorite baking mixes from Vitalicious.
Home from the beach and CRAVING a light, healthy lunch. That was my inspiration today.
Armed with a Portobello mushroom and a red pepper I picked up at the grocery store yesterday, I whipped up a fun, tasty, filling spinach salad. Honestly, I can’t believe how flavorful and satisfying this meal was. Don’t let the longer ingredient list scare you. It was a cinch to make and took all of 10 minutes.

Hello from the Beach! Sorry I’ve been MIA. This week is our family outing to the Jersey Shore. I’ve been posting a few fun photos and my food journals on my weight loss blog but have neglected poor GreenLiteBites. Not for lack of ideas (I’m backlogged) but for lack of time.
