Simple Thick Chocolate Oatmeal with Almonds
Did you know yesterday was Milk Chocolate Day? yeah.. me either. If I did I would have consumed more of the best stuff on earth. :) I actually had no chocolate on hand so I celebrated by making a simple yet super tasty breakfast!

Makin’ Oatmeal Cups
It’s been awhile since we did a breakfast video so I figured, why not? This morning we made a half a batch of Banana Oatmeal Cups with Chocolate Chips using a few substitutes to compensate for my lack of ingredients.
Blueberry Muffins
I’ve been wanting to experiment with a blueberry muffin for FOREVER! I’m not sure this one is complete quite yet. I may tweak it slightly but I’m satisfied with the results and so was the toddler. He ate two! Even the husband took a bite and said they were good. Although he’d never eat a whole muffin. He’s just not a muffin man. :)

I made a shake after my workout tonight and I have no problem declaring it my favorite immediately. That is how GOOD it was. However, the toddler did not agree. His exact quote was "it’s yucky." Wonder where he learned that word from. ;~)
Whole Wheat Chocolate Muffins with Added Protein (and Sprinkles!)
These muffins were inspired by this wonderful looking bread over on Recipe Girl. I saw the picture, read prunes and said aloud, "GENIUS!" The toddler and I made a couple of batches to get the sweetness right and we were pleased at this mornings results! In fact, we were so smitten there are only 2 muffins of the 6 left. The husband will have nothing to do with them, his loss. They are a hearty breakfast muffin, not too sweet, not too cake-y, just the right texture and very filling. Read more

We got cow’s, we got soy and now we almond. Milk that is! Now I’m not going to get all preachy or tell you I’m going dairy free. Although I’ve been thinking about it. There has always been something the creeps me out about drinking milk that’s made made for baby cows. And I never understood the stigma against breast-feeding when we freely drink the "breast milk" of another species. It just seems illogical to me.

Banana Oatmeal Cups with Chocolate Chips
I’m shocked at how good these came out. SHOCKED. I totally made them on a whim this morning while rummaging through my kitchen looking for something to eat at breakfast. I had a gross of bananas just about turning overripe, oatmeal and 2 eggs. That was really it and nothing sounds good.

Pancake Taste Off!
As a blogger people like to send me products for review. Generally I stay away from them here on GreenLiteBites unless they are something I can use in a recipe (like spice mixes.) So when the pancake mixes started rolling in I was unsure how to review them. Especially considering I make my own pancakes and have some pretty strong opinions on pre-made mixes, especially ones that aren’t whole grain.
Tropical Pineapple Core Smoothie
I came up with this idea a while back when researching what foods aid in reducing swelling. I discovered that pineapple contains an enzyme called Bromelain which is an anti-inflammatory agent. People believe that it can aid in everything from asthma to cellulite. I’m not going to hop on the alternative medicine soapbox here (as I’m not an expert and don’t claim to be) but I do believe food should be our first source for nutrients. Read more
