Cheesy Butternut Stack

Yesterday this idea smacked me across the face. I was looking for something to eat, noticed my huge butternut on the counter, and realized I haven’t posted a Laughing Cow Recipe idea in awhile. Then I thought…

hmpf, cheese and butternut… they go together. Right? Why not. Let’s try something different.

This idea was born.

Pumpkin, Oat and Seed Bars

I ran out of Nut and Oat bars last week and missed them so much! I loved being able to grab a homemade snack out the fridge instead of something I’d regret out of the pantry.

Just a reminder, these aren’t quite “granola” bars and they aren’t cookie like. I am going to try my hand a more traditional granola soon, but in the mean time these are a tasty combo of seeds and oats in a fun portable form. They are dense, tasty, and very satisfying. Raspberry and Sunflower Seed Yogurt (Or Oatmeal)

A few weeks ago I bought a bag of frozen raspberries and have fallen in love all over again.

I’ve used them before, in smoothies and my favorite, Dark Chocolate Raspberry Oatmeal, but then I run out and forget about their awesomeness. That is, until I catch a glimpse of them in the grocery store.

I’m obsessed all over again.

Italian Pulled Chicken and Kale Sliders

Last month I posted An Italian Pulled Chicken Sandwich Idea without much detail. It was one of those meals I just made on instinct without measuring or getting into specifics. Surprisingly the family LOVED it and I’ve made it again since with the same reaction from the boys.

This time, however, I took notes so I can share how I prepared it with a little more detail.

Nut and Oat Bars

I’ve been wanting to try my hand at homemade granola bars for years now. I’m not sure whats been stopping me, probably the ease of simply picking up a box of them at the grocery store.

In an effort to eat overall less processed this month, I’m happy to say I took the leap and experimented with my first homemade granola bar, but sad to say the result wasn’t very granola bar like. However, they were yummy and still worth sharing as my goal is to inspire, not necessarily give you the most perfect recipe. Read the rest of this post »»

How to Cook a Whole Spaghetti Squash [video]

Sorry, this took me longer than I expected. I had to find about 2 hours to cook the squash and record so I can show you the process.

This is my new technique. I used to do it in the microwave which is still a great alternative when you’re in a hurry, but the texture does comes out better in the oven.

Oh! and watch the end. I put in a cute clip of Little Bean. :) Read the rest of this post »»

Cabbage, Sausage and Apple Beer Stew

The husband wasn’t home for dinner yesterday so I decided to have a little fun. Although, in hindsight, I think he would have liked this one.

My idea was a simple sausage and cabbage stew, kind of like this one but without the potatoes because I didn’t have any. Then I spied apples in my fruit basket and was inspired, pulling out some fun stuff for flavoring.

Lemon Dill Salt – Plus 1 Way to Use It!

I keep getting Dill in my farm share and I must admit, I’m not the biggest fan. I just don’t know what to do with it on a day-to-day basis.

Don’t get me wrong, I like a good pickle, but I buy mine in a jar and I’m just not ready to hop on the canning bandwagon yet.

However, after my Basil Salt adventure I am into making my own seasonings! Read the rest of this post »»
