The 6-Ingredient, Family-Approved, Pork Loin Dinner

I thought it would be fun to invite you into my kitchen for dinner tonight. With 6 ingredients and 45 minutes I made a total family pleaser. Well, overall — the 2-year-old still hasn’t realized the awesomeness that are Brussels sprouts.

Using Leftovers: Cheesy Smashed Cauliflower

I’ve been really trying to get in the habit of cooking extra specifically for the leftover potential. It makes 1-2 dinners that much easier throughout the week. So when cauliflower was on sale I picked up 2 heads and roasted them both a few days ago. Last night I used the leftovers to make a fun, cheesy side dish that, surprisingly, everyone loved!

Simple Honey Lemon Salmon

I don’t know what’s up with The Husband lately. He’s either finally maturing in the food department or I’ve just simply worn him down after years of making things outside his dietary comfort zone.

This is another recent meal I served that he raved about.

Simple Chicken and Oat Stew With Northern Beans

Aack! I’m still behind on posting but I have to put off the 2 ideas I have waiting in the wings to share a crockpot meal I made for dinner this weekend.

It came out A-MAZING! Even –are you ready for this??– The Husband agreed!

He, the man who doesn’t like chilies or stews or one-pot anything!

I was shocked to say the least. This is totally my kind of meal, and it’s nice to have him on the same page for a change.

Using Leftovers: Simple Steak Fajitas!

OMG, I’m on a roll in the kitchen lately! So much so I have 3 ideas photographed and waiting in the wings to be posted but I’m putting them on hold to share what I just made myself for an early lunch.

I’m also announcing a new category of ideas I’ll be sharing specifically for leftovers. I’ve been getting smarter when making dinners: buying slightly larger cuts of meat, roasting an extra potato or 2, even cooking something alongside dinner just because the oven is on.
