This morning I checked my email to find one of Kalyn’s latest post, Wake-Up-Your-Mouth Thai Cucumber Salad and I immediately knew what I was making for lunch.
Of course I modified the idea using what I had on hand. The result couldn’t have been more satisfying! It was fresh, light, tasty, and REALLY filling. I guess eating a whole large cucumber will do that to you!
Some of you are going to think this is absolutely crazy but I have never, EVER, had a “dippy” egg. Nope. Never.
No over easy or sunny side up for me. I’m a scrambled/omelette girl and I like my eggs cooked. Thoroughly.

So the night I was sick we ordered chinese food for dinner and with Chinese food comes leftover rice. You know the rice that comes on the side of every menu item that no one ever seems to eat because you ordered fried rice or noodles on the side anway? Yea, that rice. The stuff that usually gets tossed.

Have I been inactive for 8 days? That may be a record! The holiday season hit this year and hit hard. It all started with The Husband’s birthday on the 21st. We had his company holiday party out of town, then Christmas Eve and Christmas Day at home with the kids, then off to Grandma and Grandpa #1′s for the day, then Grandpa and Grandma #2′s the next day, then we had the road trip from hell on the way home (serious traffic, diaper blow outs, grumpy kids,) then today I got sick!
I think I’ve confessed my cheese addiction before but just in case I’ll say it again…
I LOVE CHEESE!
One of my favorite snacks as a kid was to cut hunks from a block of cheddar, slice some good pepperoni and top a buttery cracker. It was a texture thing, a taste thing and, well, a mindless thing. Before I knew it I’d look down and the block would be gone!

This weekend we sat down as a family at 2PM and enjoyed this…
The Husband wasn’t home for dinner last night and there were leftovers for the kids, so I decided to experiment a bit.
I was in the mood for something comforting but quick. I had zero desire to prep. So most of this is made with quick pantry items. I happened to have cubed squash that I cut into slightly smaller pieces.
It was easy, tasty and satisfying!
