This is my new favorite smoothie, especially after a run. It’s quick, tasty and super nutritious! According to NutrtionData.com it’s full of Fiber, Vitamin D, Calcium, Vitamin C, Vitamin E and Protein. Not a bad way to start your day or replenish after a fabulous workout!
Oh! and the little guy loves the stuff! :)

I’m on a protein for breakfast kick at the moment. Normally I stick with eggs making an omelet or cracking open a hard boiled but this weekend I had a full house and they wiped me clean of eggs!

Pinto Bean Soup
I don’t know WHAT came over me yesterday. I just felt like cooking ALL day. It started with the Tropical Pineapple Core Smoothie. Then the toddler and I made some Homemade Whole Wheat Thin Crust Pizza Dough for lunch. And the whole time I had this soup on the stove.

I came up with this idea a while back when researching what foods aid in reducing swelling. I discovered that pineapple contains an enzyme called Bromelain which is an anti-inflammatory agent. People believe that it can aid in everything from asthma to cellulite. The Prickly Pear – Video Post
Yesterday I discovered prickly pears (aka Tuna Fruit) at the grocery store! I’m so glad we picked a couple up. The toddler and I had fun exploring this new healthy food together this morning. According to NutrionData.com prickly pears are a good source of Calcium and Potassium, and a very good source of Dietary Fiber, Vitamin C and Magnesium.
Our Papaya Adventure! – Video Post
The title says it all! This is our first papaya and I think Ryan liked it more then I did! We will buying them again, especially considering 1 cup of papaya has only 55 calories, no fat, 3 g of fiber and almost 150% of your daily Vitamin C! According to NutritionData, it is also is a good source of Potassium, Vitamin A, and Folate.
