Another kale idea for you. This week I do a semi-quick video while making dinner. Did they like it? Did they eat the kale? Well I’ll tell you, the husband enjoyed it but you’ll have to watch the video to hear the 4 year old’s take. ;~P

Yes, you read the correctly. KALE CHIPS and guess what. The little guy LIKED them. He didn’t think he would. He gave me some crap (off camera) about not wanting to try them because they are green. I have NO idea where that came from but he did try them and, well, you’ll see his reaction. It’s cute.

As for me, I don’t think I’ll ever NOT pick up a bunch of kale when I go grocery shopping ever again. I’m serious. Trying this idea may change my nighttime snacking for the better. It takes a total of 15 minutes to clean and bake up this crispy snack and the best part, a cup of this kale chips are only about 50 calories! I’ll write up and recipe with official nutritional information and Weight Watcher points the next time I make them. I want to take some pictures, weigh out the Kale and get more specific but seriously people.. it’s KALE chips. I say… eat away! :)

The little guy and I decided to make some almond milk this morning. We’ve been snowed in all weekend and LOVING it.

As I say in the video I’ve posted about Almond Milk before…

Today we tried to make some chocolate chip cookies following this basic Flourless Chocolate Chip Almond Cookies Recipe. The results were ok but I’d like to take my hand at them before posting. They were missing something. And don’t say flour. ;~P

This weeks video was a lot of fun. The little guy and I tried an idea that Marie left on my failed Pomegranate Angel Food Cupcakes post.

We took some crushed pineapple and combined it with a boxed angel food cake mix. The result was a super sweet low calorie cupcake-ish treat. Making 24, each is only about 85 calories and no fat. Mostly sugar though, so don’t go too overboard. But if you are looking for something fun to do with the kids on a snowy saturday morning this could work. :)

It’s been too long since we’ve done a video and even longer since we’ve done a produce pick. This week we try the pummelo.. with some friends. :)

As I say in the video, we researched a bit and watched this video about how to peel one. We may not have done it perfectly but it was all we needed to get started!

Any pummelo fans out there? How do you peel it? Do you eat it straight up or use it in recipes? Any uses for all that rind??

I’ve made 3 variations of this idea so far but I will craft a specific recipe with true nutritional information purely for the fact that it’s fast becoming a husband favorite. Now that’s pretty rare!

Even though the child is not a fan of mushrooms or onions he likes this meal. Tonight I ACTUALLY got him to try a mushroom and he ACTUALLY admitted they weren’t that bad. Not in words, mind you, but by facial expression. We called him on it and he just smirked. It was cute.

I hope this loooong video gives you some ideas for you family. :)

Oh! I almost forgot. He totally ate it. There was a bit whining and fuss. He told me he “doesn’t like spinach!” and then proceeded to only eat the noodles. But he ate it all the same!

No complaints from the husband. This is his kind of meal. :)

I’m not kidding.. walked in the door from work, put on the camera(s) and 10 minutes later I was sitting down with the family for dinner!

The video is a bit funky as I put my new camera to the test. I’m thinking about switching so you’ll have to let me know what you think.

No time to do nutritional information tonight, I’ll post a complete recipe for the rice in a future post with pictures and all. Until then I hope this gives you some ideas.

The title really says it all so I’m not going to set this up much. I will say everyone ate dinner without complaint EXCEPT for the husband when it came to the couscous, of course. Toddler and I both enjoyed it very much. Actually it was my favorite part of the meal. Especially with a bite of chicken on the fork. :)

I did my old trick of turning on the camera after coming home to record myself making dinner. This time it was Sausage and Peppers over pasta in a quick tomato based sauce. I didn’t have time to snap a photo and calculate nutritional information so no recipe write up for now.

However, I WILL be making it again as the husband LOVED It even though he grumbled when I told him what I was making. The child, on the other hand, ate all the pasta and peppers but found the sausage too spicy. Next time I’ll use the sweet. :)

This weeks video is a bit all over the place but I think we successfully get our idea out. Sometimes it’s tough with a 4 year old by your side and dinner in the oven.

Click here to see my original party punch idea. Adding a bit if Pomegranate juice and melon balls can be a fun take for halloween. Think eyeballs floating in a bowl of blood, or something. :)

Oh! and here’s that pomegranate trip I was talking about.
