			<content:encoded><![CDATA[<p>I whipped this up today with some aging peppers and a few cans I found in my pantry. We didn&#8217;t go grocery shopping yet, I only had a small bit of onion yet and had to use kidney beans when I really wanted black but this worked out better then expected. Lunch is such a great time for me to experiment as the husband and toddler are normally ok with sandwiches. That&#8217;s when I decide to have fun. :)</p>

<p>Here&#8217;s what I did but this is the kind of meal I&#8217;d change slightly every time I make it. <img src="http://greenlitebites.com/resources/2010/20100307_bulgurChili.jpg" alt="Quick Bulgur Chili" width="300" height="450" class="right" /></p>
<ul>
<li>Thick slice of sweet onion chopped</li>
<li> 2 small to medium bell peppers chopped (I used 1 red and 1 green)</li>
<li> 1 small can (8.5oz) corn undrained</li>
<li> 1 can (15oz) kidney beans drained and rinsed</li>
<li> 2 tsp chili powder</li>
<li> 1 tsp cumin</li>
<li> 1 tbsp dried cilantro</li>
<li> 1-2 tsp hot sauce (to taste)</li>
<li> 1 tsp lime juice</li>
<li> 1/2 cup (80g) uncooked  <a href="http://greenlitebites.com/2008/10/25/food-find-bulgur/">bulgur</a></li>
<li> 1 cup water</li>
</ul>
<p>Spray a a medium to large pot with non-stick cooking spray and heat over medium high heat. Add the onion, sprinkle with a bit of kosher salt and cook until just browning. </p>
<p>Add the peppers, stir i cooking for about a minute. Then add all the remaining ingredients. Bring to a boil then cover and lower to a simmer. Cook for 20 minutes without lifting the lid! </p>
<p>Uncover, stir, scoop out a cup and top with a bit of shredded cheese and cilantro. I packed up the other 3 servings for lunches. This one will freeze well. </p>

			<content:encoded><![CDATA[<p>Home from work. Too early for dinner. Too much to do. Sure I COULD grab that back of Doritos off the husbands desk but NO! I have a better healthier idea! </p>
<p>I don&#8217;t dare call these &quot;toasted&quot; as I really just simply warm them in a skillet but let me tell you they totally hit the spot. If you are looking for a <a href="http://kalynskitchen.blogspot.com/2008/02/crispy-roasted-chickpeas-garbanzo-beans.html">more traditional Roasted Chickpeas recipe click here for Kalyn&#8217;s</a>. Mine are a dumb down version of hers with less spices and not as much crunch. I like them both ways this one works for me in a pinch. <span id="more-1902"></span><img src="http://greenlitebites.com/resources/2010/20100222_chickpeas.jpg" alt="Simply Spiced Chickpeas (aka Garbanzo beans)" width="300" height="450" class="right" /></p>
<ul>
<li>1 15oz can of chickpeas (garbanzo beans) drained and rinsed</li>
<li> 2 tsp garlic powder</li>
<li> 2 tsp onion powder</li>
<li> 2 tsp chili powder</li>
<li> 2 tsp cumin</li>
<li> 1 tsp ground ginger</li>
<li> non-cookong spray</li>
</ul>
<p>Mix all the dry spices together. </p>
<p>Spray a non-stick skillet with the non stick cooking spray. Add the beans and place over medium high heat. Cook them untouched for 1-2 minutes. Then sprinkle half the spice mixture over top tossing the skillet to coat. </p>
<p>Cook untouched for another 1-2 minutes (they may start popping on you) and then sprinkle the remaining spice mixture on top. Toss around in the pan and cook for another 1-2 minutes until the beans are nice and warm and the spices are toasted. </p>
<p>Don&#8217;t do what I did and eat half of the before they were done. I looked up and caught a reflection of myself in the microwave. I had to snap a pic. </p>

<p>Split into two servings immediately so you don&#8217;t go nuts. I almost ate the whole batch. :) </p>

			<content:encoded><![CDATA[<p>THIS is what happens when I don&#8217;t have to make the husband or the child happy with dinner. Here&#8217;s the story&#8230; We have a TON of leftovers from a get together we had this weekend but nothing I really want to eat, again (fried chicken) so I decided to simply cook for me and let the boys fend for themselves. </p>
<p>It.was.WONDERFUL!</p>
<p><span id="more-1832"></span></p>
<p>No dirty looks. No questions. No arguing. No dealing. I simply cooked what I wanted and enjoy a pretty, healthy, vegetable filled meal. </p>
<p>Is it sad that I like to cook for myself? I mean, I&#8217;d love a family that was more adventurous but since they aren&#8217;t I look for opportunities like tonight to experiment. <ul>
<li>1/2 sweet onion diced</li>
<li> 2 carrots diced</li>
<li> 2 celery stalks (with leaves) diced</li>
<li> 2 tsp curry powder</li>
<li> 1/2 tsp turmeric (You can skip if you don&#8217;t have it)</li>
<li> 1 cup water</li>
<li> 1/2 cup uncooked quinoa (84g)  </li>
<li>  About 2 cups baby spinach loosely chopped</li>
<li> 2 bell peppers (I used yellow)</li>
<li> kosher salt</li>
</ul>
<p>Preheat oven to 425 Degrees</p>
<p>Heat a pot medium pot over medium-high heat. Spray with non-stick cooking spray and saute the onion, carrots and celery with a pinch or two of salt. Continue cooking and stirring for a few minutes until the onion softens and look a little transparent. </p>
<p>Add the curry and turmeric. Stir to coat everything. Then add the water and quinoa. Bring to a boil then cover and lower to a simmer. Simmer for 10-15 minutes until all the liquid is absorbed. </p>
<p>Meanwhile. Half the peppers longways and remove the seeds. Place in a casserole dish and sprinkle with a bit of salt. </p>
<p>When the quinoa is done, mix in the spinach. It should start to wilt immediately. Then stuff the peppers sprinkle with a little more salt and pop in the oven for about 10 minutes. </p>

			<content:encoded><![CDATA[<p>I had a hankering for soup. Sure, I could have just grabbed a can of condensed soup from the pantry but where&#8217;s the fun in that?!? :)</p>
<p>Instead, I took an old time favorite, tomato soup and made it into a satisfying meal by adding a few additional ingredients and spices. </p>

<ul>
<li>1 10 3/4 oz condensed tomato soup (preferably low sodium or healthy request)</li>
<li> 1 tomato soup can of water</li>
<li> 1 15oz can of diced tomatoes (with green chillies would be tasty!) </li>
<li> 1 15oz can of pinto beans drained and rinsed</li>
<li> 1 tsp chili powder</li>
<li> 1 tsp dried cilantro</li>
<li> 1/2 tsp cumin</li>
<li> About 2 cups baby spinach loosely chopped</li>
</ul>
<p>Mix all ingredients except the spinach in a pot over medium-high heat. Bring to a boil then lower the heat to medium and cook for 5  minutes allowing all the flavors to mix. </p>
<p>Turn off the heat. Add the baby spinach and remove from heat. Stir in the spinach and it should wilt in a few seconds. </p>
<p>Serve! </p>

			<content:encoded><![CDATA[<p>I took a vacation day from work today after <a href="http://ronisweigh.com/2010/01/my-wonderful-wordcamp-weekend-in-pictures.html">a fabulous trip to Boston</a>. I don&#8217;t know about you but I always need a vacation from my vacations. :) </p>
<p>Anyway, I wanted to make a quick brunch and I happened to have a can of refried beans opened from some <a href="http://greenlitebites.com/2007/12/07/simple-quesadillas-%E2%80%93-video-post/">quesadillas</a> I made on Thursday with the little guy. You guys know me and my pizza addiction so it shouldn&#8217;t be that much so this idea shouldn&#8217;t be that much of a surprise. </p>

<ul>
<li>1 whole wheat/low carb tortilla (<a href="http://ronisweigh.com/2008/07/1-point-tortillas-they-do-exist.html">I made a list of 1 point tortillas here</a>)</li>
<li> 1/4 cup fat free re-fried beans (60g)</li>
<li> 2 tbsp of our favorite salsa (30g)</li>
<li> pinch of kosher salt</li>
<li> about 1/4 cup diced peppers (I used a mix of red and green)</li>
<li> 1 oz mozzarella cheese (or Mexican cheese blend&#8211; I just didn&#8217;t have any :) </li>
<li> Sprinkle chili powder and dried cilantro</li>
</ul>
<p>Preheat oven to 425 degrees.</p>
<p> Pierce the tortilla with a knife a few times and bake for about 2 minutes until crispier.</p>
<p> Mix the beans, salsa and salt together. Smear it on the tortilla. top with the peppers and cheese. Bake for about 5 minutes.</p>
<p> After pulling it out of the oven sprinkle with chili powder and cilantro. </p>
<p> Nutritional information will depend on the tortilla you use. Approximate nutritional information based on the brand I used.</p>

			<content:encoded><![CDATA[<p>Let me start this post by saying, I didn&#8217;t even know what <a href="http://en.wikipedia.org/wiki/Tabbouleh">Tabouli (Tabbouleh)</a> was about a year ago. I had some at a party last year and the cafeteria at my new job has it all the time. I believe it&#8217;s traditionally <a href="http://greenlitebites.com/2008/10/25/food-find-bulgur/">bulgur</a>, parsley, mint, tomato, onion, lemon juice and olive oil. But unfortunately (or fortunately depending on how you look at it) I don&#8217;t have all of that stuff. Heck, I don&#8217;t even have any fresh vegetables in the fridge except some carrots and an aging celery stalk. <span id="more-1793"></span> I did, however, have some bulgur I made last night which I never used because we ended up going out&#8211;<a href="http://ronisweigh.com/2010/01/i-survived-a-japanese-steakhouse.html">which I survived</a>. ;) </p>
<p>So after returning from the gym this morning I looked in the fridge, saw the bulgur. Looked in the freezer, saw the bag of frozen veggies and <em>tadaaaa</em> Asian Inspired Tabouli Salad was born!</p>
<p>It is tasty! A wonderful chilled salad and very filling. You can totally put this out for a party, use it as a side dish or separate the recipe into two servings for lunch! <img src="http://greenlitebites.com/resources/2010/20100116_Tabouli.jpg" alt="Asian Inspired Tabouli Salad" width="300" height="450"  class="right" /></p>
<ul>
<li>1/2 cup dry <a href="http://greenlitebites.com/2008/10/25/food-find-bulgur/">bulgur</a> (80g)</li>
<li> 1 cup of water</li>
<li> 1 16oz (1lb) bag of frozen Asian vegetables (or stir-fry mix)</li>
<li> 1/2 tbsp honey (10g)</li>
<li> 1 tbsp olive oil (14g)</li>
<li> 1 tbsp soy sauce</li>
<li> 1 tbsp lemon juice</li>
<li> 2 tsp dried cilantro</li>
<li> 1 tsp ground ginger</li>
<li> Kosher salt &amp; fresh ground black pepper</li>
</ul>
<p>In a small saucepan bring the bulgur and water to a boil. Cover and let sit for 15 minutes until all the liquid is absorbed. (note: I did this ahead so mine was chilled when preparing although I don&#8217;t think it will make much of a difference) (double note: DO NOT lift the lid. That&#8217;s always my downfall.)</p>
<p>Place the bag of frozen veggies in a microwave safe dish and cook until defrosted but not hot. I did 2 minutes stirred and then 2 more minutes. </p>
<p>In a large bowl add the honey, olive oil, soy sauce, lemon juice, cilantro, ginger, 2 pinched of salt, and some cracked black pepper. </p>

<p>Whisk. </p>

<p>Add the veggies and bulgur. </p>

<p>Stir to coat everything in the dressing. </p>

<p>Chill in the fridge until ready to eat. </p>
<p>As you can see the little guy was unwilling to try. :( He said it looked &quot;yucky.&quot; *sigh* he&#8217;s turning into your typical 4 year old picky eater. </p>

<p>Sorry, I&#8217;m a little excited. I whipped up this chocolate dipping sauce as an experiment for my waffles this morning and it came out better then I expected. It will be awesome as a dip for strawberries. Here&#8217;s the story. . . </p>

<p>The little guy and I decided on waffles this morning. So I whipped up a batch of <a href="http://greenlitebites.com/2008/06/23/quick-whole-grain-banana-pancakes/">quick whole grain banana pancake mix</a> as I had some overripe bananas on hand. We use this recipe in the waffle iron all the time. <img src="http://greenlitebites.com/resources/2010/20100110_bananaChocolate.jpg" alt="Dark Chocolate Banana Dipping Sauce" width="300" height="450" class="right" />While cooking, I glanced online for other ideas to use up the rest of the brown bananas and I came across <a href="http://www.kidglue.com/2009/06/17/thinking-outside-the-loaf-what-to-do-with-overripe-bananas/">Thinking Outside the Loaf: What To Do With Overripe Bananas.</a> They talk about melting them in the microwave. Before I even finished the article, I jumped up and made the chocolate sauce. </p>
<p>It wasn&#8217;t as smooth as I thought it would be but I&#8217;m thinking my banana wasn&#8217;t actually ripe enough. Either way, it was absolute chocolaty yumminess. I sat in the kitchen dipping waffle piece after waffle piece wondering why I haven&#8217;t thought of this before. </p>

<li> 1/2 tsp vanilla extract</li>

<p>Peel the banana and place in a microwave safe dish. </p>

<p>Nuke it for a minute. It will look like this. </p>

<p>mix it up. . . </p>

<p>Add the cocoa and vanilla. If it&#8217;s too thick add water at an ounce at a time. I used 1oz. Pop back into the microwave for 30 second. </p>

<p>I love the combo of cinnamon, chocolate and strawberries. I also love that the soy milk provides all the sweetness. It makes it super simple! </p>

The husband is NOT a smoothie guy, of course. ;)</p>
<p>Here&#8217;s what I did. . . </p>
<ul>
<li>1 cup light chocolate Soy Milk</li>
<li> 1 cup frozen strawberries (134g)</li>
<li> 1/2 tsp ground cinnamon</li>
</ul>
<p>Blend all ingredients. I used my bullet and had to shake a bit, it was nice and thick. :)</p>
<p>Nutritonal Infomration may vary based on your soy milk brand but overall it&#8217;s going to be a 3 WWP. </p>

<p>I actually made this up yesterday, snapped the most awesome shots of the little guy eating it and then accidently deleted them off the camera. :( </p>
<p>So I decided to make it again this morning. It came out even better when I discovered dipping graham crackers in it was a little taste of heaven. Like dessert chips-n-dip. I&#8217;m seriously thinking of putting it like that for a New Years party we&#8217;re having.<span id="more-1745"></span><img src="http://greenlitebites.com/resources/2009/food/20091224_pumpkinyogurt.jpg" alt="Pumpkin Yogurt" width="300" height="450" class="right" /></p>
<p>The little guy liked it, although I&#8217;m thinking it was more the crackers then the yogurt. Either way, I got some good stuff in him this morning. ;) </p>
<ul>
<li>1/2 cup canned pureed pumpkin (120g)</li>
<li> 1/2 cup non-fat yogurt (I used greek) (115g)</li>
<li> 1 tbsp honey (21g)</li>
<li> 1/2 tsp vanilla </li>
<li> 1 tsp ground cinnamon</li>
<li> 1/4 tsp ground nutmeg</li>
</ul>
<p>Mix all ingredients together. </p>
<p>Viola! :)</p>
<p>I used Trader Joe&#8217;s Old Fashion Graham (our favorite and the only whole grain ones I know of) crackers as my &quot;spoon&quot;.</p>

			<content:encoded><![CDATA[<p>OK, OK, OK so I ate WAY too much at the office holiday party today. Not too mention I had fast food for lunch. So I decided it was a lite salad for dinner day. There were leftovers for the toddler. The husband went out for&#8230; wait for it&#8230; wait for it&#8230; Fast food (he was Christmas shopping.) That left me to fend for myself. </p>
<p>I love it when this happens! <span id="more-1730"></span></p>
<p>I opened the fridge, looked in the pantry and came up with this. Now let me warn you the dressing is intense. You can replace with a store bought or whip up your own. I loved the kick from the raw garlic and the tartness from the vinegar especially mixed with the dried fruit. <img src="http://greenlitebites.com/resources/2009/food/20091216_SpinachFennel.jpg" alt="Spinach and Fennel Salad with Garlic Balsamic Vinaigrette and Dried Berries" width="300" height="450" class="right" /></p>
<ul>
<li>A few handfuls of baby spinach</li>
<li> half a <a href="http://www.whfoods.com/genpage.php?tname=foodspice&amp;dbid=23">fennel</a> base sliced</li>
<li> 1/8 cup dried berries (I used half cranberries and half cherries) (20g)</li>
<li> 1 tbsp balsamic vinegar</li>
<li> 1 clove of garlic</li>
<li> 1/4 tbsp honey (5g)</li>
<li> 1/2 tsp olive oil (5g)</li>
<li> 1/2 tbsp dried parsley</li>
<li> Kosher salt and pepper</li>
</ul>
<p>Pile the spinach, fennel and berries on a plate. </p>
<p>Puree the remaining ingredients in a small food processor to make the dressing. </p>
<p>Pour the dressing on the salad. Enjoy! :) </p>

			<content:encoded><![CDATA[<p>Sometimes I just get craving and last night was one of those times. After recording a <a href="http://ronisweigh.com/2009/12/ask-roni-_v30-workout-music-plateaus-runners-knee-overtraining.html">video for Roni&#8217;s Weigh</a> I took my hand at an idea I&#8217;ve had for some time. Could I use won ton wrappers as crusts for mini apple pies?</p>
<p>Well, I&#8217;m happy to say, the answer is YES! </p>
<p>I can&#8217;t believe it worked! Even the husband liked them! At least he said he did after his one big ole bite. I don&#8217;t get it. I just don&#8217;t get it! I almost ate the whole batch in one sitting. How does he do that?!? <span id="more-1717"></span></p>
<p>Anyway, this is what I did. I&#8217;m working from memory hear so bear with me.<img src="http://greenlitebites.com/resources/2009/food/20091208_applePie.jpg" alt="Mini Apple Pies" width="300" height="450" class="right" /></p>
<ul>
<li>1/4 cup of water</li>
<li> 1/4 tbsp honey (5g)</li>
<li> 1/2 tsp cinnamon</li>
<li> 1/4 tsp vanilla</li>
<li> 1 tbsp whole wheat flour</li>
<li> pinch of salt</li>
<li> 2 small apples diced &#8211; about a cup (I used gala and left the skins on)</li>
<li> 8 won ton wrappers</li>
</ul>
<p>Preheat the oven to 375</p>
<p>In a small pot whisk the water, honey, cinnamon, vanilla, and flour over medium hear. Add the apple. Stir to coat everything. The liquid should just boil and start to thicken. </p>
<p>Drop the heat down to medium low and cover. Cook for 12-15 minutes until the apple just softens. </p>
<p>Meanwhile, spray a mini muffin pan with non-stick cooking spray press the won ton wrappers in to form the crusts. </p>
<p>Once the apples are done. They should look like this&#8230; </p>

<p>Scoop the apple mixture evenly into the wontons. Bake for about 10 minutes until the edges start to brown and get crispy. </p>
<p>I didn&#8217;t have any but boy would these be great with a dab of frozen vanilla yogurt or cool whip! Here&#8217;s a little before and after cooking&#8230; </p>

			<content:encoded><![CDATA[<p>I&#8217;m a HUGE fan of baked tortilla chips. Nothing beats a big ol&#8217; bowl of salsa and a bag baked chips. That was until&#8230; I found my new friends <a href="http://www.fritolay.com/our-snacks/baked-tostitos-scoops.html">Baked Scoops</a>! These are basically a baked plan tortilla chip shaped into a bowl. I mean COME ON! Nothing is screaming to be made into an awesome snack like these things (and no I wasn&#8217;t paid to tell you that, just in case you wondering. I have no affiliation with FritoLay)</p>

<p>So tonight while watching TV and craving something, anything. I decided to pass up the husband&#8217;s chocolate chip cookies and the kid&#8217;s Devil Dogs to make my own snack. I find that when I take the few extra minutes to actually make something and consciously include fruits or veggies, I am ultimately more satisfied then if I would have just grabbed a bag of chips or break open a box of cookies. <img src="http://greenlitebites.com/resources/2009/food/20091028_veggieScoop.jpg" alt="Veggie Scoops" width="300" height="400" class="right" /></p>
<p>Tonight this is what I did but remember the options are really endless. You can fill these things with all your fav veggies, beans, chicken, anything! So yummy! </p>
<ul>
<li>1 oz/28g of <a href="http://www.fritolay.com/our-snacks/baked-tostitos-scoops.html">Baked Scoops</a> (I got 13 when I weighed them out)</li>
<li> 3 pepper stripes (I used 1 yellow and 2 green)</li>
<li> About 1/2 cup baby spinach leaves chopped</li>
<li> 1 tbsp ready made salsa</li>
<li> 1/2 oz fancy shredded mexican cheese blend. </li>
</ul>
<p>Preheat the oven to 425 degrees</p>
<p>Fill the scoops with the veggies, dab with a bit of salsa and top with cheese. </p>
<p>Bake for 5-6 minutes.</p>
