Simple Spicy Breakfast Sausage

I recently joined ButcherBox and if you are into responsibly raised, grass-fed protein sources you should seriously check them out. They are a meat delivery service that provides 100% grass fed AND grass-finished beef. No hormones, no antibiotics, no feedlots, all pasture raised and completely sustainably. It’s pretty impressive and very convenient if you live in an area where finding high quality meats is hard.

I received my first order a few weeks ago. In it was a pound of ground pork.

At first I wasn’t sure what to do with it, then sausage popped into my head.

For some reason I used to think sausage was some kind of magical meat. I mean, I knew it was normally made with pork, spices and other stuff, but I thought there was some special trick to making it. Some secret ingredient or process.

Nope. Last year I learned sausage is pretty much just meat and spices and I can easily make it at home. I can’t believe it took me almost 40 years to figure that out!

Simple Spicy Breakfast SausageBeing smack in the middle of Whole30 and missing my sriracha (it’s got sugar in it) I decided to turn the ground pork into spicy breakfast sausage to dress up my eggs in the morning. It worked like a  charm and I love having little, pre-portioned sausage patties I can grab out of the fridge whenever I want. Plus, my sausage has a lot fewer additives and fillers than store bought. It truly is just meat and spices.

Here’s what I did…

  • 1 pound ground pork
  • 3 tsp poultry seasoning
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp nutmeg
  • 1 tsp red pepper
  • 1/2 tsp kosher salt

Mix the spices in with the pork.

Let the meat sit a bit so the flavors mix then form into small 1 oz patties and pan fry.

They are so small they cook up in minutes!

Breakfast Sausage

They are great with eggs, of course but this morning I had a couple with some grilled plantains and they were delicious together!

    Merci for this recipe ! Normally I do the same, but I just cook ground meat with spices in the oven in silicone baking dish (for muffins) . And I have recently tried r to boil it in plastic paper. it's also good. Greeting from France
