I am ALL about the leftovers this week. Every year Thanksgiving reminds me how awesome it is to cook a big meal and reap the benefits of leftovers.

Leftover Thanksgiving Hash - Sweet Potatoes, Brussels Sprouts, TurkeyThis morning I made myself a simple hash for breakfast. I know everyone makes different sides and has different leftovers so you may not be able to make exactly this but the idea is the same: throw your favorites in a skillet, pull it together with some egg and enjoy.

My combo was an amazing breakfast! Here’s what I did…

  • 1/2 cup leftover roasted Brussels sprouts
  • 1/2 cup leftover roasted sweet potatoes
  • 1/2 cup leftover roasted turkey
  • 1 egg, whisked

Heat the skillet over medium-high heat. Warm the sprouts, potatoes, and turkey. Once they start to brown on the edges add egg and cook until set.

I topped it with a drizzle of sriracha for a little bite.

    Great idea! I made it this morning with my leftovers - quick and satisfying!
